Chocolate Dipped Strawberry Swirl Marshmallows

These strawberry marshmallows are the perfect treat! Strawberry swirled marshmallows sprinkled with strawberry powdered sugar and drizzled in dark chocolate. These are a dream!

Ingredients

  • 2 cups freeze dried strawberries, crushed, plus extra for sprinkling
  • ½ cup powdered sugar for sprinkling and mixing
  • 2 (.25 oz) packets of gelatin
  • 8 tablespoons of cold water
  • 1 1/2 cups granulated sugar
  • 1/3 cup cold water
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 6 ounces high-quality dark chocolate, melted
  • 1 tablespoon coconut oil

Instructions 

  • I start by crushing the freeze-dried strawberries. You can do this in a food processor or you can add them to a ziplock bag and crush them with a rolling pin. You want them crushed into a fine powder. I set aside ¼ to ⅓ cup of the strawberry powder for the marshmallows.
  • I stir the remaining strawberry powder into the powdered sugar until combined.
  • Place the gelatin in a small bowl and stir in the 8 tablespoons of cold water. Set aside. Spray an 8×8 pan with nonstick spray, then sprinkle some strawberry powdered sugar in the pan and shake well, dispersing it all over the pan, covering the entire thing.
  • In a small saucepan, combine the remaining cold water and sugar. Heat over medium heat, stirring constantly until the sugar is dissolved and bubbly, about 3 to 4 minutes. Stir in the gelatin mixture, whisking, and bring it to a boil. Once boiling, immediately remove from heat. Add to the bowl of an electric mixer attached with a whisk. Let sit and slightly cool.
  • Add in the vanilla extract and salt. Beat on medium-high speed for 10 to 15 minutes, until white and glossy and shiny and thick.
  • At this point, remove half of the marshmallow mixture and place it in your powdered dish. Add the strawberry powder to the remaining marshmallow mixture in the mixer. Beat until combined, another 1 to 2 minutes.
  • Remove the strawberry marshmallow mixture and place it on top of the regular marshmallow layer in the dish. I use a knife to swirl things together - I don't do this in any specific way! I just try to swirl the two without mixing completely, then I smooth out the top.
  • Top with a sprinkle of strawberry powdered sugar. Let sit for about 4 hours, or even overnight.
  • Stir the coconut oil into the melted chocolate. You can also melt both together in the microwave.
  • Once the marshmallows are set, slice them into squares. Any size works! Whatever you like. Drizzle with melted chocolate or dip them in the chocolate. Sprinkle on a few extra crushed freeze dried strawberries.
  • I store these at room temperature in a sealed container on the counter.
