Crispy Honey-Ginger Chicken.
Mr. How Sweet is always begging for ‘healthy’ chicken fingers.
The key is crispiness. The chicken has to be crispy and crunchy and good for the heart.
And here, we have clue #27 that shows how Mr. How Sweet’s actions resemble those of a child: I must decipher the phrase ‘I want healthy chicken fingers,’ to mean that they ‘must be healthy, yet taste like chicken that has been battered and deep fried. That is the only way I will eat them. ‘
Â
Mission accomplished.
Inspiration from this dish came from Active Foodie’s buffalo chicken strips, which Mr. How Sweet requests almost every single weekend.
I am telling you – the man would eat the exact same thing forever if I was not around.
The chicken tenders are super tasty, but they take a lot of patience – it takes a while to coat each chicken tender with breading. Patience I do not have.
It would not take as long if Mr. How Sweet didn’t require 16 tenders per feast.
Â
I knew that Mr. How Sweet really loved ginger, so I thought this would be the perfect treat for him. Honey and ginger are such a delicious combination.
The ginger offers a slight tang to the chicken, while the honey makes it a bit sweet.

Crispy Honey Ginger Chicken
1 lb boneless, skinless chicken tenders
2 cups lowfat buttermilk
1/4 cup honey
2 cups panko bread crumbs
1/4 cup whole wheat flour
2 tablespoons ground ginger
1 teaspoon seasoned salt
2 teaspoons garlic powder
Combine buttermilk, honey, 1 tablespoon ginger and 1 teaspoon garlic powder in a baking dish. Cup chicken tenders in half or thirds and add to buttermilk. Marinate for 2 hours or overnight.
Preheat oven to 450.
Combine panko, ginger, garlic, seasoned salt, and flour in a large bowl. Coat chicken pieces in panko mix, then lay on a wire rack sitting on a baking sheet. Continue with remaining chicken pieces. Spray each pieces with cooking spray or olive oil.
Bake for 10 minutes, flip, coat with cooking spray, and bake for another 10-15 minutes.
When finished, drizzle honey over chicken pieces.

I made Mr. How Sweet almost 50 chicken tenders this weekend. He wanted 7 for each lunch this week. Does that sound insane?
It is my life. Everyday.

Haha! I love that you made 50 of them! My boyfriend would eat Ramen Noodles everyday if he could.
This looks really delicious! I always make chicken tenders from scratch and this was a great new idea. Mine are marinating right now!
Oh these look sinful! I don’t usually read savoury posts, let alone comment, so I hope you understand how good these look to me, and how grateful I would be if you sent some over!
Thank so much. :) It means a lot to me that you’re reading and commenting!
Wow… I wish I had seen this post about 1 hour earlier so I could have made this for dinner. Now I’m running low on time and we will be stuck with leftovers! There’s always tomorrow…

Wow, these were awesome. We tried them last week when I saw the recipe.Tonight I gave a friend the choice between these and the BBQ chicken fingers (for tomorrow night) and he chose the Honey/Ginger so we’ll be having these again tomorrow night.
These are such an easy and great/fast recipe, I really hope people try them.
I gave this recipe to a bunch of my coworkers because they have children with egg allergies and it’s very rare but SO GREAT that a chicken tenders recipe calls for buttermilk instead of a eggs. It’s such a great substitution on so many levels. Nice work Jessica :)

What is the dipping sauce you have next to the tenders?
I just made these for dinner, and they were amazing! So easy to throw together, too. Thanks for the recipe.
Oh my…it sounds like my fiance and your hubby are kindred spirits. He would eat chicken EVERY DAY if I was not around. I’ve made him expand his horizons a bit, but your chicken recipes always work out well for us! :-)
I just made these for dinner and everyone, including the kids, loved them!! Thanks for the recipe!
I also wanted to add that tonight I am going to attempt a similar version but with shrimp! Thanks for the inspiration!
