Lunchtime Cheddar Tuna Pasta Salad
This tuna pasta salad is so easy and delicious! It tastes crisp and refreshing, while at the same time being reminiscent of a tuna melt. The flavors work so well together and it's incredibly satisfying. Great for lunch!
Ingredients
- ½ pound small pasta shells, cooked
- 2 cups cherry tomatoes, halved or quartered
- 1 green bell pepper, chopped
- 6 to 8 ounces tuna packed in oil or water, drained
- 8 ounces sharp cheddar cheese, cubed
- ¼ cup chopped fresh parsley
zesty shallot vinaigrette
- 3 tablespoons red wine vinegar
- 2 garlic cloves, minced
- 1 shallot, diced
- ½ tablespoon dijon mustard
- ½ tablespoon honey
- ½ tablespoon dried oregano
- kosher salt and pepper
- ⅓ cup olive oil
Instructions
- Cook and cool the pasta according to the package instructions.
- In a large bowl, combine the pasta with the tomatoes, peppers, tuna, cheddar and parsley. Drizzle the dressing over (start with half of the dressing) and toss well. Add more dressing as needed. Enjoy!
zesty shallot vinaigrette
- Whisk together the vinegar, garlic, shallot, dijon, honey, oregano, and a pinch of salt and pepper until combined. Stream in the olive oil while whisking until emulsified. This stays great in the fridge for a few days!
