You may not think the word ‘light’ belongs anywhere on this blog, but in fact, it does!

I think lunches are fun.

I wish I had more of them – more of them in an outdoor, mid-day, desperate-housewife kind of fashion.

Starter: Watermelon Gazpacho

Salad: Fig, Gorgonzola & Red Onion Salad

Lunch: Seared Scallops with Mango Slaw, Grilled Asparagus with Garlic Vinaigrette

Dessert: Peanut Butter Pretzel Truffles

Summery, light and healthy.

Don’t worry, I haven’t lost my head.

I will share much bacon and butter with you over the next few days.

I never get to go to brunch.

Woe is me.

In fact, I don’t know if I’ve ever had brunch?

I need to get on this.

I created a faux brunch with a bit of bacon and a boatload of calories.

The spread?

Multigrain Waffles, White Chocolate Cherry Granola & Yogurt, and Grilled Banana Crepes with Fresh Strawberry Cream

Fruit Salsa with Cinnamon Pita Chips, Chocolate Chip Peanut Butter Cheeseball, and Bacon Stuffed Avocado

I can already feel my pants tightening.

You may want to add a few veggies in there.

It’s a tad carb heavy.

One of the reasons that I fell in love with Mr. How Sweet was because he was so. . .sensitive.

I had yet to realize that he had the appetite of a famished caveman.

Clearly, this meal probably won’t be cooked by a boy. It doesn’t include boxed pizza or the staple in our house – Archer Farms pasta and risotto.

But I can promise that a boy in your life will enjoy this meal.

Men like simple meals.

Starter: Pizza Dip

Main Course: Chicken Romano with Lemon Butter Sauce

Dessert: Cookies and Cream Brownies

According to Mr. How Sweet, real men don’t eat salads. Even though on our first date he ordered a grilled chicken salad without cheese and croutons alongside a mojito.

I guess I didn’t look into that too much.

Menu: Summer Cocktails.

The best foods for cocktail hour are the ones that can be eaten with one hand. Really, no one wants to set down their drink. At least not me. So, the point is that provolone-stuffed fried zucchini would not be appropriate for a cocktail party. Especially one where you plan to fit into a dress that is two sizes too small. Snacks: Bacon-Wrapped Scallops, Gorgonzola Popovers, Fruit Bruschetta, Bacon-Gorgonzola Stuffed Baby Red Potatoes, Gorgonzola Stuffed Olives, Roasted Garlic & White Bean Hummus Feel free to add some veggies up there if you dare. I prefer to fatten everyone up. Treats: Mini Marbled Cupcakes, Peanut Butter Pretzel Truffles Is it clear that I have an issue with gorgonzola? I didn’t think so. Feel free to sub feta, goat or no cheese in it’s place for all of you gorg-haters. In my mind, cheese is interchangable.

Menu: The Break-Up Meal.

Remember a few weeks ago when you cooked that delicious meal on your 3rd date for the soon-to-be love of your life? Well. . .you broke up. Yep. Sorry ’bout that one. Drown in some delicious food and worry about it tomorrow. Enjoy eating your emotions tonight. Starter: Roasted Apple and Brie Bruschetta. Because you have to have some form of a vegetable fruit in this artery-clogging meal. Salad: Salad? No salads here. Who wants to eat a salad after a break-up? Let’s be real. Main Course: Crispy BBQ Chicken Fingers and Smoked Cheddar and Bacon Mac. Nothing screams ‘comfort’ like chicken fingers with mac and cheese. Dessert: Quadruple Chocolate Loaf Cake. Because anything with the words ‘quadruple’ and ‘chocolate’ are suitable for a break-up. And to prepare the night before for morning: Creme Brulee French Toast. Because you will desperately want some sugar and grease to cure your massive hangover. Bottoms up.

Menu: Bring the Beach Home.

Have I ever mentioned how much I hate growing up? Well, I really hate it. Did you know that if you don’t live near water and want to go to the beach, it costs money to get there? What? I don’t remember hearing anything about money when I was 7 or 8 years old. Thanks, mom and dad. If you’re like me and can’t get to the beach each weekend, bring it to your living room. Invite some friends over, and buy some sand. Then load up on the margaritas. Starters: Kiwi Mango Salsa, Cilantro Citrus Shrimp Main Course Spread: BBQ Ranch Shredded Chicken Sliders, Grilled Asparagus with Roasted Garlic Vinaigrette, Crab & Avocado Quesadillas Dessert: Lime Angel Food Cake with Pistachios and Lime Glaze And if you do live near water and can get to the beach everyday, well. . .why haven’t I been invited?

Menu: It’s the 3rd Date!

According to my best bud, Heather, if you really want to impress your newest flavor of the month, cooking dinner on the 3rd date is an excellent idea. I didn’t do this, because Mr. How Sweet’s love cave gave me the heebie jeebies. And I was still busy living at home with my parents since he was robbing the cradle. Starters: Firecracker Shrimp Side Salad: Chopped Salad (minus the chicken) Main Course: Chicken, Bacon and Spinach Flatbread Pizza Dessert: Ice Cream Crepes You need 1/2lb shrimp fresh lettuce + veggies for salad + spinach for pizza 1-2 boneless, skinless chicken breasts bacon ice cream flavor of choice fresh fruit for crepes cheeses: cream cheese, parmesan, shredded mozzarella Game Plan The day before: Make crepes. The day of: 2 hours before date arrives, prepare dough and let rise.
