Hot Fudge Root Beer Float Cupcakes.

Awhile back I did one of the darnedest things. You may recall. I made this root beer float. And I’m still trying to decide if it was the best decision of my life, or the catalyst to having nightmares when I envision warm, sandy beaches and waves crashing along the shore. Along with bikinis. Root beer floats and bikinis don’t go together. Did you know that?   Let me rephrase that. Daily root beer floats and bikinis don’t go together. Unless you’re a freak of nature. Even though root beer has never really tickled my fancy, I’ve developed something that some may call an… addiction. It hurts to say it out loud. For someone who has never found a thrill in drinking carbonated beverages, all I can think about is cold, bubbly root beer twenty four seven. It tastes so good when it hits your lips. See that frosting up there? It’s a bit ridiculous. The vanilla frosting tastes like vanilla ice cream, and that little guy? That little bowl is filled with root beer frosting. One Bowl Vanilla Cupcakes For Two.

Let’s face it: sometimes we all need a dessert that only makes two servings. Sometimes we just can’t handle 12 servings. Sometimes we eat them all by ourselves. Sometimes we eat them all by ourselves in two hours. Sometimes we eat them all by ourselves in a matter of minutes. Sometimes it’s the best thing ever.   FYI: I have no idea what that is like. Haven’t you always wished you could make just enough dessert for yourself? Or yourself and one other person? Or… just yourself? Me too. But more often than not, I’ve found it to be a hassle to drag out the mixer, cream the sugar and butter, sift the dry ingredients and all that fun stuff for a measly two cupcakes. What can I say? I’m lazy. Well, I was lazy. Until I decided to make these cupcakes for two. Peanut Butter Stuffed Hot Fudge Cupcakes.

Well… it is Fat Tuesday. Did you expect anything less from me? I made these cupcakes Friday afternoon to have for dinner on Friday night. And they are simple – only one bowl necessary! I think I told four different people that I needed to handcuff myself so I wouldn’t eat them before our company arrived. It wouldn’t have mattered… I could have chewed through the metal to get to these. I was craving a chocolate + peanut butter treat for dessert but as usual, wanted something different from what I already have made before. All I could think about was thick, creamy peanut butter buttercream frosting… So I stuffed the cupcakes, which was really easy! I just poked a hole in the cupcake with the pastry tip and filled them. You can never have too much peanut butter. Especially if it’s enveloped by chocolate. I’m the kind of person that just likes a big blob of frosting on the top of a cupcake. No spreading needed. A Healthier Pumpkin Cupcake.

Last fall, I made some delicious pumpkin cupcakes. I made them over and over and over again. And then I ate them for breakfast, lunch and dinner. My goal yesterday was to try another pumpkin cupcake, but this time make it a bit on the healthier side. That way I could really eat it for breakfast, lunch and dinner. One thing I am not good at: staying out of cake and cookie batter. Major fail. Chew gum. It helps. Loved the way these turned out. All whole wheat flour, much less sugar, and no oil. Of course, there is still butter. I mean, who do you think I am? The cupcakes were still fluffy and moist. I put them in the fridge and snuck eighteen a few bites. They got just a tiny bit dry in the fridge, but as soon as I left them out at room temperature again, they were as fluffy as clouds. Strawberry-Lime Stuffed Cupcakes.

If you are still looking for a tasty Easter dessert, you are in luck! These cupcakes now rank up there as one of my favorite desserts. And you know that is sayin’ something since I loooove my desserts. They are fun, colorful and impressive, too. After the cupcakes are finished baking and have cooled, you cut a cone-shaped hole down through the middle and stuff with a juicy strawberry. It was slightly challenging, but totally worth it. And no cupcakes were hurt in the process.   The original recipe called for a powdered-sugar glaze, but I replaced it with a lime buttercream. It sounded much more decadent and sweet to me. Don’t be intimidated! When I first saw a picture of these cupcakes, I was torn. I had a minor breakdown, thinking that there was no way I had the patience to make them. But I wanted to make them sooo badly. Mini Marble Cupcakes.

Growing up, my mom always made marble cake. I barely remember her making it, but I do remember eating it. I really remember eating it when I look back at my chubby elementary school pictures. Especially the one where I wore a purple silk top under a paisley purple vest. Yes, I think vests were cool then, but they weren’t the kind of vests that are cool now. And I’m still not cool enough to wear one of those cool vests today. Not to mention that I would blind everyone within 4 miles because of my pasty, translucent skin. Around that same time, I also got a perm and overheard my mom tell someone I looked like Roseanne Barr with that hair. I was more mad at the time that I wasn’t even allowed to watch Roseanne. Who cared if my hair resembled hers? So what if it looked like I stuck my hand in an electric outlet? I just wanted to watch the trashy TV shows that I wasn’t supposed to watch. Chocolate Chip Cupcakes with Cookie Dough Frosting.

  These cupcakes are a spin off of the popular cookies and cream cupcakes, which I am still having dreams about. Dreams so vivid, that I can taste them in my sleep. Or . . . maybe that is just the cookies I was eating in bed. Kidding! (Sort of.)   These cupcakes are dreamy, too. I used the good ole’ recipe for my vanilla bean cupcakes, and simply added some chocolate chips. They came out super moist and tasty.   It’s like a cookie in cupcake form. I would be lying if I said these stuck around for a few days. Heck, they barely stuck around for a few minutes! And this time, we didn’t share. We hoarded the cupcakes.   That ooey, gooey frosting down there? It tastes just like cookie dough. And you may as well just slather it on the cupcake, because there is no way the chocolate chunks are fitting through a pastry bag. That’s fine by me. Cookies and Cream Cupcakes.

Cake is not my favorite treat, which is one reason I like cupcakes so much. I feel they are the perfect portion size, and sometimes I cannot even finish a full one. That is sooo not the case with these cupcakes. These are dreamy. And creamy. Check out the batter – it looks like cookies and cream ice cream! I initially saw this recipe in the book 500 Cupcakes, but their recipe called for self rising flour. I didn’t have any on hand, and didn’t feel like braving the blizzard for it. So I used my own recipe for vanilla bean cupcakes and added the cookies. I should thank Caitlin for leaving this book at my house, but I really can’t since it is only plumping me up. Note to self: find a new hobby. Preferably one that includes hours upon hours of running to work off cupcakes. I’ll work on the I-hate-running part later. My most favorite part about these cupcakes? Coconut Cream Cupcakes.

Mother Lovett was famous for her coconut cream pie. I was famous for eating it. Since I have barely mastered her pie crust recipe, I have yet to make a coconut cream pie. In that case, I made the next best thing – coconut cream cupcakes! I love coconut. I will happily eat it in anything. My husband on the other hand, hates coconut. I’ve attempted to sneak it into dishes and desserts, but he always finds it. The only reason I attempt sneaking it in is because that strategy works with other foods he does not like, such as ricotta cheese. He thinks he hates it, but he has eaten it many times. Same goes for figs. And almonds. Last night, he told me that he didn’t like ‘broiled’ chicken. I then went through a list of dishes that he had eaten in the past month with chicken that had been broiled – wraps, quesadillas, the tuscan lemon chicken that almost burnt our house down … Yes, I shot down that one. Orange-Coconut Cupcakes with Orange Cream Cheese Frosting.

In fact, if you haven’t read her entire story yet, you wouldn’t know that she had a heart attack while hand-mixing cake batter. It began her demise, but once in the hospital, she was simply concerned with how dirty her kitchen still was. I obviously didn’t inherit that gene, since I can’t be bother to even wash a dish. When we lived in our magical castle, we were sans dishwasher. Some days I thought those dishes would never end . . . as I watched them pile up in the sink. I really have no idea why we were so miserable there. I am sure it doesn’t have anything to do with me not cleaning, not washing dishes, not showering, and not removing myself from the couch.
