Roasted Asparagus with Lemon Vinaigrette

This roasted asparagus is the perfect easy side dish for a holiday meal or a simple weeknight dinner. Drizzled with lemon vinaigrette and topped with crumbled feta, it's full of flavor and comes together super fast!

Ingredients

Instructions 

  • Preheat the oven to 425 degrees F.
  • Place the asparagus on a baking sheet in a single layer. Toss with the olive oil. Season all over with salt, pepper and garlic powder.
  • Roast for 15 to 18 minutes, or until golden and toasty and a bit crisp. As soon as the asparagus comes out of the oven, top with the crumbled feta. Drizzle with the lemon vinaigrette. Sprinkle on chopped green onions and serve!

  • Whisk together the lemon juice, vinegar, honey, dijon, garlic, herbs and a big pinch of salt and pepper. Stream in the olive oil while whisking until the dressing is emulsified. This stays great in the fridge for a few days and you can make it ahead of time!
