Homemade Chocolate Caramel Cups.
It was quite a tempting week in the How Sweet house.
After I spent countless hours trying to keep my spoon out of the salted caramel jar, I knew something had to be done.
Instead of peanut butter cups, I made salted caramel cups. Milk chocolate enveloping salty caramel? I was all over that.
I used a mini muffin pan and went to town.
Many of them turned out perfectly.
But others looked like this.
And even this. But there was really no reason for complaining. It’s not like I’m gonna pass up a piece of chocolate with caramel oozing out of the sides.
Homemade Chocolate Caramel Cups
makes about 12 mini cups
2 cups chocolate chips
1/3 cup COLD salted caramel (you obviously can use homemade too)
12 mini muffin liners
Line muffin tin with liners. Melt one cup of chocolate chips and spoon about a teaspoon of chocolate into each liner. Put in the freezer to set for 20 minutes. After 2 minutes, take the chocolate out. Make sure the caramel is very cold and has been refrigerated the entire time. Moving quickly, drop a spoonful of caramel on top of the chocolate. Put back in the freezer for 20-30 minutes. After 30 minutes, melt the other cup of chocolate chips. Moving very quickly so the caramel doesn’t soften, remove muffin tray from fridge and spoon another teaspoon (or more) on top of the caramel, covering it. Bang the pan on the counter to even out the chocolate. Put back in the freezer for 20-30 minutes. Keep refrigerated.
But now I’m out of caramel. Unfortunately, this is probably a good thing.

To avoid the oozing out of the sides I always just take a paint brush and literally paint my melted chocolate straight onto the linings. I stick them in the freezer until they are hard then fill them with whatever my heart desires! The always come out looking like they came from the store:)

After reading 12 pages of this blog, and I do mean read, my mouth is overflowing in anticipation of my return to the fine world of cooking. Back in high school when I still lived with my parents and had a fully stocked kitchen almost all the time, I cooked constantly. Now, in college, I’ve not cooked more than 4 meals in the past year. It’s sad, and not healthy. But no more. Your simple recipes have shown me that I can just go grab a few things, and use them over and over to make GOOD and HEALTHY meals for myself in a small amount of time.

Okay, I hate you right now – because I’m full of my dinner (like WAY full) and barred myself from the kitchen…and then I had to go see these…now I’m like 2 steps from the kitchen…hate you! (y’know – nothing personal though ;) ).
This will be my Sunday project! What a beautiful presentation and I like those “oozing caramel out choco cups” even better, so rustic and spontaneous! So I’ll just make a bunch and snack through the week, just hope they’ll last a week?! :)
Oh it looks amazing. Thank you for the tips and recipes. I think it would be better with peanut butter or a pure chocolate. You should also try to sprinkle it with candies.

Jessica – I’m having a blast looking back through your recipes after having such good results with your Snickerdoodle recipe. I just made these Caramel Cups tonight. I used a piping bag and narrow tip for the top layer of chocolate. I think I’d have made a big mess with the chocolate otherwise. Those look amazing! I like to make turtles in the molds and peanut butter cups in the molds so a quick tip for making them all turn out lovely to look at and give away is paint the sides of your cups with the chocolate, its time consuming alittle bit but after you cool it and make sure all the sides are covered there will be a perfect gift to give away :) ps but the oozing carmel one is my favorite :)
