Let’s Make Summer Pizza!
If you are looking for a way to have pizza all to yourself, like with no male (especially a husband) touching it, even though you ADDED CHICKEN just because… then this is probably the route to go.
To make summer pizza, gather all sorts of summer things you love.
Fruit!
Herbs!
Fresh mozzarella because it seems healthier since it has the word “fresh” in it!
Chicken to add some protein and keep it light! Or to appease the severe carnivore in your life who will turn up their nose at this pizza anyway!
Whatever. It’s your pizza. Haters can’t get you down.
Layer all that junk on top of a whole wheat crust, because again… duuuuh, it’s summer. Where the clothes are skimpy and the sweat is pouring. Whole wheat just means you have an extra piece, don’t ever discard your crust, and no matter what ends up on top… its totally health food.
As a sidebar: I am definitely purchasing the Dawson’s Creek DVD set today. Can’t stop thinking about it. Getting it done.
You know what? I can say with absolute certainty that this is one of those pizzas my husband would order out at a restaurant… a nice little place with an outdoor seating area in the hot sun. Probably even add a girly mojito on the side. Strawberry or whatnot. And he’d own it. But when I made this pizza? Wouldn’t even touch it. Turned his nose up at it. Wanted “real food.” Um, hello? What is this? I guess you gotta be in the mood for chicken with peaches and berries and basil and cheese or something? Not I. I’m always in the mood for stuff like that. But I’m sort of always in the mood for everything.
Especially something on a crust that’s called pizza. So… make your own summer pizza. Different berries or stone fruits or herbs or whatever. I don’t know about adding vegetables on there, but I’m sure some of you crazies will do it… even at the expense of our relationship. Ugh. I guess that’s okay. I forgive you.
Grilled Chicken, Peach, Blackberry + Basil Pizza
makes 1 pizza
1 batch of pizza dough (I used half whole wheat flour + omitted the garlic flavoring)
1 sweet onion, sliced
1 tablespoon butter
1 teaspoon brown sugar
4 garlic cloves, minced or pressed
2 tablespoons olive oil
1/2 cup freshly grated mozzarella cheese
2 grilled boneless, skinless chicken breasts
1 ripe peach, thinly sliced
2/3 cups blackberries, coarsely chopped
10-15 basil leaves, chopped
8 ounces fresh mozzarella, sliced
Prepare dough as directed and while it’s rising, heat a large nonstick skillet over low heat and add butter and onions with a pinch of salt. Cover and cook for 20 minutes, stirring occasionally, then stir in brown sugar and cook for 10 minutes more. Remove and set aside.
Preheat oven to 375 degrees F.
Shape dough as desired and top with garlic and olive oil. Add on the grated cheese, then top with the chicken, peaches, berries, basil and caramelized onions. Evenly place fresh mozzarella on top. Â Bake for 25-35 minutes, or until cheese is melty and golden. Top with additional basil and finely grated parmesan if desired! It’s also delicious when topped with a balsamic glaze.
[Not doing so well with that exclamation point thing apparently.]

This pizza is totally gorgeous. Oh my! Also, I bought the Dawson’s creek DVD set last week and have been blowing through it. Amazing.
That is gorgeous – balsamic glaze is like chocolate sauce for non-dessert foods. Makes everything better!
Yeah my husband probably wouldn’t touch this but I would devour it!
Your crusts look always impeccable! I love the toppings!
Oh that pizza look incredible! I bought the Dawson’s Creek box set, the girl at the check out said she had never heard of it before and I couldn’t believe it! Then she told me she was three years old when it was on and I’ve never felt older haha!
Ugh… seriously? Ew. Ha!
This looks great. Where did you originally get your go to dough recipe, or it your own? Have you tried others like Jim Lahey’s no knead method or Mark Bittman’s?
Yep the one linked (from my garlic bread pizza) is my own, but I am ADD when it comes to dough and can never stick with one, so I bet I have 10 different dough recipes on the site! I haven’t tried those ones, but I would love to… never stick with one recipe no matter how much I love it.
good to know thanks!
Now, I’m not strict about my pizza toppings but I’ve never considered putting berries on my pizza. But it kind of looks amazing!
Yum! Looks delish! I love non-traditional pizza’s!! Your looks so good!!
Ahhhh I love all these non-pizz-ish toppings! For me, I like a little bit of pizza with all my toppings. The more, the better! And I’ve been on a cheese + fruit kick ever since your blackberry smash sandwiches! And that last picture – I love how THICK it is!
oh I think this looks like such a fun pizza combo!
i made those blackberry basil fontina grilled cheeses last week, and completely fell IN LOVE. and now, you just put it on pizza. i will love you forever.
As a complete exclamation point abuser, I would say you have nothing to worry about! See? Also, this pizza looks so incredible that it’s basically all that matters. As for the Dawson’s Creek DVD set — I hope I’m not missing some big DC news about some new incredible compilation, but it looks like it’s on sale over on Amazon …
Your post today has convinced me to do two things this weekend, 1. Make this delicious pizza, and 2. Buy the Dawson’s Creek DVD set. Both of which the husband won’t go near…it’s a win-win :).
Oooooh Pacey + girly pizza + mojitos! Sounds like the perfect Friday night to me :)
Uhhhh I love you for this. But you already knew that ;)
It’s a good job Mr How Sweet didn’t want any because I’d be hoarding this whole thing to myself! Love the balsamic glaze idea too.. Dawson’s Creek + pizza sounds like a lovely Friday night to me!
All things delicious on a pizza crust; melted. Mmmmm! I should look and see if Dawson’s Creek is on Netflix! Although having it for myself would be kind of nice too! DO IT!
If you had just said ‘let’s make pizza’ I’d have been on board with that too :D
I need this pizza…. perhaps with a little ricotta or goat cheese thrown in there……………
Making this tomorrow night! Good thing I have blackberries & basil from last week :]
This looks AMAZING! Blackberries? Come on!
I had a prosciutto and fig jam pizza not to long ago and I keep have dreams about it. Light, but rich in flavor and the fig jam… well, we started dating after that.
I bought the Dawson’s Creek DVD set and I’m a teacher so I just now started DVD three. It is so fun to watch the style change lol!
mmm…berries on pizza sounds awesome! Have you seen the TV show The B—- in Apartment 23 yet? James Van Der Beek is in it as ‘himself’, sort of, and he’s so funny! I was never a huge Dawson fan but he does a good job in that show.
Someone had mentioned it to me before and I did catch an episode last month! Cute!
Leave it to you to find the most creative pizza toppings ever…and the most delicious looking!
mmm this pizza looks soo good, and I know my boyfriend would think its weird and go no where near it, more for me! P.s. if you have netflix, Dawson’s Creek is on there from the beginning, it is all I watch these days!
It’s okay that your husband won’t share this pizza with you… because Pacey definitely will! Love that guy <3
Oh mama – guess what’s for dinner tonite!
i feel like you need to have an additional blog dedicated solely to the 90s
I totally do.
I’ve never once regretted a DVD set purchase. I say do it :)
This looks AMAZING. I love adding peaches to my grilled chicken salads with balsamic vinegar and oil so I can only imagine how good this is.
Ahh I loved Dawson’s Creek! I would totally rewatch that entire series. Team Pacey for life.
This pizza looks insane. Fruit instead of veggies?? I’m sold!
Always looking for new ways to top pizza….brilliant! Of course the balsamic glaze is my favorite part :)
I’m debating internally whether or not my fiance would like this…which if he doesn’t I would fine just fine – because I’m pretty sure I could go “Gollum” on this pizza, calling it My Precious and never let a piece out of my sight, or mouth…
i LOVE fruit on pizza! our favorite last year was feta + ricotta + fresh figs + bacon + balsamic. holy moly, it was good.
Ok let me just tell you… purchasing the Dawson’s Creek DVD set will be your BEST. PURCHASE. EVER! And then after that purchase The OC set. Worth every penny :)
Oh and your pizza looks amazing- and finally a pizza my hubby won’t eat haha
Oooo! I brought some yummy balsamic glaze back from Italy. I’m going to have to bust it out. Looks amazing!
I have no words for this pizza. Ok I kinda do…awesome, perfect, summer, WANT!!
This pizza is everything that’s awesome about summertime. Gorgeous!
this looks AMAZING. I love the fruit + balsamic combo although I’d probably nix the chicken…and maybe try it with ricotta… dessert pizza for dinner?
Soooo I’m pretty sure I’m just going to drive a few hours to come watch the Creek and eat this pizza with you. I’ll bring the wine.
YUM! Your mind is an amazing thing for coming up with this! genius.
What an amazing looking pizza!
You are so creative with your ingredients!
oh my gosshhh this looks so good. this one deserves its own frame :) will be making this!
This pizza looks incredible! So yummy – love all the flavors going on here, wow!
I just finished rewatching the last 2 seasons of Dawson’s Creek! Gaaaawdddd the things I would still do to be the apple of Pacey Witter’s eye!
this looks so good! i love the combo of peaches and blackberries on the pizza too!
Hi! I have been a reader for a few months at least, and I love your blog! (My favorite posts are Tuesday Things). This particular sale is for 90’s-esque accessories. Enjoy. :)
this looks like the IDEAL pizza.
ok i’m going to be obsessed with this one, i can tell already. i love fruit with chicken, and the peaches part of this sounds sort of like heaven.
So ture that in a restaurant they will scarf down “healthy food” but at home… “uh No… I need a real pizza, I’m no veggie” haha
I would love to see what a pizza with spinach, stawberries and the balsamic glaze would taste like. Maybe even some red/purple onion on top. Ohh and maybe some mushrooms! ok ok I’m getting excited about this Summer Pizza thing now. Thanks for providing the whole wheat dough recipe!

Ha! I recently made my husband add Dawson’s Creek to his Netflix queue so I can re-live my HS days. Good times, good times…
This pizza looks awesome! I love the peaches and blackberries!
