Chocolate Orange Brownies with Ginger Chocolate Frosting.

I have never been a fan of fruit-flavored chocolate. Unless you count chocolate-covered strawberries. I remember seeing those chocolate oranges in a local drug store when I was younger and begging for one. Remember them? I wanted to try one so badly. I thought they were just the coolest thing ever. And a big ball of chocolate? Sign me up! It wasn’t until college that I got my share of a chocolate orange. Imagine, to my dismay, that it was hollow. What a disappointment. And the flavor? Better-Than-Crack Brownies.

I’m sorry for doing this to you. I really am. But see, last Friday while I was on a 10-hour road trip heading for vacation, I received this recipe from a reader named Liz. Liz, I love you. That’s all I have to say. I was tortured by this recipe for a full 8 days before I could make it. I wanted to make it while I was on vacation, but couldn’t drag myself up off the couch to do so. So it was the first thing I made when I returned home. These are an absolute sin. I really don’t have any words, other than you must try them. They will change your life. They may also change your waistline too. But that’s okay. It’s all in the name of chocolate. Coconut Cream Topped Brownies.

Out of all the different brownie obsessions I’ve had, none have ever involved coconut. It’s a sin I tell you. A sin. I love chocolate and coconut flavors together, but I wasn’t sure how well chewy brownies would work out with shredded coconut. If you are a coconut fan, you will absolutely love them. If you are like Mr. How Sweet who would rather swallow nails than eat coconut, you can go hide in the corner, wimpering. That’s what he did. It’s funny how two people have such different tastes. This is one of my dream brownies, while it’s his worst nightmare. He’d probably only be truly happy with a steak-flavored brownie. I’ll stick with the coconut cream. White Chocolate-Dipped Brownies.

I had high hopes for these brownies. I wasn’t thrilled with the aesthetic result, though dipping them in white chocolate was their saving grace. And coming into the kitchen to see two full rows missing let me know that they must have been tasty, albeit ugly. Mr. How Sweet did a number on these, most likely standing over the sink with Diet Coke in hand. The crumbs had his name all over them. I used my go-to brownie recipe, but am not sure were I went wrong. The brownies turned out lighter in color and just not the same. I am sure that the full glass of lemonade and sweet tea vodka that was sitting on the counter had nothing to do with my mistakes. What can I say? It was a holiday. While they may not have looked pretty, they tasted great.  The inside of the brownie was chocolatey and chewy, with a nice crumbly crust on top. Peanut Butter Frosted Chocolate Chip Blondies.

Yesterday was Mr. How Sweet’s favorite day of the year – Derby Day. It was also one of my favorite days – mint julep day.   Unfortunately, Mr. How Sweet didn’t pick the winning horse. Fortunately, I was 3 mint julep’s deep before I noticed that he bet perfectly good money that I could buy shoes with.   I made these blondies before I had a mint julep. Thank goodness. We were meeting up with Caitlin, Abby, Jordan, and Ashley after watching the Derby, and I thought they’d be the perfect treat. I can’t help but think that these blondies taste just like the chocolate chip cookie pie I made a few months ago, but in bar form. I snuck a few bites before packing them up for the party, and they were really delicious.   It was like a giant chocolate chip cookie topped with fluffy, peanut butter frosting. Brownie Overload.

Brownies are so versatile. They can turn a boring, old, boxed-mix dessert into an impressive, rich treat with just a few add-in’s or decadent frosting. And yes, sometimes I use a boxed mix. They are delicious!   Brownies are easy to whip up and usually a crowd pleaser. I mean, who doesn’t like brownies?   Bailey’s brownies will put some pep in your step and make it easier for you to tell your husband that you really just don’t care who wins the Kentucky Derby this year, and that you’d rather stay home and drink mint julep’s on your own couch while wearing a big goofy hat. Really, you just cant bear being seen with him one more time in his Dale Earnhart, Jr t-shirt, smell horse you-know-what all day at the local track, or sit in the car listening to Waylon-you-make-my-ears-bleed-Jennings. I don’t even know care who that is.   While booze in a baked good is never a bad thing, these cookies and cream brownies are so tasty that they may make you loopy. Coconut Cream Blondies.

This was my first attempt at making blondies. It definitely won’t be my last, since they are incredibly delicious. And I sneakily made them with coconut, just so Mr. How Sweet wouldn’t eat any. Don’t worry, he has eaten many sloppy joe’s this weekend. But someday, when he is starving since I haven’t cooked anything for about 3 hours, I feel he will be so hungry that he will cave for something coconut. Desperate times call for desperate measures. I added coconut milk to the blondies, which gives them a creamy consistency. As much as I love chocolate, these milder, more vanilla-tasting bars fit the bill for my sweet tooth. The recipe made thinner bars, which means you can eat a lot of them and not feel guilty. Right? Don’t answer that. S’mores Brownies.

I have wanted to make s’mores brownies for months. Don’t ask me why. I just really love the whole s’mores combination, no matter what it may be. I knew that making these brownies would require me to eat the entire pan. This was way too complicated for Mr. How Sweet. He couldn’t be concerned with such a brownie. Sometimes he closet eats entire batches of cookies and brownies. Other days he is following the cabbage soup diet. Ok. Not really. But sometimes our house smells like he is following the cabbage soup diet. The thing was, I wasn’t quite sure how to make them. I knew I wanted a graham cracker crust – I could live off of graham crusts. Yum. But would the brownies bake on top of a crust? I ended up using a boxed brownie mix. Cookies and Cream Brownies.

More brownies! It seems that I can’t get through one full week without trying a new brownie combination. Just wait until you see the next one I am going to experiment with. . .   These are super simple. I used my go-to brownie recipe, and just added a few Oreos. You could even do the same with boxed brownies. Just make the frosting and add some more cookies.   I only frosted a few because I just don’t love frosting on brownies. Mr. How Sweet really enjoyed the frosted ones. If you waste a good 3/4 of your day on Twitter like I do, you will know that last night Mr. How Sweet brought me home a dozen hot pink roses. I didn’t make him dinner, my half-unpacked mess is strewn in 4 different rooms, and I was in holey sweat pants once he got home. Peanut Butter Fudge Brownies.

I seem to have a bit of an issue with brownies lately. I am not even in love with brownies. When it comes to dessert, I usually opt for something much more elaborate, like a giant piece of tiramisu or a fancy cheesecake slice. Those kind of desserts fit my dramatic personality.   I just find it amazing how one simple brownie can be transformed with a single topping or addition. While these brownies may be lacking booze and coffee, I think most would agree that any form of chocolate topped with peanut butter equals comfort food.   And speaking of comfort, these brownies added some padding to my bottom.
