Fluffy Delicious Cornbread.
Would you believe that I really just had my first piece of cornbread a few years ago? I think I had tried some as a child and it was very dry, which turned me off from it immediately. But years later, I tried some real cornbread – it was flavorful and delicious and I never looked back.
I am by no means an expert in cornbread or any southern dish, but we absolutely devoured the entire pan in one night.
Especially since it was slathered in cinnamon honey butter.
based slightly on Bob’s Red Mill
1 cup whole wheat pastry flour
1 cup finely ground cornmeal
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
½ cup creamed corn
1/2 cup butter, melted
1/2 cup milk
1/2 cup heavy cream or half and half
2 eggs
Preheat the oven to 375.
Combine dry ingredients together, then add eggs, corn, heavy cream, butter and milk, stirring until smooth. Pour in an 8 x 8 square pan and bake for 20-25 minutes.

Sounds really good. I love cornbread. I have a recipe I found online and use it all the time. It’s very sweet, but probably not that great for you! I’m going to have to try yours too and compare!

Can i ask how you made your cinnamin honey butter that goes with your fluffy delicious cornbread? Can’t wait to make the cornbread!
I never measure anything, just mash some softened butter with some cinnamon and honey! :) It never can taste bad.
Is creamed corn and creamed sweet corn the same?

This was seriously delicious cornbread and could not be any easier to make. I made it after work tonight and only using AP flour because I didn’t have anywhole wheat pastry flour. I know this one’s a throwback, but I’m planning to make it for the base of my stuffing this Thanksgiving and was just curious if subbing plain old whole wheat flour for ww pastry flour would make a difference. With brown butter, bacon, sage (and mushrooms, celery, and apples)? Sounds so divine!
Planning on making this for Thanksgiving to use for your double bread stuffing and I was wondering if I could use AP flour or regular whole wheat flour? Looks divine and I can not wait to chow down!!!!
