Brown Butter Pistachio Cookie Granola

This brown butter pistachio granola tastes like one big crunchy, buttery cookie! Made with pepitas, coconut flakes and dried cherries, it's so delicious, crisp and perfect for snacking. Chocolate chips are optional!

Ingredients

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Start by browning the butter so it can cool. Place the butter in a skillet over medium heat. Cook and let the mixture bubble, stirring occasionally, until brown bits begin to appear on the bottom. Once the brown bits appear, turn the heat off and continue to stir for about 30 seconds. Let the butter cool slightly.
  • In a large bowl, stir together the oats, pistachios, coconut, cherries, pepitas, flaxseed and salt.
  • In a small saucepan, heat the sugar, syrup and olive oil until warm. Whisk until the sugar dissolves. Remove from the heat and stir in the brown butter.
  • Pour the wet ingredients over the dry and mix. Stir until everything is combined and covered.
  • Spread the mixture out on the parchment paper.
  • Bake for 40 minutes, tossing the granola once during cook time. Remove from the oven and toss. Sprinkle the chocolate chips on top. Let cool completely before putting in a jar or bag and sealing the top.
