Pumpkin Apple Muffins.

You know how annoying it is when you walk through the stores and see Halloween paraphernalia right now? Or how ridiculous it is to see Christmas decorations on October 15th?     Well, this kind of feels like that. But I just couldn’t help myself. If pumpkin in August is wrong, then I don’t want to be right. I just couldn’t stay away any longer. I want Fall and pumpkin and 50-degree weather and pretty leaves to hang around all year long. Just call that my utopia. Luckily for me, I have 6 (well, had 6) cans of pureed pumpkin in the pantry just begging to be used. I must have inherited the hoarding gene from Mother Lovett. But don’t worry, my pumpkin doesn’t expire until 2012. Mother Lovett’s would have expired in 1994. And she still would have used it.     I used my non-expired pumpkin and combined it with juicy, sweet apples and whole wheat flour for some super moist and fluffy muffins. They are oh-so delicious. Avocado Lime Muffins.

I have issues. But I think we all know that by now, right? I never thought these muffins would work. They sounded delicious in my mind, but I had no clue how to throw them together. I knew I wanted to use avocado. And lime juice. And I have been dying to try the persian lime olive oil that I picked up in Michigan. You guys know I rarely talk about the products I use. But these I love. You must make your way over to Fustini’s and order at least one flavor. But have fun trying to choose! It’s basically impossible. So with all this other liquid, do I need an egg? Do I add sugar? Am I insane? Don’t answer that. But they worked. They just worked. In fact, they were incredible. I want one right now. Which I could have, except I ate them all. What I love most about these muffins is that they can be sweet or savory. Chocolate Banana Bread Muffins.

There are some days that I wish Mr. How Sweet could cook. And by cook, I mean cook things other than ground turkey, eggs, english muffins with peanut butter, and Trader Joe’s orange chicken. I also wish he would stop snoring as loudly as a jet engine and start thinking of expensive shoes as an investment, but that’s neither here nor there. Last night, I had no idea what I wanted for dinner. I’m sure you can relate. It was one of those nights where nothing sounded good, but I was starving and had already downed 3 bowls of cereal. So I whipped up some muffins. Nothing goes better with carbs than more carbs. Yes, I am still a muffin freak. They are just so versatile that I love having a batch on hand each week to add to yogurt or smother with peanut butter. Don’t worry, I exert portion control. Peach Pie Muffins.

I couldn’t stay away from the muffins for very long. But I have good reason. It’s the peaches. They make me do crazy things. I adore peaches. And I only get approximately 10 ‘good’ ones during the season. By ‘good,’ I mean they are ripe and juicy and sweet, but firm and not mushy. Those are my perfect peaches. They make my mouth water. There is nothing like a good peach. There is also nothing like a bad peach. I have already had my share of those this year. But let’s not talk about those. Adding handful after handful of succulent peaches to the batter was a challenge. I just wanted to shovel them into my mouth. I do not do well with self-control. These muffins taste like pie. They also test my self-control, or lack thereof. Maybe it’s the outrageous amount of peaches I added. Maybe it’s the cinnamon. Maybe it’s my imagination. But I promise they are delicious. Muffin Mania.

I promise to lay off the muffins after this. Maybe. Well, for at least 7 days or so. And I will just lay off writing about them. I certainly won’t stop eating them. I had to lump them all together for you. Mainly because I love you, but also because I don’t want to be the only one who is developing a muffin top from eating too many muffin tops. I need you to partake in the fun. Do you know what is even more exciting? I made another muffin that I haven’t even told you about yet. It involves bacon. Did your jaw just drop? Whole Wheat Blueberry Banana Bread Muffins.

I always make fun of Mr. How Sweet for his quirky food obsessions. Plain egg whites. Plain ground turkey. Protein bars. I’m just glad he got over the tuna and hard-boiled egg phase. That stunk. Literally. Lately I’ve had my own little obsession – muffins. I want to make every flavor imaginable with every fruit imaginable, chock full of melted chips, chunks and swirls. Are you sick of them yet? Good. Because I am not even close. Growing up, banana bread was one of those things that took forever to make, and about 3 seconds to disappear. Myself, my brothers and my dad would hover around the oven like vultures, not being able to take the scent of banana bread wafting through the air. My mom would make us wait even longer after insisting that the banana bread must cool. I obviously ignored that and would sneak large pieces of banana bread, ruining the loaf and scalding the roof of my mouth in the process. I haven’t learned a thing. Loaded Blueberry Coconut Muffins.

Remember the banana coconut muffins? They may be my most favorite muffin ever. These are a close second, but I don’t love blueberries as much as bananas. Obviously – why would I love something that is full of antioxidants? It’s basically against my rules. But the blueberry-coconut combo is pretty darn delicious. Clearly, it is impossible to stop at one. Just look at them. Speaking of stopping at one, my mom shared a tidbit about Mother Lovett with me over the weekend. My mom mentioned how after she started her first job, she put on a few pounds and was looking for a way to lose weight. I believe this is probably also around the time she went on the cabbage soup diet, and had to leave her students in the dust while running to the bathroom every few minutes. But that’s neither here nor there. One day Mother Lovett cut her something out of the newspaper. It was a cartoon that said ‘if you want to lose weight, keep your mouth shut.’ My mom placed it on her dresser as a reminder everyday. And it worked! Goat Cheese and Honey Stuffed Fig Muffins.

Once upon a time, I had peaceful, enjoyable, sunny, cheer-filled mornings.     Then I got married.     I have always been an early riser. I crave routine. I enjoy easing into my mornings.   It’s not that Mr. How Sweet is the opposite, it’s just that he is . . . a trainwreck.     You will see shortly why muffins, especially these specific ones, are needed in the mornings.     Mr. How Sweet rises and shines, which technically means he throws himself out of bed and attempts to make his way into the bathroom without hitting the wall. Literally.   What takes place in the next hour or so, I cannot be sure of since I am usually at the gym at this time. However, I can tell you that it includes, but is not limited to him curled up on the couch watching country music videos or horse racing, him banging and clanging dishes so loudly that it wakes the neighbors, or frying 6-7 eggs while thinking that he still is not getting enough protein. Very Berry Whole Wheat Muffins.

These are a fabulous, heart-healthy replacement for the usual, artery-clogging blueberry muffin. I’m all for clogged arteries and everything, but sometimes eating a fruity whole wheat muffin just makes me feel better.   Clearly, I am suffering from a muffin-making binge. After those coconut-banana muffins, I just had to make some more. I think they were tastier than any other muffin I’ve ever tried. Until these. There is nothing like a warm blueberry muffin. Except a warm blueberry muffin loaded with strawberries. There are specific mornings that just call for muffins.   Mornings when you wake up to your husband vacuuming and clanging dishes loudly because his OCD has taken over. At 5am. (Hey, someone has to clean.)   Mornings where you step on 16 dyecast Nascar cars before making it out of your bedroom and screaming more obscenities than ever thought possible. Chocolate Chip Muffins.

I’m not really into pastries. I could pass by a donut tray and not even be tempted. And if there is a danish laying around? I’m not interested. But sometimes all I really want is a warm muffin smeared with a bit of butter. We rarely have muffins in our house. Mainly because they are a ‘breakfast’ food, and we rarely eat something like this for breakfast. We are also always on the go in the mornings, and Mr. How Sweet must get in his 27 egg whites to meet his protein requirements for the morning. You know the drill.   So in the chance that I ever do make muffins, I make them in the afternoon, or the evening. And then they become the dessert that Mr. How Sweet shovels into his mouth while standing over sink. When making muffins, I love adding some raw turbinado sugar on top for that delicious crunch. I think most of us can agree that muffin tops are the best part, right?   So in my usual wasteful, bratty fashion, I tend to eat the tops off most muffins, and just leave them sitting on the counter.
