This grilled streak with marinated tomatoes is an easy and fresh meal to make in the summer without heating up the house! It's flavorful and satisfying, drizzled with herby chimichurri. Perfect served with corn on the cob or sourdough!
Place the herbs in a bowl. Add the garlic, vinegar, olive oil, salt, pepper and crushed red pepper. Stir together and let sit until ready to use. If you want to refrigerate this, cover it before placing it in the fridge.

Whisk together the oil, vinegar, garlic, parsley and pepper flakes. Whisk in a pinch of salt and pepper. Add in the tomatoes and toss well. Let sit for 15 minutes, tossing a few times.

Heat your grill to the highest setting. Let it heat for 10 to 15 minutes.
Season the steak all over with salt and pepper. Place the steak directly on the grill and grill for 3 to 5 minutes per side, or until the desired doneness is reached. Remove the steak and let it rest for 10 minutes. Once it rests, slice the steak.
Top the sliced steak with the marinated tomatoes and drizzle with the chimichurri. Serve!
