Coffee Coconut Shakes.
This is so much better than the one time I dipped a holiday leftover milk chocolate bear in the peanut butter jar for breakfast.
The first decision of the day that I stumble upon while I’m peacefully waking up from a night of slumber (read: reaching for my phone like the psychotic, tech-addicted person that I am and scrolling through every social media outlet possible to get my news fix like it’s the new newspaper) is this: breakfast flavors. Sweet or savory?
That is the question.
This is a smoothie that I’ve been drinking since the first few months after Max was born. At least, some sort of version of it.
While I absolutely love the flavor combo of coffee and chocolate (mocha coconut anyone?!), it’s super difficult for me to enjoy almond milk or coconut milk in my coffee. It’s practically like adding water to it. I like adding cream or daily milk because it gives the coffee a creamy consistency. The almond and coconut milk don’t change the consistency and I’m just like… UGH. GIVE ME ALL THE CREAM.
So sometimes if I don’t want to do dairy in my coffee, I’ll throw it in a smoothie. After all, the first time I EVER consumed coffee was in college during the very first release of the mocha coconut Frappuccino at starbucks (it’s never tasted as delicious since then!), so coffee in cold, frosty beverages is somewhat of a staple in my life.
It’s so ironic that I’m sharing these shakes today because I haven’t had one single sip of coffee in five whole days. I mentioned in my Tuesday Things that I didn’t have it for a few days thanks to having the flu and not wanting to ingest a darn thing, and I decided to see if I could go a few days without it. I mean, I know that I totally can. It’s not like I even drink two full cups a day. But!
I miss it so much – I miss the taste and just the… ritual of drinking it. Does that make sense? Sometimes it made me feel like complete garbage though. Especially in the afternoon. I’m trying to determine the cause of that (occasionally I have it on an empty stomach? Too much dairy plus sugar?) and then bringing it back and enjoying a cup to it’s full freaking potential. I can’t waaaait.
Those little chocolate sprinkles up there? They are a combo of chocolate covered hemp seeds and chocolate covered chia seeds which I can’t get enough of right now. I’m obsessed with their snackage uses, throwing them on everything from toast to yogurt to smoothies, apparently. They are crunchy and delicious.
And health food, so of course.
Coffee Coconut Shakes
Ingredients
- 1 cup coconut milk
- 2 shots espresso
- 2 tablespoons hemp seeds
- 1 tablespoon almond butter
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon unsweetened coconut powder
- ½ teaspoon instant espresso powder
- 1 frozen banana
- 1/2 cup ice
- for topping: flaked coconut chocolate covered chia and hemp seeds
Instructions
- Combine all ingredients in a high-powered blender and blend until smooth and creamy. Serve immediately, topping with extra flaked coconut, chocolate covered chia seeds and hemp seeds.

Yup, sometimes I like to skip dairy too because it makes me cough incessently so I k now I shouldn’t indulge. So I love your smoothie idea! Coffee does make the world go round, but so does coconut!! Your topping ideas all sound stupendous!!

This sounds amazing!! I totally feel you on the coffee making you feel like garbage sometimes. I had to back off on it this past year..I think it’s the caffeine too. Sometimes kombucha helps with that in the afternoon for me. I think you’ve mentioned that before too! Definitely trying this smoothie!!

Oooooh, yes. Favorite recipe you’ve posted this year! I’m insanely addicted to coffee, though. But, I can only drink two smallish cups in the morning and one cup in the afternoon. If I drink anymore than that, it bothers my stomach. I’ve read that since it’s a stimulant, it can stimulate your nervous system which then causes your stomach to produce stomach acid. #worthit
I’m with you on the almond milk/coconut milk in coffee… whole milk adds this delicate sweetness while still keeping the flavor of the coffee! I hope you are on the mend from the flu… I just had it and couldn’t stomach coffee (or really anything!) for a week! Torture!!
This shake sounds p.e.r.f.e.c.t. I LOVE coffee, and definitely agree the ritual/experience is the most enjoyable part. Caffeine makes me shaky/sweaty/uncomfortable so I always just do decaf. I know people balk at decaf/decaf drinkers but it can be so good. Just with regular coffee, a local roaster will give you a better tasting cup, and look for ‘Swiss water process’ somewhere on the label, so you know it was decaffienated naturally, not with crazy chemicals. I just buy organic decaf to cover my bases. Plus, decaf means you can drink all the best coffee drinks at midnight and not be awake forever. Hooray!
The same thing happened to me when I had a terrible case of sinusitis this winter! I had to forgo coffee and settle for tea and I went without it for a couple of weeks. But just like you said, it was the ritual of having coffee in the morning I missed. The sound of my keurig pumping out my morning brew and especially that coffee scent could not be matched by my humble tea. So I’m back on the coffee train and this looks amazing. The chocolate covered seeds look like the perfect touch to the beverage. Can’t wait to try!
I so need this in my life! I didn’t know that hemp and chia seeds covered in chocolate where a thing. Where do you get them? Hope your feeling better.

I’m lucky (and occasionally cursed) that caffeine has no effect on me. Have an espresso and go straight to bed, no problem (curse because I wish I could use it as a way to stay awake or feel refreshed sometimes, but no). Even as such I cut out my 1 cup completely about 10 years ago for one month. While the caffeine didn’t help me stay away it gave me withdrawl headaches. After the month I had a cup every other day or so until I was able to just enjoy it because I love the flavour. And now, we’re still going strong, 1 cup in the morning and 1 in the afternoon just because I love it so much. Strong coffee + flavour syrup + quick microwave foamed 1% milk. Makes me so happy and headache free if I skip a day.

I feel the same way about nut milks not being creamy enough in coffee. When I jumped on the Whole 30 bandwagon for a hot minute I started using Nutpods in my coffee. And they are crazy creamy and delicious in coffee. They aren’t sweetened because Whole30 meant no sugar but they are still so good- especially when I froth it for a Nespresso latte! Yum! (the So Delicious Coconut Milk Creamers are a yummy sweetended options too)

Have you tried Trader Joe’s soy creamer? It gives a creamy texture and is the only thing my husband puts in his coffee.

Try plopping one or two whole crushed cardamom seeds in your coffee, the cardamom helps neutralize the caffeine hit so it doesn’t hit all at once. Plus, it makes it yummy! You could also sprinkle some ground cardamom in your coffee before brewing.
This looks so delicious & so much healthier than a frappachino!
