I forgot the ‘L.’

How one forgets the ‘L’ in a BLT is beyond me. But trust me, when you hate veggies, it’s easy.

Actually, the lettuce was still sitting on my counter when I starting scarfing this sandwich. I promise that I had good intentions. I really meant to throw it on the sandwich. But then the beautiful bacon and cheddar caught my eye. I couldn’t help myself.

Blurry picture? Perhaps.

Again, I didn’t care. I just needed to get this into my stomach. It was divine.

On the ‘L’-less BLT: whole wheat toast, avocado, tomato, sharp cheddar, bacon, low-fat turkey, and a smidge of mayo.

I hate mayo in all other circumstances. But combined that toast and bacon and tomatoes, it is perfect.

Scrumptious, if I do say so myself.

I’ve always poked fun at Mr. How Sweet for the way he mixes everything on his plate together into one big, slop-pile mess.

But the truth is, I make my own slop-pile messes every now and then, too.


Mine are a bit more contained and not as ugly, but they are still odd.

In fact, I’m almost afraid to tell you what is inside this wrap.

This wasn’t my lunch, but it was my dinner last night.

I didn’t realize how fast my hunger would hit me, and I didn’t have anything prepared. The thought of cooking something just made me hungrier, and I was about to whip out the devilish Stacy’s pita chips when I just started throwing things into a crispy tortilla. Or, shall I say, ‘tor-till-ah,’ since that was how Mother Lovett pronounced it. And she wasn’t joking.


Inside are two eggs, over easy, avocado, organic baked beans, cherry tomatoes, low-fat monterey jack cheese and barbeque sauce. This is all wrapped up in a La Tortilla Factory tortilla, because I love them so much that I will burrito-wrap my babies in them once they are born.

Not really.

But it sure resembles it.


The thing is, I don’t even love cake.

I mean, sure, I like it. Some tastes better than others. But on my long list of go-to desserts, cake would be low on the totem pole under chocolate-dipped bacon and 4000-calorie cheesecake.


I have been enjoying this snack everyday this week. It may not be pretty, but it is seriously delicious.


In the mix: 1 cup greek yogurt, 1 muffin, and 1/2 cup of fruit.

Make sure the muffin is warm (preferably with some form of chocolate chips) and the yogurt is cold.

I promise it will become your new obsession.

Afternoon Delight: Beach Fare.

Afternoon Delight is all about the daytime meals I am currently enjoying. So here you go. Coconut rum + cranberry. Who cares if it is raining cats and dogs outside?

Afternoon Delight: Sweet and Savory Egg Bagel.

I could eat breakfast all day long. Sometimes I do. (*cough* bacon *cough) It’s no secret that I love the sweet and savory combo. Mr. How Sweet is in the midst of a heated love affair with these bagel thins. I could take ‘em or leave ‘em, since I don’t really care for bread. I know. Gasp away. It’s a sin. But in this case, I love them! My lunch consisted of a whole wheat bagel with 2 eggs over medium, monterey jack cheese, and superfruit jam. My heart is still singing.

Afternoon Delight: Caramelized Cinnamon Apples.

The first time I discovered ‘grated’ apples, I was in heaven. Nope, they don’t taste much different than whole apples, or apple slices. In fact, they don’t taste any different. But since I am the queen of boredom, switching it up to apple shreds thrills me. Up there you see a whole wheat bagel, topped with peanut butter, greek yogurt and caramelized grated apples. To make the apple shreds, grate an apple (skin and all) and press out the moisture with a paper towel. Heat a skillet on medium heat. Season the apple shreds with a bit of salt and a boatload of cinnamon. Saute until caramelized and delicious. You know what else apple shreds are delicious in (or on)? Pancakes. Waffles. Cookies. Eat up!

Afternoon Delight: Gettin’ My Greens.

In order to eat them, I need to bribe myself. I have some greens, I get some bacon. That is roasted kale, which is basically drowning in nutritional yeast. I could eat it everyday, and I usually do. You won’t find me eating any other vegetables though, so don’t get too excited. It’s companion is a toasty hummus, avocado and bacon sandwich. It doesn’t get much better. Unless you add chocolate.

Afternoon Delight: Burrito Bowl.

Behold the beautiful burrito bowl. Usually, my bowl contains chicken, but this time I had some leftover pulled pork. You know, I have a thing for pork. I would marry bacon if appropriate. Then cheat on him with smoked cheddar. You may also notice a bit of green in the bowl. Yes, there is some arugula in there, which I tend to enjoy in small (teaspoon-sized) quantities. In the bowl: arugula, pulled pork, black beans, brown rice, fat-free refried beans, salsa, greek yogurt, avocado, and low-fat cheese. A tortilla on the side, as well as one toasted in the oven, cut into chips. It’s a loaded-baked-nacho-wannabe.

Afternoon Delight: Quick Chicken Taco

Lunches and snacks must be quick and balanced for me to keep my sanity and stay satisfied. I also must change them up frequently because I get bored very easily. In fact, I’m already bored just writing this. In my La Tortilla Factory tortilla (my favorite brand) goes chicken, low-fat cheese, salsa, homemade guacamole, a dollop of greek yogurt, and salsa. I also have this odd obsession with baked beans right now, so if I’m feeling frisky, a few of them go in there as well. Whatever floats your boat.

Afternoon Delight: Insane Yogurt Bowl.

I promise this is not your regular, run-of-the-mill yogurt bowl.   Ok. It probably is.   What I really promise is that it is fantastic.   Coming in at over 500 calories, this baby keeps me full for hours. Not to mention that it is sweet, includes chocolate, and excludes veggies.   This is what is in my go-to bowl: 1 cup of plain, fat-free, greek yogurt, 1 microwaved apple with cinnamon, 1/2 cup chopped strawberries, 1 chopped kiwi, 1/2 cup of high-fiber cereal or granola, 1-2 tablespoons of coconut, 1-2 tablespoons of chocolate chips, and 1-2 tablespoons of peanut butter. You must add the warm apples to the bowl first, then add the chocolate chips and peanut butter so they melt slightly.   Try this. Please. You can thank me later.
