Tortilla Eggs.
Welcome to my new favorite thing. Like ever. Tortilla eggs have changed my life.
I am not kidding! These tortilla eggs blew my mind.
At first, I was just intrigued. But after making one? Holy cow. I was blown away. Blown away by the simplicity but also by the deliciousness. Why had I not ever attempted this? It didn’t even cross my mind. And I mean, I was the queen of the microwaved cheese quesadilla when I was a tween.
And everything is better with an egg on it!
Let’s just get to it because you need to skedaddle into your kitchen and make one of these ASAP. This recipe comes from Mary’s new cookbook, The Weekday Lunches and Breakfasts Cookbook.
Right? Right? This cookbook is everything! I swear that it was made for me because I struggle with lunch every single week. I never know what to make us, I want it to be on the healthier or lighter side, but I want it to be filling. I don’t want my lunch to consist of seven bites of yogurt and then a brownie from a recipe I’m testing and maybe a few bites of chicken from another recipe I’m photographing. While I absolutely adore my job and love working from home, the lack of structure that the days hold (and the unpredictability now that babies are involved!) can very much throw off my lunch game.
And now this book – it’s saving me. It’s SO good. There are so many fabulous ideas. My most favorite (aside from these fabulous tortilla eggs, of course) is the page titled “How to Eat a Salad Everyday.”

And it’s not ideas for boring salads. Mary gives the most incredible salad combos and ideas that I ACTUALLY feel like I can eat a salad every single day now.
But anyway! The freaking tortilla eggs that have changed the game.
These are sort of like the egg-in-a-hole toasts. Sort of. Not exactly. You don’t cut the center out of the tortilla. And you’re going to melt cheese on everything. The kicker is, however, that the tortilla also gets CRISPY (oh dear Lord, yes) from the pan. And the cheese is melty. And the egg is perfectly cooked but runny in the center.
It’s seriously AMAZING.
On top – throw whatever you want! You don’t need anything. Or you can load up the hot sauce or the veggies or whatever else sounds fantastic on tortillas and eggs.
Now the best part of this whole thing is that the tortilla eggs take MINUTES. Truly, minutes. Minutes for so much flavor. And it’s extremely satisfying and filling. I didn’t expect to love it as much as I did, and now… well. I think you can tell by my dramatic but very honest explanation that these are perfection.

Tortilla Eggs
Ingredients
- 1 teaspoon butter
- 1 large egg
- pinch of salt and pepper
- 1 ounce freshly grated sharp white cheddar
- 1 4-inch flour tortilla
- for serving
- sliced tomatoes
- green onions
- avocado
- jalapeno peppers
- fresh cilantro
Instructions
- Heat a large skillet over medium heat. Add the butter and once it melts, crack the egg over top. Sprinkle with salt and pepper. Cook until the egg turns white and opaque. Gently flip the egg. Once flipped, top it with half of the grated cheddar. Place the tortilla on top. Cook for 1 minute.
- Gently flip the egg over so the tortilla is now on the bottom of the pan. Top with the remaining cheese. Cover with a lid and cook for another minute. Slide the tortilla egg onto a plate and cover it with the tomatoes, onions, avocado, peppers and cilantro. Serve!

This is perfect! How have I never thought to do this before? I was also a huge fan of microwaved quesadillas as a kid!! That was much lunch like every day in the summer!

I have GOT to get this cookbook! I struggle big time with eating anything decent at a decent time until dinner. There’s just so much to do! And feeding the baby solids 2x until dinner and 3 bottles and all the clean up in the high chair and sterilizing bottles and dinner prep. I’m eating things here and there all day long from the fridge. I’m bad at even reheating my dinner from the night before in the microwave for lunch lol… I think I spend 75% of my day in the kitchen and I’m not even a food blogger haha!

Okay, so I completely half-assed this – no toppings, sliced vs. freshly grated cheese, etc. – and I prepped everything last night to enjoy for breakfast this morning. All of that being said, this recipe is STILL 5-stars! It’s so simple and somehow so satisfying. As someone who’s out the door for at 6:15 every morning for work, this is going to be my new go-to on-the-go breakfast!

Before I started making this delicious recipe I was a homeless rodeo clown but now I am a world class magician!
I was scrolling pinterest for a breakfast idea – I was so hungry, the carrot cake in the fridge was calling my name, there is easter chocolate literally everywhere, but I needed savoury! – when this popped up. I am here to inform anyone/everyone that while flour tortillas are probably great, corn tortillas turn into almost a chip on the bottom thus creating an egg tostada, of sorts, and OH MY GOD. SO YUM. THANK YOU. This’ll be going into my regular egg rotation.

Conjured this very idea up in my head yesterday. Decided to make today. Googled some of the ingredients for the recipe and found this and compared to my idea of what I wanted to make. The only difference is, I’m going to reverse the process by cooking up all the ingredients (to include scrambled eggs, rather than fried eggs) and then drop them on to a fried corn tortilla and finish it off with some grated mexican cheese blend and cover to melt. Breakfast coming up in about 20 minutes. :)

Need ideas for toppings. Spouse cannot eat cilantro or spinach. I guess just onions and tomatoes???
You can definitely use whatever you want. You don’t have to stick with the recipe.

What a great idea. I’m a corn tortilla fan so I used a small corn tortilla and put some pickled jalapeno slices on with the cheese. Delicious and easy and FAST and a great way for me to eat an egg for breakfast without just, you know, eating an egg, which has never been my favorite.
😂🤣😂🤣 I grew up with this. Nothing new.
Oh and you use corn. Flour is just an opened burrito.
