This strawberry burrata salad is a summer staple - perfect for a light lunch, and easy starter or a seasonal side dish. It's drizzled with a basil vinaigrette and is the best combo of savory and sweet!
Place the arugula on a large plate or in a bowl. Season with salt and pepper. Top with the burrata cheese, pulling it apart to spread it out. Add another sprinkle of salt and pepper.
Top with the strawberries. Sprinkle on the pistachios. Drizzle with the dressing. Taste and season more if needed. Serve!
basil vinaigrette
Add all the ingredients to a blender or food processor and blend until smooth. Store any extras in a sealed container in the fridge for 3 to 4 days.
