Grilled Steak with Spicy Marinated Tomatoes & Chimichurri.
This grilled streak with marinated tomatoes is an easy and fresh meal to make in the summer without heating up the house! It’s flavorful and satisfying, drizzled with herby chimichurri. Perfect served with corn on the cob or sourdough!

And lucky for you, it will take no time at all. This grilled steak with marinated tomatoes and chimichurri is easy, fresh and so wonderful. Tastes incredible and comes together super fast!
A meal like this is the epitome of summer dinner for me. We can have friends over at the pool and I can make this in less than 30 minutes.

In the warmer months, we love making a grilled meat and combining it with a fresh component. Often, it’s chimichurri. In fact, that is probably one of the most popular condiments/herb sauces that I make in our house. Eddie loves it on EVERYTHING. And it can be made a bit ahead too.

For me, it’s more like grilled chicken or salmon with a quick homemade salsa, pico or something similar. It’s so fresh and delicious! And it’s also one of those meals that is so light and enjoyable to eat when it’s one million degrees outside. Which it is right now.

I also love that these meals work great for leftovers. Whether it’s lunch or dinner the next day, it’s great served straight from the fridge or reheated. And most of the time, the salsa or sauce has even more flavor.

This is how I make it!
First up, the marinated tomatoes. I make a little marinade with red wine vinegar, olive oil, tons of garlic and crushed red pepper. Then I throw some halved cherry tomatoes in there and give them a few tosses for a while. Delicious!! I could eat these alone.
Next, the chimichurri. I have so many recipes here on the site using my chimichurri and now we have another one. Lots of cilantro, parsley, garlic and again – red wine vinegar. This and the tomatoes complement each other so well!

My family just loves steak, so I am constantly grilling different cuts. Strip, filet, and occasional ribeye – the filet is my favorite but I don’t mind mixing it up sometimes. You can also grill chicken breasts or thighs instead of steak if you’d prefer.

The best part of this meal is that this can be IT. It can be as simple as this. Or you can throw in something very easy, like toasted sourdough, garlic bread or even corn on the cob. Something to keep it easy, fresh, delicious and simple.
As in, nothing that requires heating up the house!

This is one of those embarrassingly easy meals because there is no true recipe. You can grill the steak as you wish. Make the tomatoes as spicy as you’d like! The chimichurri is the one part of the recipe to follow so you get all that excellent herby flavor.

Grilled Steak with Spicy Marinated Tomatoes
Ingredients
chimichurri
- 1 cup fresh cilantro, chopped
- ⅔ cup fresh parsley, chopped
- ¼ cup fresh oregano, chopped
- 4 garlic cloves, minced
- ¼ cup red wine vinegar
- ⅔ cup olive oil
- kosher salt and pepper
- ¼ teaspoon crushed red pepper flakes

- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 4 garlic cloves, minced
- 3 tablespoons chopped fresh parsley
- 1 teaspoon crushed red pepper flakes
- 2 cups cherry tomatoes, halved
- 4 strip steaks or filets
- kosher salt and pepper
Instructions

- Place the herbs in a bowl. Add the garlic, vinegar, olive oil, salt, pepper and crushed red pepper. Stir together and let sit until ready to use. If you want to refrigerate this, cover it before placing it in the fridge.

- Whisk together the oil, vinegar, garlic, parsley and pepper flakes. Whisk in a pinch of salt and pepper. Add in the tomatoes and toss well. Let sit for 15 minutes, tossing a few times.

- Heat your grill to the highest setting. Let it heat for 10 to 15 minutes.
- Season the steak all over with salt and pepper. Place the steak directly on the grill and grill for 3 to 5 minutes per side, or until the desired doneness is reached. Remove the steak and let it rest for 10 minutes. Once it rests, slice the steak.
- Top the sliced steak with the marinated tomatoes and drizzle with the chimichurri. Serve!
