What I’m Loving Lately.
It’s been ages since I’ve done one of these posts and because I’ve had a super busy week, had a cake explode in my oven, had a cocktail explode in my face and am spending today making lobster mac and cheese to feed our faces… now seemed like the perfect time.
I don’t think it’s any secret that I’m enthralled with coconut, so I am totally in love with these carrot, apple and coconut pancakes. I’m not a huge fan of carrots (shocker) but I think I can tolerate a handful with the promise of other delicious fruits.
And speaking of coconuts and breakfasts, my eyes nearly bulged out of my head when I spied this coconut CRUSTED french toast. Puhlease.
Okay, one more and I’m done: crockpot coconut rice pudding. I’ve never even had rice pudding. I’m so deprived.
I’d like to wash that all down with a whipped root beer float cocktail. Ummmm… wouldn’t you?
What’s that? You need something savory? Homemade kettle chips. Do it.
Another fascination of mine is anything s’mores related, so uh… these puffy cloud s’mores? I can’t even stand it.
Sweet potatoes + goat cheese = tater tots? This just equals me going ballistic. I don’t think I even care about regular tater tots (though they are one of my husband’s faves) and now they are all I can think about.
Not sure what I love more… these frozen yogurt dots or the little cutie pie waiting to eat them.
I can ensure you that for the rest of my life my lunch will include this grilled cheese.
Obviously I save the best for last: caramel bacon popcorn. Now I’m dead.

Ha, I have no idea who that is, I was moreso saying “ready, set, go!”
Haha. I didn’t think that band came all the way out to Pittsburgh–I was excited for a minute.
It’s from the TV show Inspector Gadget! He used to say “Go go gadget helicopter” or whatever of his gadgets he wanted to use.

I made breakfast sausage for the first time which in turn allowed me to copycat McDonalds breakfast burritos! You don’t know what you’ve got til it’s gone, eh? Was feeling a bit homesick this weekend and that sausage tasted just like home :-D I’m lovin it!

Well, it wasn’t this week but it’s my new favourite addiction….home made enchilada sauce. We can’t stop with this sauce! I got the recipe online about a month ago and we’ve made them 3 times. If I was going with what’s floated my boat this week I’d have to say your Thai enchiladas, hands down, but I’ve not made them yet.
ps. I’ve taken to visiting your site pretty much every day or two and every time I do I get James Taylor stuck in my head. You’ve probably heard this said a lot but doesn’t this happen to you?? I know you love him but you must CONSTANTLY be singing that song.
