Fresh Fruit Enchiladas.
This is a fruit enchilada. Say hello.
I had four other fun pictures to show you of this treat. Good stuff, like pretty tortilla rounds with colorful fruit in the middle, rolled enchiladas with cinnamon-vanilla sauce slowly blanketing the top and one too many pictures of a lone raspberry because I though it’d make me look cool.
Unless you are a weirdo who photographs food on the same white dish and attempts to strategically place things in the background that would rarely appear at real-life mealtime, you aren’t familiar with taking 43 photos of something only for 39 of them to end up… blurry. Like so blurry that your eyes hurt.
Someone needs a little more patience. And someone needs to double check their work. What is this… fourth grade? I always got yelled at for not double checking my work, but back then it’s not like I had a plate of puffy pancakes dribbled with peanut butter staring me in the face. Obviously I learned nothing. How about YOU try double checking your work before handing it in… errr, eating it.
I really don’t remember anything that annoying happening in 1992 when all I cared about was the banana clip in my hair and the oversized t-shirt tied into a knot on my left hip. With my biggest predicament being who I’d watch Snick with on Saturday night (umm… Are You Afraid of the Dark was SCARY!), life was… simple.
Wahhh! I want it back. I’m totally that annoying person who whines about how it stinks to grow old. Every time I catch myself complaining about advancing in age, I just think about how with each passing day my cast iron skillet is becoming more deliciously seasoned. That has nothing to do with anything (especially these enchiladas) but it makes me feel better than reminiscing of the summers where I did nothing but read, swim and drink huggies all day. Someone… please… tell me you know what I mean when I say huggie. I liked red ones.
Anywho. That distracting stroll off the beaten path lead us right back here… fruit for dessert! Not usually my thang, but I can swing it occasionally. Especially when it looks like this. I may balk at the bowl of strawberries you hand me after dinner but place these in front of me and I’m a happy camper. Really though… I want to be a happy camper. Literally. Can someone host a How Sweet summer camp? We can discuss Sweet Valley High, catch lightening bugs in mason jars and have cupcake-in-the-face contests. I’ll bring the margaritas.
Betcha that wasn’t happening in 1992. Maybe being a grown isn’t that bad after all?
Fresh Fruit Enchiladas
Ingredients
- 6 to rtillas [I used 4-inch ones]
- fresh fruit of your choice, chopped, to amount to about 1-2 cups, depending on tortilla size: I used peaches, strawberries, blueberries, raspberries and cherries.
- 2 cups milk [I used vanilla almond milk for more vanilla flavor]
- 1 tablespoon vanilla extract
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 teaspoon cinnamon
- 2 tablespoons sugar, + more/less depending on taste
Instructions
- Preheat oven to 350 degrees F.
- Begin by preparing the cinnamon-vanilla sauce: in a saucepan melt butter over medium heat. Whisk in flour to create a roux just as you would with a béchamel/cheese sauce, then add in milk, whisking continuously. Add in vanilla, cinnamon and sugar while stirring. Let the mixture come to a light boil (even just bubbles on the edges are fine) and continue to stir while mixture thickens – about 4-5 minutes. Turn down to low and stir. You want it to lightly coat the back of a spoon, but not be too thick. You can also taste test here and see if you’d like to add any additional cinnamon, sugar or flavoring.
- Place about 2 tablespoons (if you’re using small tortillas) or 1/3 cup (if you’re using large tortillas) chopped fruit in the center of the tortilla and roll. Spray a baking dish with non-stick spray, ladle a 1/2 cup of your vanilla sauce on the bottom of the dish, then lay your enchiladas seam-side down. When all are rolled cover with more vanilla sauce – the amount it up to you, but I suggest keeping a bit on hand to add on top when they come out of the oven. Bake for 15-18 minutes, or until fruit in the middle begins to burst and soften. Serve immediately with extra sauce for the top.

you can totally come to phoenix and we’ll talk about all the joys of the 90s. though i didn’t have cable, so i didn’t get to watch nickelodeon, but yeah… sweet valley high love. :)
i am SO jealous! my mom NEVER bought huggies… i only had them at my friends houses, but i LOVED them! i also love freezer pops and bought some last week! my roommate and i have been devouring them like crazy! the grape ones are my absolute favorite… yep, i was the weird kid who liked the grape flavored things. even (or maybe especially) chewable tylenol. don’t judge! :)
We never got to drink them either! Only on special occasions.

I loved huggies! One of my childhood neighbors used to give them out for halloween! My favorite was the green one — totally overconcentrated lemon lime flavor! Did you know Francine Pascal just wrote a new Sweet Valley High book, “Sweet Valley Confidential” about the characters at age 30? I read it earlier this summer and devoured it in like 3 days. I miss those girls… them and the Babysitters Club. PS – If there is ever a How Sweet summer camp, I’m totally in :)

P.S. I couldn’t watch Are You Afraid of the Dark. I’d have trouble sleeping! Do you remember Tales of The Crypt Keeper? My parents used to watch it and when it was on their TV in the bedroom I’d run and hide. Ohmygod it was horrible!
Was that on HBO?? I know I used to see a Tales of the Crypt.. something creepy on HBO that scared the crap out of me.
tales from the crypt was on HBO I believe…used to watch it all the time. it was more creepy than scary but I watched it all the time so I could tell myself I was brave and could handle scary things when in reality I am still a total pansy and hate anything horroe related.
Amazing idea! Can’t wait to try it. I don’t like making crepes, because they never turn out well for me. Perfect substitute. The sauce sounds fab!

It’s old but I have a close family friend who was in the private restaurant business for over 30 years and she taught me how to make fail proof crepes. Before these, they NEVER turned out for me! But honestly, the only thing I like to stuff crepe with is ice cream. :)

i don’t like grape flavored anything, but when i was pregnant with my second daughter, one day, i had to have something artificially grape flavored. HAD to have it. i had a grape jolly rancher in my purse (because my oldest daughter doesn’t like grape either) and it was just the thing! that was the only time i craved that weirdness. tuna salad made from canned tuna was the other thing i craved the whole time. yech. i hate it, but i had to have it!!
Your musings on 1992 really brought back great memories. Red huggies were my favorite too and occasionally the hubby and I will pick some up and pack a picnic. (Note to self: Overdue!) And yes, Are You Afraid of the Dark WAS scary. I love to go on IMDB.com now and look at some of the people who are stars that guest starred on it like Ryan Gosling, Neve Campbell, Hayden Christensen and others!

I’m trying to work, I have so much work to do and all I can think about are these darn fruit enchiladas!! Sitting 10 feet from my kitchen…you should be very thankful I don’t have the ingredients right now or I would be in there cooking and not working. As punishment for seriously distracting my ADD brain I should make you come cook some for me. ☺
Grape is my favorite kind of freezer pop!! We would have been very best friends in 1992 with our banana clips and oversized t-shirts tied in a knot and freezer pop consumption. Also, I like the looks of these fruit enchiladas 100x better than a real enchilada.
okay. so i was reading an article yesterday about age, and one of the contributors made the comment that she looks at age in percent of awesomeness. in other words, my achy knees and bad arches are 24% awesome. and they are only getting more and more awesome as the days go on. its like filling up your awesome bar on a video game!!!!! lame, i know. its how i roll.
I loved huggies! Whenever I think about them all I can remember is kids bringing them to school on their birthdays to share with the class. Cupcakes and huggies were soooo good! Btw teen nick is playing a ton of shows from the 90s at midnight! So excited. I really missed those shows. And also love your blog and crazy awesome ideas :).

Including: Are you afraid of the Dark?, Salute Your Shorts, Doug, Clarissa Explains it all, and The Secret Life of Alex Mack. Can life get any better? Letter C, Orange Huggies and pink Freezies are my fav. And, lastly I’ll bring the slap bracelets. ;-)

Sweet Valley High was also one of my favorite books series’ when I was a younger person. I devoured them, and swore up and down that I would marry a man like Todd.
Sweet Valley books are probably the reason I am obsessed with driving a convertible Jeep and want to have a pair of twin daughters just so they can be as close as Jessica and Elizabeth.
Seriously, let’s start the adult How Sweet Summer Camp, it’ll be a girls’ weekend at the beach or something, it’ll be awesome!

My first thought when I saw these was: BACON! You could add bacon in the middle, and then instead of tortillas totally use pancakes and call it a healthy breakfast coz you’re eating fruit! Mmm bacon…I might have to go make these now.
These look really good! I think your camp should be themed after Salute Your Shorts. I totally agree that Are You Afraid of the Dark was scary. I used to watch it in the dark in my parents room and then run through the house back to my room. Ahhh, memories!
Every camping trip included a small bag of sand to throw on the fire in honor of Are You Afraid of the Dark..and YES it was scary! 1992 was a great year..although my popsicle of choice then was an orange Flintstones push up pop
PLEASE let me come to your How Sweet Summer Camp- actually , come to think of it we can just have it at my house- San Diego, California Summer 2012?? I will provide the venue, and some side-tie matching t-shirts. You bring the fruit-chiladas, and everyone else can pitch in with appropriate high-fructose deliciousness in the form of push-pops, huggies, and fruit stripe gum {whatever happened to that?!?}. Only problem is if we WATCH ‘Are you Afraid of the Dark?’ before camping out in the backyard….hmmmm…guess we’ll cross that bridge when we come to it!
