These margarita floats are super refreshing and delish for summer! Served on the rocks with a scoop of sorbet or sherbet, they are icy perfection. A chili lime rim takes this fun cocktail over the top.

These margarita floats are going to be your new favorite summer cocktail!

margarita floats

Get ready for happy hour because these are THE BEST.

Frosty, icy margaritas with a chili lime rim! Then a floating sherbet or sorbet scoop that melts and creates a slightly creamy, summery flavor bomb that you will just love. These are SOOOO good and can I just say that I’m pretty thrilled that I can drink them now?!

YES.

rainbow sherbet

So it’s funny because sherbet is not something I would normally choose for dessert. Max really enjoys orange sherbet, but I always tend to gravitate towards creamier ice creams, chocolates, peanut butters, all those rich and decadent flavors.

(Side bar: I made an exception for the Jeni’s frosé sorbet – it is absolutely UNREAL and got me through the first trimester.)

But when I thought about making a margarita float, and keeping the drink icy, the rainbow sherbet was the only logical solution! I knew it would complement the margarita flavor so well. Especially this orange/lemon/lime version that I find at ALDI. You can really choose any sherbet flavor that’s available to you, but if you happen to find this swirl version, it’s fantastic!

dropping sherbet into a margarita

It’s no secret that margaritas are probably my all-time favorite cocktail. I first shared my at-home classic marg over a decade ago. It’s mostly lime, of course, but has a slight splash of grand mariner, based off of my favorite margarita at a local restaurant that no longer exists. I find the extra hint of citrus, combined with the ice and the salt, makes for the perfect flavor explosion.

Not too sweet, not too tart, it’s just wonderful.

So it makes sense that the orange/lemon/lime sherbet would be ideal with those flavors! If I could only choose one, I’d probably choose lime or lemon first. If you can find a sorbet, go with one of those and drop it right down into your cocktail!

Occasionally I like to do Tajin on the rim – the most delicious chili lime seasoning with a kick. I did that here for an extra boost of flavor, but you can also just use regular margarita salt or fancy salts like these. I’ve made it both ways and both are so, so good. It just depends on what flavors you’re craving and the mood that you’re in!

 margarita floats

It’s unbelievable how DELISH these are. I can’t even handle how much I love them. They are such a fun twist on a margarita and really make things feel fancy and special. At the same time, they are not a huge departure from the classic, traditional marg, which is nice. They aren’t so different that they’re weird, you know? It’s a like a classic little marg with a boost!

Ingredients

  • tajin or margarita salt for the rim
  • lime wedges
  • crushed ice
  • 4 ounces tequila (I like a blanco for this recipe)
  • 4 ounces freshly squeezed lime juice
  • 3 ounces simple syrup
  • 2 ounces Grand Marnier or other orange liqueur
  • 2 to 4 scoops of lemon, lime or orange sherbet/sorbet (or a swirl)

Instructions

  • Use a lime wedge to rim 2 glasses, then dip the rims in the tajin (chili lime seasoning) or salt. Fill the glasses with crushed ice.
  • Fill a cocktail shaker with ice. Add the tequila, lime juice, simple syrup and grand marnier. Shake for 30 seconds, until the mixture is frothy. Pour the mixture evenly between the 2 glasses. Add in 1 or 2 scoops of sherbet. Serve!
