These apple butter crumb muffins are the fall snack you’ll wish you’ve been making for years. A soft and tender muffin topped with lots of spiced, brown sugar streusel for that extra texture. Absolutely deeeelish.

Why haven’t I been making these my whole life?! I’m so much more of an apple cider person than a pumpkin person, and these are basically apple cider in solid form.

It’s no secret how much we LOVE my apple butter snack cake. It’s incredible and I love making it on a gorgeous fall Saturday. But there is something about making food in individual portions… like a muffin or a bite of some sort, that gets my whole family excited.

It’s probably also the portability. Just grab and go!

So. The only thing that could be better than the cake?! A muffin version. They are tender and moist and packed with tons of spiced apple flavor.

Plus, the crumbly streusel topping is delightful. Crunchy with a delightful crisp.

I use the base of my pumpkin muffins for this recipe because they are foolproof. Of course, you want to use an apple butter that you enjoy for this recipe… because your muffins will taste like apple butter. Of course.

These make such a lovely little breakfast or snack. Actually, my family loves muffins the most as a pre-bedtime snack. They are filling and satisfying and hit the spot after dinner.

Sidebar: I really love using these tulip muffin liners! They make me so happy. They are also taller than classic liners and can hold a bit more batter in each. I also love the pattern they leave on the sides. The parchment makes it very easy to remove the paper from the muffin.

Back to the muffins. They have an exceptional crumb, a big hearty muffin section and a nice layer of crunchy streusel on top.

Since the apple butter tends to be spiced, these will have some spice to them. I most often use cinnamon but if you can get your hands on some apple pie spice, it’s also excellent.

Instructions 

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Make the crumb first so it’s ready. Whisk together the sugar, cinnamon, salt and melted butter until combined. Whisk for a good minute or two until the sugar begins to dissolve, then use a wooden spoon to stir in the flour. The mixture will be crumb-like and dry. Almost like sludge or sand. This is what you want! Set it aside until you’re ready to use.
  • In a small bowl, whisk together the flour, baking soda, salt and cinnamon.
  • In a large bowl, whisk together the sugar and the eggs until combined. Whisk in the apple butter. Whisk in the oil, yogurt and vanilla extract until smooth.
  • Stir in the dry ingredients until just combined - do not overmix!
  • Fill the muffin tins about ¾ of the way full. Sprinkle the crumb over the top of each. Bake the muffins for 20 to 22 minutes, or until set in the center. Let cool before serving!
