Afternoon Delight: Burrito Bowl.
Behold the beautiful burrito bowl.
Usually, my bowl contains chicken, but this time I had some leftover pulled pork.
You know, I have a thing for pork.
I would marry bacon if appropriate. Then cheat on him with smoked cheddar.
You may also notice a bit of green in the bowl.
Yes, there is some arugula in there, which I tend to enjoy in small (teaspoon-sized) quantities.
In the bowl: arugula, pulled pork, black beans, brown rice, fat-free refried beans, salsa, greek yogurt, avocado, and low-fat cheese. A tortilla on the side, as well as one toasted in the oven, cut into chips.
It’s a loaded-baked-nacho-wannabe.

This certainly is an afternoon delight! I would devour this in about 5 minutes.
Delightful!! This is right up my alley. Oh, and smoked cheddar is my guy. Hands off, sister ;)
This is totally what I should have had tonight instead of mexican take-out! Looks tastier and healthier!!
Looks like a bowl of pure-YUMMINESS to me :)

I want those chips. Like, now.
Such a thing of beauty. I’ve had something similar for 3 meals this week. I need to try it with arugula.
Yumyumyumyumyumyumyumyumyumyumyumyumm!
How many “yums” was that?
Not enough.
I would totally have an affair with bacon!
That looks so good! How do you toast your tortillas in the oven? Mine never come out looking that good.
I spray them with olive oil, add salt and pepper, and bake them on a baking sheet at 425 for about 15 mins or so.
These ones I used are La Tortilla Factory handmade yellow tortillas – they are really thick and work the best.
Basically anything with refried beans is a friend of mine!! :-)
Maybe that’s why I may need to invest in one of those fart blankets. haha (If you don’t know what I’m talking about you have to check it out http://www.youtube.com/watch?v=bM4eJ38S7Hw
Also I switched blogs from QuarterLifeWellness so check me out http://www.mysocalledhealthlife.wordpress.com
I would have an affair with cheese for sure!
Who doesn’t love burrito bowls! And since I am now addicted to your tortilla chips, this is definitely an awesome meal :)
This is a perfect dinner for my hubby and I – we LOVE Mexican food!!
That looks amazing. I think I still have some leftover pulled pork, but that ship might have sailed already. :(

Delicious and look so filling :)
Somehow only part of my comment came through :D I meant to say Delicious meal and it looks so filling!
lol to.. “then cheat on him with smoked cheddar…” Ha! Love it.
You knocked it out of the park girl… I would LOVE this!
Blessings-

Yum–so many flavors that blend together beautifully! Mexi is my fav!
yum! you have a thing for pork? no!!?! ;)
This looks similar to the burrito bowl I get at Chipotle. No meat, black beans, rice, pico de gallo, guacamole and lettuce. It’s got to be the healthiest thing on the menu. I’ve read their tortillas are 1000 calories each!
I want to swim in this burrito bowl. Oh soooo goooood!
ditto.
only i cant swim.
i can kind of flail around and stay afloat for about 30 seconds at a time.
in about 5 feet of water or less.
i know this seems a bigger deal than it is to jess who is like, umm…short…but im 5’10. so 5 foot deep is the “shallow end”.
so i want to swim in this bowl. with floaties.
or just a raft.
i would like to lay on a raft in this bowl.
with a margarita in my hand.
and a sombreo on my head.
and some Ricky Martin playing.
or something.
ahem.
lol you totally sound like me and a love affair with ham hehehehe
This looks sooooo amazing! Bookmarking it now!
pretty sure i just drooled on my keyboard. yep.
