Do you love stuffing as much as I do?
I usually only eat it during the holidays. Maybe that is why I love it so much?
I’m not going to lie. I love the artery-clogging, buttery stuffing that my mom serves on Thanksgiving. I have never had stuffing from a box.
Scratch that. I think before we were married my husband deviated from his usual plain-whole-wheat-noodles-and-egg-whites-only dinner, to makes some chicken and stuffing. Probably because one of his buddies suggested it, not me.
And yes, for years, he ate only whole wheat noodles and egg whites, mixed together, for dinner. Thank goodness I came along.
(Sometimes he still smells like he eats egg whites for dinner. Did I just say that in public?
Someone needs to share my pain.)
I also love whole wheat, multi-grain Tuscany bread. And if you’ve been reading, you know that bread is not something I love. This bread must be good.
I chopped up a few slices of the whole-grain bread.
And seasoned it with rosemary, thyme, and parsley, and added a sprinkling of olive oil.
I toasted it in the oven, because who doesn’t love the crispy, crunchy bites of stuffing?
I chopped some celery, onion, and apple. Yes, this celery has bread crumbs all over it. I can be a mess sometimes.
Or always.
I spinkled some nutmeg on the chopped veggies and fruit.
Because I wanted to.
And sauteed them in some olive oil for about 10 minutes.
Once the veggies were soft – yet still a bit crisp – and the bread was toasty, I combined them in a small baking dish.
I say small dish, because we all know if I made it in a large dish, I’d eat it all.
I have enough buttons to sew back on my pants this week, so I went with the small dish.
I added some chicken stock, but you could also add veggie stock.
Into the oven it went, and while I waited patiently, I dug into this like I had never seen food before.
When the stuffing came out, it was perfect.
Some parts were crunchy, others were soft. They celery and apple had a nice crisp flavor, but it still tasted ‘warm.’ Perfect with mashed potatoes!
Easy Whole Wheat Stuffing
Serves 2-4 people
4-6 slices whole grain Tuscany bread
2 tablespoons olive oil
1/2 one celery stalk, chopped
1/4 sweet onion, chopped
1/2 honeycrisp apple, chopped
1/4 teaspoon rosemary
1/4 teaspoon thyme
1 teaspoon parsley
1/8 teaspoon nutmeg
salt & pepper to taste
1/2 cup chicken stock (or veggie stock)
Preheat oven to 350.
Cut bread into chunks – whatever size you desire. Lay on a baking sheet on toss with rosemary, thyme, and parsley, and 1 tablespoon olive oil. Toast for about 10-15 minutes, un just until golden brown.
While the bread is toasting, sprinkle nutmeg, and a bit of salt and pepper on chopped celery, onion, and apple. Add one tablespoon of olive oil to a pan on medium heat. Once hot, add apple and veggies to pan. Saute, stirring occasionally, for about 5-10 minutes.
Combine bread and celery mixture in a small baking dish. Add chicken stock, tossing a few times to coat. Bread should be moist, but not soggy.
Bake covered at 350 for 20-30 minutes.

*drool* Pardon me while I go wipe the spit off of my chin. This is my kryptonite. What I particularly love is that I can use the fact that it’s better for you to rationalize using the largest dish I own. And eating it. In one sitting.
And I love fit bites!
I think I must be one of the only foodies on the net that actually likes stuffing from a box… Don’t get me wrong, I love the real stuff more, but I like to buy up a handful of boxes after Thanksgiving for about 99 cents each and make them as a quick side sometimes when I am eating alone (my wife doesn’t like stuffing of any type). There are very few “from a box” things that I like, but stuffing is actually one of them.
Now, I should probably add in that I love dressing enough that I would be content to eat nothing more than a big plate of dressing for Thanksgiving. We always make a couple types of dressing and collectively they usually make up about half of my filled plate. :)
STUFFINGGGGGGGGGGGGG ! Totally my favorite part of Thanksgiving!! even more than pies… can you believe that?! I have NEVER had it from a box!! We always use lots of different sprouted and whole grain breads!! The seeds and grains add such an amazing texture!!!!!!!!!

This looks really good! Believe it or not, I’ve never had “real” stuffing. My family has always done the Stovetop boxed stuffing and I know I’ll have to do something different this year since I’m 99% sure Stovetop isn’t vegan ;)
That stuffing actually looks really good. And I’m not just saying that because it is dinner time here and I am waiting for my husband to come home and eat dinner with me!

Nice! I love this recipe. I have been looking for some good, healthier versions of stuffing for Thanksgiving. My aunt added prunes one year, and it did NOT go over well! This looks much more reasonable :)
i LOOOOVE stuffing! like even the stove top stuff. but that looks even better! before i started eating really healthily (and being too restrictive)i used to love the bob evan’s turkey dinner hahaha. i’m a nerd. but anyways- love your recipes!!

Great recipe! I love stuffing, but it bugs me that the one I eat(whole foods) is not whole wheat, because I really could down a whole pan if I let myself!
I have seen stuffing on sale these days in super market – really doubt their calorie and fat content. Love you version much better! I need to know exactly what I am putting into my food!!! Thanks for the detailed recipe!

This is a great recipe.. Stuffing is/always was my fav thanksgiving food. I could eat bowl after bowl of it (always better the second day!!). SOO easy to veganize too.. thanks for sharing! :)

oh goodness do I love stuffing. you know what I just saw on Food Network? I saw stuffing & mashed potato mixed, formed into patties and deep fried. I totally died.

OMG, this recipe sounds fantastic! I always hated the box stuffing, but love the homemade version. This sounds like such a great, healthy stuffing!
