No-Bake Almond Joy Snack Bites.
My world is currently revolving around snacks.
All the snacks.
And you can bet that I can turn anything into a snack. Justify all things into a satisfying, somewhat nutritious snack.
Kind of like how when I was pregnant and had zero appetite, I justified pizza as the best and most nutrient-packed, complete meal I could eat since it had bread and cheese and basically carbs, fat and protein (add bacon, duh). I mean, it did really make sense because I wanted to go the entire day without eating anything, so having a few slices of dairy and dough was, like, the smartest decision at the time.
No? Just me?
So needless to say, before the baby came I was PREPARED with snacks. I loaded up on a bunch of granola bars and apples and peanut butter and sliced almonds and cheese and made like four batches of snack mix in a month, because it has the word “snack” in it and therefore works.
AND. I also made some of these balls.
Well, first I made these other balls. The peanut butter ones that I shared years ago – that are a staple of a snack in this house. Because they are super easy to prep and taste delicious when refrigerated and just… satisfy you. And you can make them fasssst. Which is imperative these days. Make fast snacks, eat fast snacks. Story of my life.
I had wanted to make another version of those snack bites for awhile but nothing seemed quite as perfect as the peanut butter (and a little chocolate) combo. Mostly because nothing is as perfect as peanut butter and chocolate.
Except!
Chocolate and coconut.
Yes yes, why of course.
These are packed with good-for-you things like oats and flaxseed and chia seeds. They make you feel excellent, don’t promote self-hatred and keep you full when you’re waiting on lunch or dinner or second lunch or second dinner.
You can also add a touch of coconut extract* in there to up the ante – depends on just how much you adore the coconut flavor. (Me? TONS.)
Make a big batch, shove them in the fridge or freezer and you’re good to go! Eat all the snacks. For me.
No Bake Almond Joy Snack Bites
Ingredients
- 2/3 cup oat bran
- 1/4 cup ground flaxseed
- 1/4 cup almond flour
- 1/3 cup unsweetened, flaked coconut
- 1/4 cup sliced toasted almonds
- 1/4 cup mini chocolate chips
- 2 tablespoons chia seeds
- pinch of salt
- 1/4 cup creamy almond butter
- 1/4 cup honey
- 2 tablespoons coconut oil
- 2 tablespoons coconut butter
- 1 teaspoons vanilla extract
to coat
- 1/3 cup unsweetened, flaked coconut
- 1/3 cup sliced toasted almonds
Instructions
- In a large bowl, stir together the oat bran, flax, almond flour, coconut, almonds, chocolate chips, chia seeds and salt.
- In a small saucepan, combine the almond butter, honey, coconut oil, butter and vanilla extract over low heat. Stir until it is completely melted and smooth. Add the almond butter mixture to the dry ingredients, stirring well until the mixture is moistened and a wet dough forms. Shape the dough into balls that are around 1 inch in diameter. Roll each ball in the coconut/almond crumb coating until covered.
- I like these best when they are stored in the fridge!
to coat
- Add the coconut and almonds to a food processor and pulse until they turn into small crumbs.

I am a HYOOGE snacker. If I don’t have things at the ready, it’s likely that I could eat my arm off between meals. And that would be NO BUENO.

These look like those gourmet raw/vegan snacks in the whole foods bulk bins that are like 20 bucks a pound and that I could eat a pound’s worth before I even get to the checkout line but like wayyyy better than that! Totally want these now! I love snacks like this!

Being a fellow breastfeeding momma, I am ALWAYS on the lookout for quick, easy, and satisfying snacks. I rarely have time to fix an actual meal (at least until my husband is home in the evenings), so this type of thing is exactly what I need. I love the flavor combo going on here, too. Definitely trying these out!
COCONUT EVERYTHING! I’ll just sub sunflower seed butter for the peanut butter since I’m the weirdo who literally has NEVER liked peanut butter. (I. KNOW. I really wish I did!) Making these this weekend, I think I actually have most of the ingredients in my cupboard. YES.

I looooove these no-bake type snacks! The ones I make are usually almond and coconut based but I love the idea of adding flax and chia seeds. And freezing them is always the way to go.
When I was pregnant, I was never more than 15′ from food. ever.
Fellow BFing mama here, and, yes to snacks! I’m back to work now, but on leave, I never ate an actual meal till my husband made dinner. I still rely on bites, balls, you name it because I’m just as ravenous pumping at work. Unlike you, I was a hangry beast while pregnant, too.

Hi…I would like to know where one would get coconut butter? Is it just the coconut oil solidified? I don’t think I’ve ever seen coconut butter before.
i get the artisana brand and can find it at my grocery store or at whole foods! it is different than oil – it’s actually the meat of the coconut.

They make Vegan chocolate chips (I think the branday is Enjoy Life) and you an replace the honey with agave.

These sound delish, but I don’t know that I will be able to get almond butter or coconut butter in this little town of ours. Is there anything else I can substitute?
