This smoked salmon farro salad is made with peppery arugula, refreshing cucumbers, pickled onions and crisp fresh radish slices. Drizzled in a red wine vinaigrette, it's full of flavor and will leave you satisfied!
Place the arugula and cooked farro in a bowl. Season it with salt and pepper all over. I also like to give it a little drizzle of dressing here.
Top with the smoked salmon, feta, cucumber, pickled onions and spritz of lemon.
Drizzle with the vinaigrette and toss. Serve!
red wine vinaigrette
Whisk together the vinegar, garlic, honey, a big pinch of salt and pepper and the red pepper flakes. Steam in the olive oil while whisking. You can make this ahead of time and stick it in the fridge!
