Lavender Banana Bread

This lavender banana bread is a fresh, modern spring spin on the classic! The light flavor of lavender gives this banana bread a whimsical twist.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted and cooled
  • ¾ cup brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 4 medium ripe bananas, mashed

lavender glaze

  • 1 1/4 cups of powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 2 tablespoons heavy cream
  • 2 1/2 tablespoons milk
  • a drop of light pink or purple food coloring
  • optional: culinary lavender flowers

Instructions 

  • Preheat the oven to 350 degrees F. Spray a 6-cup loaf pan with nonstick baking spray.
  • In a small bowl, whisk together the flour, baking soda and salt.
  • In a large bowl whisk together the melted butter and sugar. Whisk in the eggs, vanilla extract and lavender extract. Whisk in the mashed bananas.
  • Stir the dry ingredients in the wet ingredients until just combined. Do not over mix!
  • Pour the batter into the greased loaf pan. Bake for 55 to 60 minutes, until the top is golden and set and a tested inserted in the center comes back clean. Let the bread cool in the pan for 15 minutes, then carefully invert it and place the bread on a sheet of parchment paper.

lavender glaze

  • To make the lavender glaze, whisk all ingredients together until smooth. If it seems to thick, add in more milk 1 teaspoon at a time. If desired, you can add a drop of food coloring to make it pink!
  • Optional: sprinkle a teaspoon of culinary lavender over top of the glaze.
