We're obsessed with this puff pastry fruit pizza! A flaky, buttery cinnamon sugar crust topped with cream cheese glaze and all the juicy summer fruits. Delicious, light and the perfect treat.
Preheat the oven to 425 degrees F. Place the puff pastry on a sheet of parchment paper on a baking sheet. Poke the pastry all over with a fork so it doesn’t bubble up.
Brush the pastry with the egg wash. Sprinkle the cinnamon sugar all over. Bake the pastry for 15 to 20 minutes, until golden and puffed. Let cool completely.
While the pastry is baking, make the cream cheese layer. In the bowl of your electric mixer, beat the cream cheese until smooth and creamy. Add in the powdered sugar, salt, vanilla extract and milk, beating until creamy.
Once the puff pastry has cooled, spread the glaze in a layer over top, leaving a 1-inch border. Top the cream cheese with the chopped fruit. Sprinkle the fresh mint on top.
Slice and serve!
