Strawberry Burrata Salad with Basil Vinaigrette

This strawberry burrata salad is a summer staple - perfect for a light lunch, and easy starter or a seasonal side dish. It's drizzled with a basil vinaigrette and is the best combo of savory and sweet!

Ingredients

  • 4 cups baby arugula greens
  • 8 ounces burrata cheese
  • 3 cups sliced strawberries
  • ¼ cup chopped pistachios

basil vinaigrette

Instructions 

  • Place the arugula on a large plate or in a bowl. Season with salt and pepper. Top with the burrata cheese, pulling it apart to spread it out. Add another sprinkle of salt and pepper.
  • Top with the strawberries. Sprinkle on the pistachios. Drizzle with the dressing. Taste and season more if needed. Serve!

basil vinaigrette

  • Add all the ingredients to a blender or food processor and blend until smooth. Store any extras in a sealed container in the fridge for 3 to 4 days.
