Bacon Fried Green Tomato BLTs with Special Sauce.

Since last fall. LAST fall. Do you have any idea how hard it’s been waiting for good green tomatoes?!
Last summer was the summer of the best BLTs. Eddie and I made them frequently on the weekends. They are such a simple meal but rich and delicious and filling while fresh. Towards the end of the season I had an idea to make a fried green tomato one, but it was too late. We eat pretty seasonally around here and I like to keep my recipes on the site seasonal, so I knew I had to WAIT. Like wait it out. What does that even mean? If there is anything I hate, it’s WAITING.
No patience here for this girl. It’s been rough.
Also: BACON fried green tomatoes. If that’s not a reason to drop every single thing that you’re doing right this instant and make this recipe, I don’t know what is.
Here’s the rundown!
Crisp up some bacon. Go ahead – do it in the skillet the old fashioned way because you’re going to need those drippings. The drippings are what you will pan-fry the green tomatoes in and yes, you might just die and go to heaven.
A simple breading for our tomatoes – some classic seasoned breadcrumbs after an egg bath. Fry the slices in the hot bacon grease until they are golden and crunchy on the outside.
Toast up your bread! TOAST IT WELL. We’ve had this conversation oh-so many times before. Has your preference changed in the last three years? At least twice a week Eddie ends up throwing away two perfectly toasted slices of bread because he didn’t check the toaster settings. I toast my bread to heck and back and the toaster dial is cranked alllllll the way up. I want my toast just on the edge of being burnt.
Eddie wants to eat warm bread. Like, not even crunchy on the outside. I say that’s a big, fat NO.
Spread the special sauce all over your (very crunchy and brown) toast. Throw some leaf lettuce on top along with a handful of rainbow microgreens.
Because they are RAINBOW! I mean, really. How can you help yourself?!
Add on your crispy green tomato slices and your bacon. Maybe more rainbow greens. Maybe more sauce!
Top it off with a bread hat.
DEVOUR.
See? This is easy.
Bacon Fried Green Tomato BLTs with Special Sauce
Ingredients
- 8 slices thick-cut bacon
- 2 green tomatoes, sliced into 1/2-inch slices
- 2 eggs, lightly beaten
- 1 cup seasoned panko breadcrumbs
- 1/3 cup seasoned breadcrumbs
- 1/4 cup finely grated parmesan cheese
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon smoked paprika
- 6 pieces heart green leaf lettuce
- 1/2 cup rainbow microgreens, or any microgreens!
- 4 slices bread, toasted
special sauce
- 1/2 cup mayonnaise
- 2 tablespoons pickle relish
- 2 teaspoons dijon mustard
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 garlic clove, minced
- pinch of salt and pepper
Instructions
- Line two separate plates with paper towels.
- Heat a large skillet over medium-low heat and add the bacon. Fry until crispy and the fat is rendered, then remove the bacon and place it on a paper towel to drain the excess grease.
- While the bacon is frying, place the eggs in one bowl. In another bowl, mix together the breadcrumbs, parmesan, flour, salt, pepper and paprika.
- Increase the heat until the bacon grease to medium. Dip each tomato slice in the beaten egg and then coat it in the breadcrumb mixture, pressing gently to adhere. Add the tomato to the bacon grease and fry until golden brown on both sides, about 2 to 3 minutes per side. Repeat with all the remaining slices.
- To assemble your BLT, spread the special sauce on toast and top with the leaf lettuce, microgreens, a few tomato slices, a few bacon slices and more lettuce. Eat up!

- Whisk ingredients together in a bowl until combined. Store in a sealed container in the fridge.

I can’t even put into words how much I’m dying to devour one of the divine creations of yours! Like, this has gotta be up there with blt hall of fame material!!!
Just made regular ol’ BLT’s last night and now I feel like my taste buds got robbed of this fried green tomato special sauce goodness! So yum!

i read “i have been dreaming” and started singing “white christmas” (no big deal, it’s only 6 months away). anyways, that special sauce sounds so good! i was expecting something like in n out’s thousand island-y version, but this sounds even better with a bit of heat from the paprika.

The kids and I joke that their Dad should just wave his bread over the toaster… it would have the same effect! It’s got to be browned and crunchy or don’t waste the electricity, haha. This looks so yummy! Bring on blt season!

Ok – I’m about to ask a stupid question, but I’m a northerner, so let’s just say I come by this ignorance honestly. When we talk about green tomatoes, are we talking about heirloom tomatoes that are green or are we talking about unripened green tomatoes? I’ve been wondering about this for years (literally) and this seems like just the right forum in which to ask!
Unripened tomatoes. This is a way to use the end of the year crop that won’t have time to ripen. Back in the day, every ounce of nutrients had to be used. Some lovely things came from that need and Fried Green Tomatoes was one of those things.
I feel like this should be one of those college “Perseverance” posters – Never give up on a great recipe idea!!

Fall is actually the PERFECT time for fried green tomatoes -you pick all the green ones off the vines that you know will never ripen because the days and nights are getting to chilly!
SOOO much better using just salted cornmeal, without breadcrumbs and eggs….into bacon fat, and you get the flavour of the tomatoes without all of the breading.
It has to said – your photographs are incredible!!! (It’s just a sandwich, after all)
Oh – and the warm- bread toast thing! Ick. I know Eddie must have some wonderful qualities to make up for that…….

Now that’s got to be a great tasting BLT. Fried green tomatos and bacon, mmmm. Here’s something that may help if you’re cooking for more than two. It is called the Bacon Pro. I made these today, as fall is the perfect time to collect all those green tomatoes that won’t have a chance to ripen before the first frost. The only thing I changed was preparing my tomatoes with seasoned cornmeal instead of breadcrumbs.
I didn’t bother with the micro greens, because I didn’t have any and I think they are overrated, but I dont think it made an impact on my sandwich deliciousness. These are very, very, very good sandwiches!!
Also, I will say I’ve also made these with homemade fake bacon. I am truly trying to cut down on the animals I eat and increase my awareness of where my food comes from. So if I can’t get humanely raised (or afford, unfortunately being humane is more expensive) bacon, I go for my fake bacon. I keep a stash in the fridge for emergencies like this sandwich!
