Having something sweet for breakfast is in my nature.

If it doesn’t come in the form of chocolate, peanut butter or whipped cream, there must be fruit included.

And when it comes in the form of both fruit and chocolate, things are off to a great start.

My first attempt at these waffles was a disaster.

The batter was too thin and I had to peel the waffle off of the waffle maker piece by piece.

But I ate it anyway. Especially since the chocolate chips were oooey and gooey and all shades of delicious.

You can’t really even tell that these waffles are whole wheat.

Each bite offers a smidge of melted chocolate chunk, which makes you forget that minus the bit of sugar, these waffles are actually good for you.

Whole Wheat Double Chocolate Chip Waffles

2 cups whole wheat pastry flour

2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons sugar

1/4 cup cocoa powder

1 cup skim milk

1 egg

2 tablespoons canola oil

1/2 cup chocolate chips

Preheat waffle maker.

Combine all dry ingredients together, then add egg, milk and oil. If batter is too dry, add milk 1 tablespoon at a time, until it is wet but thick.

Fold in chocolate chips. Spoon 1/3 cup batter into waffle maker, cooking for 2-3 minutes or until waffle is set.

This was one of the best breakfasts I have had in weeks.

I can see chocolate waffles becoming a staple in this house. With a side of bacon, of course.
