Comfort Food.
Mr. How Sweet is still on the mend. He is doing great, while I on the other hand am a neurotic freak.
But that’s nothing new.
I was so excited when he asked me this afternoon for a dinner with mashed potatoes and gravy. He rarely asks me for anything, except when he asks me to make “healthy cookies” every other week. I love taking care of him.
And FYI: cookies are not supposed to be healthy. Healthy cookies do not taste great. We have learned this after 654 attempts.
So comfort food it was!
I caramelized some chicken in my cast iron skillet. Can I just say that I am obsessed one million times over with my cast iron skillet? It’s true love.
I didn’t think we had enough yukon golds, so I made a mash of yukon golds and sweet potatoes.
This was delicious.
Might make potatoes like this from now on.
And obviously we had corn on the side, because there always seems to be a lack of green veggies in the fridge.
I have no idea why.
Oh yeah… and I even made gravy.
Then topped it all with the gravy goodness. Now I’m in a food coma. Even better, our treadmill broke last night.
Oh, and in case you’re wondering, it’s been eons since I shaved my legs because I am petrified of cutting myself and catching Mr. How Sweet’s sickness.

It’s okay, I shaved my legs for the first time in 2.5 weeks yesterday. It was not pretty.

Whoa that’s bad girls…actually not really…*whispering* I’ve gone for more than a month not shaving…but it doesn’t matter b/c I never wear shorts :P Don’t judge me please :)

I love that you don’t shave because you might get germs. You’re a better wife than me…I just don’t shave because I’m lazy.

at least you have a good reason for not shaving! Plus isn’t it like negative twelve hundred degrees up there anyways?
When I was growing up, we got to pick our birthday dinner every year. I ALWAYS picked chicken breasts, mashed potatoes and corn. Every year. That’s my comfort food right there.
Also, I use cast iron for everything. I’ve even made oatmeal in it. Its great.
At least you have a real reason for not shaving. My excuse is that it’s winter and I can wear pants and stockings :)
Don’t worry, I don’t think I shaved at all last winter. But then again I’m single, so there was no one there to care ;) Hurrah for the Mr’s speedy recovery!
I haven’t shaved my legs in about 2 weeks… I blame it on having a baby and my husband being too tired to care anyways lol.
PS I always make my mashed potatoes with half reg potatoes and half sweet potatoes. It’s the way to go for sure :)
For me, my comfort food is macaroni and cheese…with hot dogs. :-)

Help, Jessica! Please tell me…what cleaning product/utensils do you use to clean your cast iron skillet? I know you’re not supposed to use harsh chemicals on the cast iron. I’m afraid to use my skillet before I know I can properly clean it.
Hi Lauren! I actually really *don’t* clean it. I know that sounds gross, but a family friend who’s husband was a world renown chef taught me that you literally just “wipe” it clean with wet paper towels or a rag. This helps keep the skillet seasoned, and that is the most important part of a cast iron skillet – seasoning it.
I often make things in the skillet that I end up deglazing so it’s rare that things get stuck to the bottom. But in that case I soak it in warm water for 10-15 minutes at a time and scrub it off. You DON’T want to let it soak for a long time, especially in soapy water. At least that is what I’ve learned/read/been taught, but I’m no expert!
That’s the way I take care of my cast iron pans! When properly seasoned, they’re more non-stick than any non-stick pans. A trick I learned for scrubbing, if needed, is to pour some salt in the pan and then scrub with a plastic scrubbie. And if the pan loses a bit of its seasoning, cook up a big batch of bacon in it to fix it right up! :)

that’s how i’ve always been told to clean them–I have 3 passed down from my grandma and they’re wonderful! I was told to never use soap because they can absorb the flavor as well as strip the oils.

The legs… lol Well it’s winter so it’s totally okay or if you’re really desperate to you could always try nair but even the ‘new improved’ stuff still smells horrible. As for your dinner omg mashed potatoes – seriously we’ve been talking about them everywhere all week and I want more!

Daily shaved legs in the middle of winter? NOT! And, if I were you, I would be afraid to shave them until he is fully healed, too!

First off, that mashed potato recipe sounds awesome! I must try that. I also own a cast iron skillet, but I’m too afraid to use it. Help!
And if we’re sharing secrets, I have neglected shaving for a bit because I am usually wearing pants. Who’s gonna know?

I love using my grandma’s cast iron skillet! I have heard that if you use cast iron (not the enameled kind) that it can cause glass stove-tops to crack/bust. I was just wondering if you have heard this. I was told it’s because they hold heat so well and get so hot. I want to use mine so badly, but alas, have retired it to oven only items because I am fearful of this.

I’ve never heard that but can totally see how that could be a possibility! I am glad I don’t have a glass stovetop now because I would probably be fearful of using my cast iron!! It does get super hot.
