Happy Easter!
This is the second time I have made this fantabulous strawberry coconut cake from Joy the Baker.
It is full of vanilla, strawberry, and coconut deliciousness, and I plan on eating about 6 slices. Then I’ll wash it down with a slice of bacon since Lent is over. Rejoice!
Mr. How Sweet is still pouting because there is coconut on the cake. He would rather give up steak, spend 6 hours locked in a small cell with me while I ‘analyze life’, or watch Gone With The Wind 8 times before eating coconut.

Your cake looks lovely! My hubby is the same way… He’d love it except for the coconut. You’d think it was kryptonite or something the way he avoids it.
