These beef tacos with creamy street corn are so delicious – crispy, crunchy with refreshing salsa. Lots of amazing texture, flavor and they come together super fast! The grilled corn topping is everything!

This kind of street corn topping is something I’d almost ALWAYS use with chicken or steak tacos. Or even shrimp! 

But here’s the thing – my kids LOVE beef tacos. Like the classic old school ground beef tacos. Those are their absolute favorite version of any taco. And they really love a good taco bar too! 

They also really enjoy corn, in fact they LOVE it. So I knew if I had any chance of getting them to enjoy this, the corn had to go on the beef tacos!

To start, these ground beef tacos are the ones I make all the time. They are so super easy and simple and I use my own spice mix too. 

Flour or corn tortillas work – whichever you prefer! I love both and use them (almost) interchangeably.

It’s a mix of a street corn topping and my creamy corn salad that I serve with grilled chicken often.

It’s packed with:

Grilled corn

Green onions

Feta or cotija cheese

Cilantro

Lime 

And a bit of mayo 

A dash of chili lime seasoning

Mixed all together, this creates a crunchy, refreshing salad that is both savory and sweet thanks to that grilled corn. It’s incredible!! I could eat it by itself or with tortilla chips. Which is my second favorite way to enjoy it, after these tacos.

I char my tortillas in a very professional way: on the flames on my gas range. This just adds an extra step of flavor, texture and honestly – appearance! It makes them look super cute for tacos, you know?!

You can also prep both the ground beef and corn ahead of time and keep it in the fridge! Heat the beef right before assembling and it will come together so quickly. I love a dinner like that.

Creamy Street Corn Beef Tacos

Ingredients

  • 4 ears sweet corn
  • 3 green onions, thinly sliced
  • cup mayonnaise
  • ¼ cup chopped cilantro
  • ¼ cup crumbled cotija or feta cheese
  • 2 tablespoons freshly squeezed lime juice
  • ½ teaspoon tajin, or any chili lime seasoning
  • kosher salt and pepper
  • 1 pound lean ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 10 to 12 corn or flour tortillas for serving

Instructions 

  • Preheat the grill to high and make sure it is hot.
  • Once the grill is hot, add the ears of corn directly to the grates. Cook for 3 to 4 minutes before rotating. Repeat this until the corn reaches the desired char. I usually grill it for about 8 to 12 minutes total, depending on the size. Once the corn has cooled enough, slice it off the cob.
  • In a large bowl, combine the corn with the onions, mayo, cilantro, cheese and lime juice. Add a pinch of salt and pepper. Add the tajin. Taste and season with more salt and pepper if needed. Or more tajin!
  • Heat a skillet over medium heat. With ground beef, I rarely add any oil to the skillet because it tends to be fattier. If needed, you can add 1 teaspoon of olive oil (of your oil of preference).
  • Once the skillet is hot, add the ground beef and break it apart with a wooden spoon.
  • Cook, stirring and breaking apart the beef often, until it begins to brown. Add in the cumin, paprika, garlic powder, chili powder, and a big pinch of salt and pepper. Stir well to disperse all the seasonings. Cook until the beef is just browned, breaking it into tiny crumbles as you go.
  • I like to add a bit of stock or water to the pan to keep the beef moist.
  • To assemble the tacos, add the ground beef to the tortillas and top immediately with the corn salad. Serve and enjoy!
