Golden Ginger Cauliflower Chickpea Bowls

These golden cauliflower chickpea bowls are perfect for lunch or dinner. Cauliflower florets and chickpeas are roasted with turmeric, ginger and garlic for a flavorful topping to throw on your favorite grain. The hummus dressing takes them over the top!

Ingredients

hummus dressing

  • ¼ cup plain hummus, or your favorite variety
  • ½ lemon, juiced
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger, grated
  • kosher salt and pepper
  • 2 to 3 tablespoons cold water

Instructions 

  • Preheat the oven to 425 degrees F.
  • Toss the cauliflower and chickpeas with the olive oil on a baking sheet. Season all over with the turmeric, ginger and garlic powder. Sprinkle on a big pinch of salt and pepper and toss well.
  • Roast until golden and crispy, tossing once or twice during cook time, for about 25 to 30 minutes.
  • While the cauliflower roasts, cook the couscous (or other grain) if needed and make the hummus dressing.
  • Whisk together the hummus, lemon juice, honey, ginger and a pinch of salt and pepper until smooth. Whisk in the water until the mixture smooths and thins out.
  • To assemble, scoop the couscous into bowls. Top with the cauliflower and chickpeas. Drizzle with the dressing. Top with cilantro and enjoy!
