White Pizza Dip.
But anyway. It’s not that big of a deal. Clearly.
So. There were only four people at the party when I arrived. Four, including me. Three being the hosts. None of the four being my husband with the gigantic appetite, because he was traveling for work. I know. Who travels for work on the 4th of July? How unamerican of him. Whatever.
See, the dip was hot. I baked it before going, thinking that other people also show up a few hours minutes early to a get together. They would appreciate a warm, gooey dip.
Well… they don’t. Should’ve known.
Buuuut it was hot. The dip. And the sun. So we HAD to eat it. And we just didn’t stop eating it. We couldn’t. It was near impossible. We ate it in our bathing suits. All of it.
That was lovely.
White pizza dip is essentially pizza dip without the tomato sauce.
I.freaking.love.it.
I don’t freaking love tomato sauce, hence my freaking love of the white pizza dip. And white pizza in general. Tons of cheese, roasted tomatoes, fresh basil and garlic. Get it?
Got it.
Good.
White Pizza Dip
serves about 6-8
1 pint grape tomatoes, tomatoes cut in half
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 (12 ounces) blocks cream cheese, softened
8 ounces mozzarella cheese, freshly grated
8 ounces provolone cheese, freshly grated
1/4 cup finely grated parmesan cheese + more for garnish
4 garlic cloves, minced or pressed
1/4 cup freshly chopped basil leaves
2 tablespoons freshly chopped thyme leaves
1/2 tablespoon freshly chopped oregano leaves
crackers, bread or chips for serving
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil then place tomatoes on top. Sprinkle with olive oil and salt, then roast for 20-25 minutes, until bursting. Set aside.
While tomatoes are roasting, mix softened cream cheese with about 7 ounces each of provolone and mozzarella, then and parmesan. Stir in fresh herbs, garlic and roasted tomatoes, mixing well to combine. Transfer mixture to an oven-safe baking dish (mine was 6 x 4 round). Sprinkle with remaining provolone and mozzarella. Bake for 25-30 minutes, or until top is golden and bubbly. Serve immediately with crackers, chip or toasted bread.

I’m pretty sure you are the exact opposite of me. I don’t freaking love tomatoes, but I will eat pizza sauce. That being said, this will make me eat tomatoes. The amount of cheese greatly reduces the yuckiness of the tomatoes.

I offended my husband last night by saying if I had to make a choice between chocolate and cheese I would pick cheese. Not that I don’t completely love chocolate it is just cheese takes up a bigger part of my heart.
If I could live on dips and dessert, I totally would. It’s my dream life. Now only for some metabolism! Awesome, awesome dip, love it.

OK. I HAVE to tell you about this white pizza dip’s affect on my family. Last night I made this dip, some toasted french bread slices, grilled chicken, and fresh grape tomatoes as our dinner (we do not care for roasted tomatoes.) Anyway, my hubby and the kids ( boys ages 9 and 4 and girl 16 months) couldn’t believe I was serving CHEESE for dinner. I told them, silly, that is what the toast is for… spread the cheese dip on toast, top with tomatoes and eat grilled chicken with it. They happily obliged and dinner was a huge success.
Now, this dip is rather rich in flavor and contents, so we only managed to go through almost half of it at that one sitting. The rest went in the fridge cause there was no way I was letting it go to waste. Tonight, I bought some large pasta shells and frozen meatballs. I boiled the shells and meatballs together (its faster and the grease from the meatballs help flavor the pasta). Then I put approx 1 1/2 tsp of cheese in each shell and topped with a meatball. I sprayed my casserole dish, dumped a whole jar of spaghetti sauce in the bottom, and arranged the shells on top of the sauce. Pop into a 400 degree oven until hot and bubbly. I tossed some diced tomatoes on top after baking for color and texture. OMG…. your herb’d cheese dip, in that small quantity, mixed with the meatball, pasta, and sauce…. it was heaven on a plate. My 16 month old ATE TWO. I pan seared some squash and zucchini slices with a little butter and seasoned salt to add to the veggie content on the table, but they were ignored. LOL
This is probably a recipe we won’t make very often, because it is quite an indulgent dish…. but it is DEFINITELY a family favorite now! Thank you so much for sharing it!

I’m confused. Listed ingredients state grape tomatoes cut in half. Directions state to roast tomatoes until they burst. They won’t burst if cut in half. Do you cut them in half prior to roasting or after?
That cheese looks amazing. What are the tomatoes for, though? I don’t like tomatoes :)
