Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
Place the zucchini on a cutting board and sprinkle it with salt. Let it for 5 minute, then pay it dry with a paper towel. This helps to remove excess moisture.
Place the sheet of puff pastry on the parchment paper. Cover with the mozzarella cheese, leaving the 1 inch border. Top with the zucchini and sprinkle with a little more salt, the pepper and the garlic powder. Crumble the goat cheese over the zucchini and sprinkle on crushed red pepper. Sprinkle on the lemon zest.
Bake for 20 to 25 minutes, or until golden and crisp. Sprinkle with fresh herbs before serving.
