I made this meal based on a dish my uncle has been making for a few years.
I roasted the veggies with salt, pepper, garlic and some balsamic vinegar.
A good balsamic really makes all the difference for me. Since we know I am not a fan of veggies, this balsamic adds the sweetness I need. Now only if I was able to cover the veggies in chocolate…
I am so glad I found whole wheat orzo.
My favorite roasted veggies were the tomato and red pepper.
And by favorite, I mean I nibbled off a piece and chewed it 4 times before spitting it out. But it was good.
We grilled the chicken using our favorite marinade.
I do not like sausage at all, but it makes a nice addition to the dish. Up until a year ago, I did put sausage in this dish. Then my husband ate it the day before he got the flu, and yacked up sausage for days. He no longer wants sausage in pasta. I have no idea why.
I added the veggies and chicken to the orzo, then mixed it up.
My favorite part? Drowning it in parmesan.
Make sure to mix it up afterwards. The cheese really rounds out the dish and gives it a great flavor.
This is a great meal to make on the weekends. I’ll make a large batch on Sunday and my hubby will take it for lunch over the next few days. The flavor just gets better by the day.
Whole Wheat Orzo with Grilled Chicken and Roasted Veggies
2 cups whole wheat orzo, cooked
3 grilled chicken breasts, chopped into pieces. I used this marinade.
1 tomato
1 green pepper
1 red pepper
1 vidalia onion
2 cloves garlic
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1/4 cup parmesan cheese
salt and pepper to taste
Preheat oven to 425.
Chop veggies and garlic into slices and place on a baking sheet. Sprinkle with olive oil, balsamic vinegar, salt and pepper. Roast for about 25 minutes, tossing vegetables occasionally.
Cook orzo according to directions. Drain, and place in a casserole dish. Add chopped grilled chicken on top. Add veggies. Mix pasta until everything is combined.
Sprinkle parmesan on top. Toss a few times to incorporate. Serve hot.

ummm its been such a crazy week and i cannot believe i missed soooo many posts. okay, so many things to say, here i go. awesome giveaway. upset i did not see it in time to enter. ice cream on oats IS amazing. i am bookmarking those cupcakes to make for a coworker this friday for his birthday. your dad is adorable. how do you come up with all your recipes because this orzo salad looks SO GOOD!

This is my kind of dinner! I love using whole wheat orzo…well, whole wheat anything for that matter. I’ll have to try this soon.
I just love whole wheat pasta and that orzo looks amazing! I’ve been meaning to try roasting veggies with balsamic, but I always forget. Unfortunately, the tomato and pepper season is pretty much done over here, so I’ll have to do that next year.
just bookmarked this to make for dinner sometime soon! I love meals that get better as they sit. Leftovers for lunch is one of my favorite things (unlike my husband who eats pb&j every single day)
oh – one question. do I need to use “good” balsamic vinegar? or can I just get the cheap stuff from the grocery store?

I did not even know whole wheat orzo existed. Orzo is one of my favorite pastas and this fact made my day a little.

I just found this site and there are so many recipes to try. My husband loved this meal, so did I. I used regular Orzo (not that it matters). The marinade for the chilcken is fantastic and will be used often. Thanks. Was a great leftover too.
I made this last night for dinner… big YUM! I couldn’t find whole wheat orzo (even at the organic market where I work), but they did have a Kamut one that I think I’ll try next time. Hubby was a bit iffy at “all” the veggies (he’s not a fan yet), but when it all came together, he loved it! Even said that it should be put in the recipe box as a “make again” recipe!
Just made this and it’s absolutely delicious! I was nervous about there not being a sauce but it’s chockful of flavor and deliciousness. As always with you! :)
