Banana Streusel Muffins.
It’s Monday and I’m going to beg you.
MAKE THESE.
If I was to be a creeper in your kitchen I would secretly bake these for you while you were still sleeping. Not only could you wake up to, um, hello – MUFFINS – but you could wake up to the aroma of a banana breakfast that is really a treat. And a nutjob in your kitchen, but whatever. That’s neither here nor there.
Let’s talk about crumble. Or streusel. Or whatever you want to call it. Why does it have to be so perfect? Why does it take cakes and more specifically, anything breakfast labeled over the top? Why do I want to eat an entire pan of cooked crumble and not care about what’s beneath it? It makes everything ten trillion times better.
In other news, my exaggerations are becoming astronomical.
The good news is that I definitely care about what’s under the crumble here.
The bad news is that I just ate all the crumble anyway and didn’t leave you any.
I am totally crazy over ALL things banana right now. Bananas and peanut butter on toast, of course. Banana bread. Bananas in my yogurt. I even ate a banana and nutella (yes, I’ve always sworn that I hated nutella) crepe on Saturday and it was like… lifeblood. So fantastic.
These little faux breakfast cupcakes are just kinda like banana bread with a crumbly, crunchy topping. To seriously die for. I immediately popped about three right into my mouth immediately and suffered severe taste bud burns and it was COMPLETELY worth it. Slathered with a little unsalted butter: even better. Heaven heaven heaven.
I mean these are totally a breakfast food and should be treated as such. Like maybe… made thrice a week. Duh.
Banana Streusel Muffins
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 large egg
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 5 tablespoons unsalted butter, melted and cooled
- 3 large bananas, mashed
- 2/3 cup milk
crumb topping
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 1/2 cup all-purpose flour
Instructions
- Preheat the oven to 350 degrees F. In a bowl, whisk together the flour, baking soda, salt and spices. Set aside. Line a muffin tin with liners.
- In a large bowl, whisk the egg and brown sugar together until smooth and no lumps remain. Add in vanilla extract, butter and bananas, whisking again until combined. Gradually add in dry ingredients, mixing until just incorporated. Stir in the milk and mix until just combined. Fill each muffin liner 2/3 of the way full with batter (I use a 1/4 cup measure to get the muffins to be of equal size). Top them with the crumb topping.
- Bake for 15-17 minutes, or until tops are no longer wet and become slightly golden. Remove and let cool until cool to the touch.
crumb topping
- To make the crumb topping, whisk together the sugar, cinnamon, salt and melted butter until combined. Whisk for a a good minute or two until the sugar begins to dissolve, then use a wooden spoon to stir in the flour. The mixture will be crumb-like and dry. Almost like a sludge or paste. This is what you want! Sprinkle the crumb on top of the cake.

As creepy as it is, I would LURVE if you were a breakfast-cupcake-maker-creeper in my kitchen. I would totally over-look the creeper-age for the streusel on these babies. GIMME! Pinned!
As a total nutjob, I love the idea of these muffins. Steusel topping, put me in coach, I’m ready to play!!! We are such a muffin loving family.
I don’t mind nutjobs in my kitchen as long as they’re baking up something like this!! One (or 10) of these would make Monday morning SO MUCH BETTER.

A good use for all the frozen bananas I have and I also keep frozen streusel topping for quick recipes. These will be gone as soon as I make them!

Thanks for this amazing recipe! I literally woke up at 7 am, took the dogs out and began baking these.
I made the delicious crumble topping, but legit have a cup (maybe more) left of the crumbles. My two thoughts: 1. I overfilled the muffins tins thus decreasing the amount of crumbles used (though I did use 1/4 c measure) 2. I can’t read and doubled the recipe 3. I clearly didn’t use enough crumbles on each muffin…
Not really an issue just trying to think of what I can do with my extra crumbles (other than eat them with a spoon)!

Crumbles, streusels, so down!
Oh wowsers!! A few things: AMAZING 😍!! Fellow bakers do not be wary or creeped out when your bananas get so ripe that they mostly or all the way turn black/brown. (No mold on them, just them being that ripe) I almost always purposely wait for my bananas to get that way because my baked goods turn out more flavorful and delicious.
The muffins: They turned out amazing I’m told, I used almond milk, chocolate chips and chopped walnuts. I find that using a spoon to put the crumb topping works best, the last batch I pressed it gently on top with my hands to push it in the batter. Less crumbled off. I think these would also be heavenly with berries, also pumpkin seeds and a little bit of hemp hearts. (I love all those things and use them frequently)

These look heavenly! There aren’t many things that are better to wake up to than the smell of muffins and streusel. The streusel adds an extra special scent. I’m sure of it!
So whenever I make muffins with crumble on top at least half ends up in my mouth and then I have to make more, I have no self control with crumble! These muffins look delish, just bought bananas, can’t wait to try them out! Pinned!

THESE ARE SO GOOD. Made them yesterday on a rainy bank holiday here in London, and they were perfect. Halved the recipe and subbed 2 TBSP of nonfat Greek yogurt for the egg since I can’t halve an egg! They turned out fluffy and delicious. My one regret is not putting more crumble on top!

I have a love/hate relationship with bananas. Sometimes I can’t stand them and sometimes they’re the only thing I’m craving, have you ever tried a frozen banana dipped with chocolate? It’s pretty amazing and pretty easy.

I made these last night because sometimes (allofthetimes) I want a muffin, but there are zero creepers in my kitchen to bake them. So I froze some for those mornings that I run out of the house with only enough time to make coffee. AND I used up some scary looking bananas. Yay!
