Summer Fridays, Vol 4.
I’m so glad you’re loving Summer Fridays! Chat with me below and let me know how your June has been so far!
EATING
With peaches starting to get GOOD, I’m adding my one pot peach basil chicken to our menu. It was a surprise hit last summer and dish that is so delicious. Last night I also threw it way back and made Eddie my cajun chicken pasta. That’s a huge favorite!
DRINKING
Sparkling rosé pimms cups! Since we got a great pool day in this past weekend, I always start craving Pimm’s Cups. They are so refreshing in the hot sun! Also – I’m loving this quick combo of a faux paloma. Do grapefruit Spindrift + silver tequila + lime juice. YES.
BAKING
A definite batch of firecracker cupcakes (they were such a hit!) and maybe these chocolate chip cookie s’mores bars too? I’m really in the mood for something s’mores-y.
MAKING
All the recipes for the 4th of July! When are you celebrating? Definitely doing a hot dog bar again. Either my smoked gouda smash burgers or these incredible veggie burgers. Making my favorite potato salad, this grilled corn pasta salad, this strawberry caprese salad, my summer crostini that everyone always DIES over and probably my buffalo bacon deviled eggs!
READING
I finished Summer of ’69 and I really liked it. I was hesitant at first because after reading Mrs Everything (and loving it, and it being SO good, and it covering some of the same time period), I almost thought it was going to be too much. Too much of that time period for me. I do think that my mom will love the book! I just finished it last night, so now I’m torn. Do I start City of Girls? Or Ask Again, Yes?! What are you reading this week?
LISTENING
This week, we made a 4th of July playlist since the 4th will hit before next Friday. This one is all USA themed, but I am all about combining it with this playlist and this playlist for the ultimate party playlist.
LAUGHING
At the episode of Patricia from Southern Charm on the skinny confidential podcast! It’s the BEST. I’ve been fairly disappointed in this season of Southern Charm (so much so that I keep forgetting to even mention it in my Tuesday Things!) but if you’re a fan of Patricia like I am, you’ll love this episode!
SHOPPING
I discovered these leggings through a Facebook ad the other day (how? why? ugh!) and now I can’t get my mind off of them. I can’t even buy them because there was only an XS left (and now they are sold out) but they are like 2019 Lisa Frank in legging form. Right? Someone also alerted me to the fact yesterday that my favorite halogen t-shirts are on sale for $16! And remember how much Lacy and I loved the Madewell t-shirts last year? I’m still living in the tanks. They are so soft. Oh oh oh and P.S. my favorite cerastone skillet is $5 off on amazon right now! I just bought one more.
LOVING
I’ll be sharing my June beauty faves here shortly, but I HAD to tell you guys how much I’m loving these two bronzy summer products before the 4th so you can get your hands on them. First, I’m freaking out over this Charlotte Tilbury Healthy Glow Moisturizer. I’m almost positive I wanted to buy it last year, but didn’t because the reviews were so-so, especially for fair skin. I took the plunge and I LOVE it. I have been wearing some self-tanner, so that may be why. But it adds the best glow to your face. I also am shockingly surprised at how much I love the NARS Laguna liquid bronzer, because I’ve never been able to wear the Laguna powder. It’s always been too dark/orangey for me. This liquid is awesome and so easy to use. It’s like a bronzing fluid and so light. I’m obsessed.
JOINING
The Pretty Dish book club on Facebook! If you have the book (this is a must, you gotta have the book to join!), you should definitely go join because we are in the midst of a summer recipe challenge! We did one back in March and it was SO fun. It’s super inspiring and gets everyone cooking.
SHARING
A new video for my mom’s veggie pizza! Scroll down to the recipe card and you’ll see exactly how to make this 90s recipe we love so much. It’s great for the 4th too.
Make it a bright one! xo

I, too, read Mrs. Everything the Summer of ’69! You can never go wrong with an Elin book! I read Ask Again, Yes before Mrs. Everything and could not wait for it to be over — so my vote is City of Girls (although I’ve never read it, I just would not recommend Ask Again, Yes).
oh wow, really!! thanks so much for that tip, will prob start city of girls then. :)
I’m reading ask again, yes right now. Really enjoying it, BUT. it’s a very somber story. City of GIrls seems more ‘summer’
I make the strawberry caprese ALL the time. My family basically expects it for cookouts, and I love having the leftover pesto. Will be making it next week!
carrie you are the best!! THANK YOU! xo
I just picked up Summer of ’69 and intend on devouring it this weekend! My birthday is next week – so I fully intend to make the firecracker cupcakes, drink mimosas, eat brunch and soak up the sun!
yay happy birthday simone! enjoy! xo
The Madewell t-shirts are the best, and now I’m living in my Madewell tanks, too! I got one of the striped versions and could not love it more. The solid colors are great, too. Thanks for the recommendation!
so glad you love them too rose! xo
I have made cupcakes similar to the fireworks cupcakes before but didn’t tell my family about the pop rocks I sprinkled on…their reaction was priceless.
We are actually heading to Boyne City for next week based on all of your glorious pictures and posts about it! So I’m very excited about that!!
oh my gosh, you are?! have you been there before? where are you staying? how exciting!
Yes we are, our first time! We had been planning a trip to Napa Valley but…just after we started booking things we discovered our family will be growing! We’re staying in an AirBnB really close to the lake. It’ll likely be a tiny bit too chilly for a ton of beach time but…it will be a nice escape from the Kansas summer heat!
ah how exciting!! congrats to you! :) i can’t wait to hear what you think about boyne.
I just read Mrs. Everything followed by City of Girls. I loooooooved Mrs. Everything and in comparison found City of Girls so boring. The story is good enough but kind of boring. It’s funny because, as you said last week, Mrs. Everything is basically a book of day-to-day lives but it’s so interesting; City of Girls is also about day-to-day lives but was far less interesting (to me).
I’m reading The Cactus and also have The Peacock Emporium and Evvie Drake Starts Over up next.
I am reading Ask Again Yes, then reading City of Girls. I have both from the library so I am going with the shorter one first. Our book club is reading Summer of 69 so that up after those two books, Then fingers crossed by then I will have Mrs. Everything from the library!
Loved City of Girls!
eating: your thai pork tenderloin is a weekly rotation. have done it with chicken thighs too – so good.
drinking: margaritas. going to try the spicy orange one you posted in crushing on or was it crumbs??
baking: banana bread. i’m a mission to find the best recipe. might have to write my own.
reading: haven’t found one
listening: Armchair Expert podcast.
shopping: I’m freezing myself from buying anything that isn’t a necessity in July.
loving: Garnier BB cream for oily skin. don’t get the aging one…it’s a different formula. it’s so good! how did i not know about this.
joining: a gym or something. all the eating and drinking is causing serious issues. haha
Es sieht köstlich aus. Ich möchte es versuchen. Danke.
I read Mrs. Everything and City is Girls .. they were both OK and would hesitate to recommend either to my friends. I would recommend Our House by Candlish Louise. Starts a little slow but stay with it, very good. I also read The Mother- in-law and thought it was good.

I’m reading Ask again yes right now and personally can’t put it down. However, it may be more serious than what you’re looking for in a summer read!? But I would definitely recommend it. I’m in the 200s on the wait list for City of Girls at my library :(
Those Sparkling rosé pimms cups are for sure happening this weekend!! I just discovered Elin recently and have blown through 5 of her books in an embarrassingly short amount of time! I think the Pimm’s cups are the perfect thing while binge reading!
Uhm, where did you get that iridescent/holographic purse in the last pic??? LOVE!
Where is the clutch from in the last photo? I NEED it
I’m currently reading Mrs. Everything and am enjoying it so far! I picked up Summer of ’69 from the library the other day am looking forward to reading it; Elin Hilderbrand is one of my favorite authors! I definitely recommend reading City of Girls next, I just finished it and really enjoyed it! After reading the description, I was really on the fence about it and hesitant to read it, but after the first few pages, I was hooked! The writing of Elizabeth Gilbert, the author, is fascinating.
Omg I saw this shirt and immediately thought of you!!:

Just finished Summer of ’69 and desperately hoping that the next book is going to be from Genevieve’s perspective and her possible children! I really enjoyed it!
Reading = i cant comments on the books on your list, but i am currently listening to the sun does shine (oprah book club from a while ago). its not a summer read based on how heavy of the topic it is but im liking it so far.
Shopping = Im buying all the things. I’m going on vaca in late july so buying things i dont need like more flip flops and bathing suit cover ups. why when i try on bathing suits do i simultaneously want to never eat again and also plow face first into a whole cheesecake ? ugh.
Cooking = burgers and steak. also currently eating left over grilled pineapple and OMG love it. Drinking = want to make some peach margs this weekend for some reason ?
Have a great fourth !
