Chocolate Chip Cookie Pie.

When my mom got me a recipe box a few Christmases ago, I immediately went scrounging through all of her recipes to find some to add to my own collection.

She has many recipes saved from years past that she has never made, and this is one of them. I decided to take on the difficult task of making this pie, because it must be just terrible to eat chocolate chip cookies in pie form, right?

 

When I first saw the recipe, I assumed the crust would be made from graham crackers or cookies. But it actually called for a regular pie crust.

 

This gave me the perfect chance to try Mother Lovett’s perfect pie crust. And when I say try, I really mean fail miserably 14 times before not even coming close to her crust.

She did not measure any ingredients when baking her crust, nor did she follow a recipe for the last 20 years. She just knew when it was ready. Kind of how she knew it was appropriate to stand on a step stool washing walls at age 86. Or how she knew that one of her loving grandchildren would buy every embarrassing item possible in the grocery store at once, including, but not limited to maxi pads with wings, stool softener, Mylanta, and oatmeal cream pies, just because she asked.

 

My crust came out ugly, but edible. Once I have the recipe down pat, I will share it with you.

That is, if I don’t commit myself to an insane asylum first.

 

But really, who cares about the crust when the top of the pie resembles a buttery, crispy chocolate chip cookie?

 

I’m not really a pie person, most likely because they don’t always include chocolate, bacon or cheese.

I should change that, shouldn’t I? I’ll get on it right away.

 

This pie, however . . . it changed me.

It made me a pie person.

At least for the time being, when I was shoveling 6 pieces into my mouth.

 

Know what makes this pie even better?

Topping it with ice cream while it is still warm.

 

The ice cream melts into the crevices of the cookie topping, and seeps all the way down into the pie. It is such a sin.

 

Chocolate Chip Cookie Pie

2 eggs

1/2 cup flour

1/2 cup sugar

1/2 cup packed brown sugar

1 cup butter, melted and cooled to room temperature

1 cup chocolate chips

1 unbaked pie shell

whipped cream or ice cream

Preheat oven to 325. In large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Blend in melted butter. Stir in chocolate chips. Pour into pie shell. Bake for 60 minutes.

Serve warm with ice cream.

 

 

If you make this pie and eat it warm with an entire gallon of ice cream, I won’t tell.

um yes! My husband’s mom makes this but without the crust. The crust I’m sure adds an extra oomph to the amazingness of this!

So, my husband saw this one. He may have finally discovered not only your BBQ chicken sliders, but now your deserts. This one will have to be made! I like Lindsay (Happy Herbivore) wonder if there’s an eggless way to make this? Anyhow it looks freaking amazing!

Hot DAMN! This looks amazing!!! And yes, I bet it would taste fantastic all warmed up with a gallon of ice cream. This is the one time I would eat vanilla ice crema, rather than some special flavor with some sort of chunks. I like it when the main component (the pie) is the main attraction!! Vanilla is the best pairing for things like this. Thanks for the recipe!

I was at costco one time and they had this company sampling a cookie pie type thing that was heated before sampled. I nearly grabbed the entire pie and shoved it in my face… thats kinda what i want to do right now to yours. bring one for me when you come to fitbloggin? or you can totally use my kitchen! haha

Holy mess, that’s the most delicious-looking/sounding pie i’ve ever heard/seen. There is just nothing better than warm chocolate chip cookies, and I can only imagine eating them in pie form is awesome.

I made this and the chocolate chips sunk to the bottom, creating a layer of chocolate above the crust, it was delicious nonetheless but is this common?

Hmmm… sometimes that can happen, usually doesn’t to me with this pie but it happens with other desserts. Next time, toss the chocolate chips in some flour and it may help!

My chocolate chips also sunk to the bottom and I pulled it out at 54 minutes and it could have come out much sooner. Just FYI. Still delicious though!!!

I make this pie too, and I learned that just a pinch of salt adds SO much to the flavor! Also a thought that I have been throwing around in my mind….what if we made this a peanut butter chocolate chip cookie pie….hmmm…

Does it matter if you use margarine instead of butter?
And not just for this, but for any dessert?

It often does matter – butter and margarine have 2 completely different molecular structures and will yield different results. I do not recommend using it. Of course sometimes margarine may work fine in a recipe, but I never use it so I can’t say.

Okay- I usually don’t leave comments on older blog posts, but I felt that this was necessary. This pie is so freaking good. I have actually made it twice this week becuase it is so easy to throw together and I’m officially addicted. (My chocolate fell to the bottom too but it was still delish). Anyhoo- I think this desert should be renamed as forgiveness pie. Here’s why: (As I mentioned I’ve made this twice in one week). The first time- the only brown sugar I found in my house was somewhat old (Okay- really old) and it was hard and crumbly. I had to take chunks of brown sugar and squash with my hands and fingers and still had some hard chunks fall into my batter. I thought- what the hey and stuck it in the oven anyway. It came out perfect. You couldn’t even notice the hard chunks of brown sugar that slipped in. Now the second time I made this: Everything was going along smoothly (I made my husband buy me a new bag of brown sugar). So I put the batter in my pie crust and realized something just wasn’t right… Then it dawned on me: I forgot the most important part!! BUTTER! SO I poured the melted butter on top of the batter and tried to mix while in my pie crust. Bad idea. I had to abort. So then- I scraped the batter with my hand back into the mixing bowl and stirred it all together. I knew that this pie mission was probably going to fail, but I was determined and stuck it through. I poured the batter back into the pie crust and baked. It was even better the second time! So- long “comment/stories” later, I had to share and let you know that you have officially given me my new easy go to recipe. It’s impossible to mess up :) . Thanks!

Do you think it would be okay to make up the pie and then leave it refrigerated before baking it? Just so I could prepare it and the bake it during dinner so it’s straight out of the oven warm for dessert? :)

Probably, but do NOT bake it straight from the fridge in a glass dish – the abrupt temperature change will probably cause the glass to shatter. You’d have to completely let it come to room temperature first.

Hi Jessica! I’ve made or pinned via Pinterest a few of your recipes and so far I’ve had delicious success! Like another commenter, I made this pie tonight for our New Year’s Day dinner and even after extra baking time, mine was still all gooey and buttery like all the ingredients weren’t coming together. I am dying to try this because your photos look amazing. What could I have done wrong??
