Hey Look… It’s a Cantaloupe Coconut Lassi.
And then, there are others when I thank the universe that no one can see me.
Yesterday was both.
Lots of delicious things came out of my kitchen. Also coming out of my kitchen? A very loud, off-key version of Lisa Loeb’s Stay not in tune whatsoever while it played on Pandora after I overflowed a mason jar with beer and ate about 16 maraschino cherries from the jar. And the overflowing foam looked so pretty that I then intentionally overflowed it again just so I could take a picture. Which I didn’t even get. Boo freaking hoo.
In addition to all of the things that materialized in my kitchen, it was 5 million degrees and I finally let the heat win. I needed something cold and while I wished it was an entire gallon of Phish Food, that was practically impossible to eat while doing a bunch of other things. The only thing I could add to my multitasking list was a straw.
So I did!
This is totally healthy too. And it tastes good. And it’s somewhat filling. And it doesn’t even have chocolate? I’m so confused.
Buuuut I just happen to think it’s the new perfect snack. Plus it was an interesting new way for me to consume cantaloupe which I’ve been totally destroying this week. True story: I’m on my 4th.
Oh and in case anyone’s interested, I just wasted 90 minutes of my life watching Wanderlust. What?
Cantaloupe Coconut Lassi
serves 1 generously or 2 appropriately
1 cup coconut water
1/2 cup light canned coconut milk
1/2 cup plain Greek yogurt
2 cups frozen cantaloupe cubes
2 tablespoons unsweetened coconut flakes
2 teaspoons honey
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
1/8 teaspoon nutmeg
pinch of salt
toasted coconut for garnish
Combine all ingredients together (except for toasted coconut) in a blender and process until smooth! Garnish with toasted coconut. Drink up.
But I guess I just should have made a Phish Food shake. Duh.

cantaloupe & coconut? This one looks like a winner. I’ve been feasting on some absolutely divine cantaloupe lately. This drinks looks like the epitome of summer elegance – and unexpectedly different too. Who cares if there’s no chocolate – you can eat a square (or three?) on the side!
I would like to be in your kitchen while you cook. I make messes too so it would feel like you were my long lost sister. ;)
I’m kind of thinking the Phish Food shake would have been genius, but this looks pretty great, too! ;)
Yum! What a wonderful combination!!!
I wish I could spend all day in your kitchen Jess! I can do a pretty tremendous job of singing off-key as well, and I would happily do quality control on your recipe tests to make sure that they were in fact delicious. If you need a recipe tester, you know who to call. ;)
This is a really excellent read for me. gossip about celebrities Must agree that you are one of the best bloggers I ever saw. Thanks for posting this useful article.
I just watched Wanderlust also. Seriously????? I would like to trade those 90 minutes with watching Majic Mike again!
OMG a Phish Food shake would be epic. Epic, I tell you! I wish I could be in your kitchen, always. Love your creativity!
This is lovely, quite awesome!
These actually make me sad that I’m allergic to canteloupe. Bummer.
I love cantaloupe in smoothies, so I’m sure this is amazing and way more indulgent!
Two of my favorite flavors in one…amazing! This looks perfect! Oh and that Lisa Loeb song is one of my all time favorites to sing to in the kitchen! The car, the kitchen and the shower are the only places you can sing and totally sound just like the singer. It’s a fact! Have a great weekend Jessica!
I would have actually never thought to put cantaloupe and coconut together but duh…they are both tropical. This why I need you in my life. Have a good weekend Jessica!
Mmmm…I love maraschino cherries a little too much. And cantaloupe. And coconut. This sounds delish!!
I’m really sure that it taste delicious!!!!!!!
Have a nice day!
Okay — about Wanderlust…………hubby saw “Jennifer Aniston” & “nudity” in the promo’s – so we had to go see it, right?
Boy was he disappointed when he saw who was actually nude! The movie was horrible, but the look on hubby’s face throughout it was well worth the laugh I got from watching him!!!!!
Oh – & the drink looks fab!
I bet this tastes soooo summer’ish!
My dad grew up in India and used to make us mango lassis all the time growing up…this is such a cool twist!
I have no idea what a lassi is (I thought it was a girl……?) but it sounds fun. Love the color combos of this drink+straw!
My sister has those same exact glasses – I LOVE them!
This looks delicious!!!
No bacon, no chocolate.. I’m confused!
Clearly you can also produce awesomeness without the 2! :)
i think these may be some of the most beautiful pictures you’ve taken – i want to frame them!
Awww thank you!! :)
Oohhh…
I totally love the Lisa Loeb song. I’m sad to admit that it goes on repeat several times before I will even move on to the next song. All this while I am trying to sing at the top of my lungs.
I would love to come over and cook with you anytime, Jessica! :-) This Lassi looks so delicious!
So happy you’re back Kim! I hope you had a nice vaca. :)
Love STAY!
I don’t even like cantaloupe and this looks amazing!
How unique, what a dynamite recipe Jess. I have a smoothie that I make with cantaloupe and Greek yogurt but I love how you incorporated coconut milk, Yum!
I never thought about putting a canteloupe in my smoothie but…. good idea!
Now on to Wanderlust movie: worst movie! We sat down last Saturday wanting to watch a funny movie and failed miserably. It took us 4 hours to get through the movie. We kept stopping to take breaks and make another drink (only way to survive it) but kept telling ourselves we HAVE TO GET THROUGH IT lol. Paul Rudd is usually so funny, so disappointed.
Hope you have a great weekend!

ugh it was so weird right? Blah!
I love your serving sizes, too funny! This looks delicious!
Oh to even be a FLY on your wall in your kitchen!! It would be awesome, but would be better to be there in person.
I put cantaloupe in a smoothie a few weeks ago and I was SO surprised at how delicious it was! This coconut thing you got going on, I like it. I like it a lot.
Coconut, in many ways, in one drink – love it.
And overflowing something on purpose and still not getting the shot? The universe is a cruel place some days!
Cantaloupe is my second favorite fruit (after mango)…I am so totally making this!
mmmmmm, I wannnnnnnt a shake!
Give me a straw!!
nice!!!! i’ll go right now and get some of that!
I totally thought that was bacon on top, not toasted coconut. And the weird thing is? I didn’t even question it.
hahaha this comment made me laugh out loud!
“serves 1 generously or 2 appropriately” — this made me chuckle.
Lassi is a really weird drink but I have a feeling all these sweet and tasty things you added made it totally palatable. Rock on, sister
This looks so refreshing. And even though Phish Food shake sounds super tempting…this shake will still let me strut my two piece bikini ;)
Just polished off ‘1 generously sized’ potion of this drink and am seriously thinking of making another!! Perfect for a warm California day! I have to know tho, where are those glasses from?? Love them!
Oh this one looks like a winner! Will have to try this ASAP. Beautiful photos by the way, as usual :)
looks so delicious. lassi is indian.. loved that you came up with this recipe.
Oh my gosh. That’s really funny. I ate a whole cantaloupe by myself the other day. Also I love coconut so this sounds sooooo good. I think I might die.
hmmm…I have a honey dew melon…think that would work?
Summer in a glass. I love smoothie-like drinks. I can’t wait to make this and try different yummy variations!
Oh my! Great flavor combination. Coconut makes me giddy.
Okay, this is great. Because the Florida heat is making me want to collapse in a pool of ice and live there forever and ever and ever amen. Pinning!
the generous one serving versus two appropriate servings made me laugh. it sounds more like “well, you could have it all yourself…or you could be an adult and have an *appropriate* amount and even save some for your spouse.
like that’s happening! looks yummy!
Sounds so different, yet looks so GOOD!
Wow, this is a pretty cool combination. Now “Stay” is stuck in my head…you say, I only here what I want to…
