White Chocolate Coconut Pancakes.
Growing up, pancakes were always a staple in our house. My dad would make them on Saturday or Sunday, continuing the tradition from when his grandmother would make him a short stack.
Luckily, I married a man that can also make some superb pancakes. However, everyone tries to test me and ask ‘who makes better pancakes, your husband or your dad?’
I’ll never tell.
But I do sense a bit of competition each weekend when my husband is whipping up a batch.
I fancied these pancakes up a bit – which is funny since neither my husband or my father would eat such a thing. I would and did, of course.
Into the batter went some creamy coconut and white chocolate morsels. I toasted some coconut for garnish.
This is basically my husband’s worst nightmare since he hates coconut. But even he took one look at these pancakes and said ‘Wow! Those look really good!’
Luckily, today wasn’t the day that he decided to love coconut, which meant more pancakes for me.
I am considering forcing him to eat coconut. He and his friends decided that it would be hilarious to grow mustaches. I am refusing to go out in public with him. He looks like the uni-bomber, a child predator, and a creepy old man all rolled into one. Think I can shave him in his sleep?
Probably, since he sleeps like a toddler.
But do you know what’s funny? My dad has a mustache. So of course, my husband thinks it is fine for him to have one, too.
I should boycott cooking for him. Or only cook foods using items he dislikes, like ricotta cheese, coconut, and anything labeled ‘vegan.’ It would be funny if I got rid of all the meat in our house, too. I bet he’d shave that ‘stache in an instant.
White Chocolate Coconut Pancakes
pancakes from allrecipes
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1/2 cup white chocolate morsels
1/2 cup coconut
1/4 cup toasted coconut
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Fold in coconut.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Drop in white chocolate morsels. Flip when bubbles appear on the top. Brown on both sides and serve hot. Garnish with butter, syrup, and toasted coconut.
The white chocolate became melty and creamy, giving the fluffy pancakes a sweet, smooth texture. They practically melt in your mouth!
Make these pancakes for breakfast asap. Or for dinner. Or even lunch. Or dessert. Or how about for a snack? You can also make them if your husband hates coconut and is growing a crusty mustache. Report back.
On the pancakes that is, not about the mustache. There is no changing my mind on this one.

ugh major drooling! I LOVE white chocolate. I think my favorite cookie of all time, and I know it sounds strange, is White Chocolate, Lemon, Coconut.. They had them every so often at a Whole Foods I use to live by.. amazing.

Those sounds like my idea of perfection. WOW. That is quite the stack of pancakes!! I showed my hubby, and even he was drooling (and he doesn’t like coconut!). What is with these husbands?? Hehe!

OMG, those pancakes look amazing. I always make pancakes for the kids on the weekends, though there’s are more plain, and put into a mold of some sort. I need some adult pancakes, LOL!
My husband has a perma-stache. He shaves in the am, and it’s back a few hours later. It’s bizarre! I’m Italian and my hair doesn’t grow that quick ;-)

Best looking pancakes I’ve ever seen! I’m a big coconut fan. Maybe I’ll add some cinnamon in too! The best way to get him to shave is to pretend you don’t notice it at all.

Yummmmmmmmy, these look amazing! I adore coconut, I can’t even imagine that they make people who don’t like it. Although my best friend doesn’t like it, I almost ended that friendship when I found out, however since I pretty much like her alot decided it was worth accepting that one flaw… :P

In college, some of my guy friends did a mustache and ugly christmas sweater party. They grew out their staches for 2 months, no joke. They all looked like homeless scrubs. The party was fun though! Some of the girls even got fake ‘staches :)

Oh yeah, these look fantastic. We used to always have pancakes on the weekends too. My mom always added chocolate chips. We never had coconut around because my dad DESPISED it, therefore I hated it too. Now that I am older, I LOVE IT! I think I just assumed I didn’t like it because my dad didn’t….crazy.

my ginger ‘stache is not crusty or creepy. if i had to describe my ‘stache in one word, it would be “tight.” or “niiiiiiiiice.” and once it fills in a little more, i would be more than happy to share the awesomeness of the ‘stache with your readers. give them what they want….which is more me!
and regarding your cooking boycott, will this be offset by a markedly noticeable increase in dusting or will this boycott run in conjunction with your dusting/sweeping/bathroom cleaning boycott?

Mustaches are definitely creepy…tell him that unless he grows additional facial hair (goatee or full-on beard) that you’re shaving him in his sleep!! Both my dad and future FIL have full-on beards and I love them…luckily my stepdad shaved his mustache years ago. It made such a difference in how he looks, a much softer look!
My husband hates coconut and I could either take it or leave it. My hubs also decided to have a Man-uary with some buddies and they all grew beards. Troube is…my hubs can’t grow much of a beard even when he tries. He has two patches on either side of his face that just don’t grow in.
