BLT Chopped Salad with Corn, Feta + Avocado. (Video!)
The times when I’m stoked about a BLT chopped salad are few and far between.
This is one of them!
Can I say stoked? I’ve probably used the word thrice in my life, the third being above. I’m trying it out for size. BLT chopped salad surely makes me stoked.
This salad… ugh. So good. I’ve rambled about my love for chopped salads for years on this little internet page. I don’t know what it is. The crunch of vegetables turns me off so maybe it’s just that everything is smaller and tiny and can be picked up in one spoon?
I think what it really is though.. is that I can use tortilla chips to eat this salad. Now THAT is where it’s at. I’m so into it.
The salad has so many of my favorite flavors going on – bacon, feta, avocado, corn – that I kept the dressing simple: just some olive oil and lime juice. Lots of salt and pepper too, but other than that, just pure flavor. Even a little arugula mixed in with my beloved butter lettuce for something extra.
On top of needing the majority of my salads in chopped form, I sure as heck need as much texture (like, non-vegetable texture) that I can get. Enter bacon. And corn. And if you’re feeling frisky… maybe crumble some of those tortilla chips on top.
Uh huh. Do it.
Watch the video of how I make this BLT chopped salad:
BLT Chopped Salad with Corn, Feta + Avocado
- 2 cups butter lettuce, chopped
- 2 cups fresh arugula, chopped
- 1 pint grape tomatoes, quartered
- 4 slices thick-cut bacon, fried and crumbled
- 1 cup sweet corn
- 1 avocado, chopped
- 4 ounces feta, crumbled
- 1 1/2 tablespoons olive oil
- 1 lime, juiced
- 1/4 tablespoons salt
- 1/4 tablespoons pepper
- As a note, to chop my lettuce I like to lay it out on a big cutting board and just continuously run my knife through it (in all different directions) until it’s chopped as much as I like.
- In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado. Add in salt, pepper, olive oil and lime juice then toss well to coat. Fold in bacon and feta then divide evenly amount 2 plates. Serve!

I love the texture – all the corn and tomatoes and avo. And a simple olive oil and lime dressing. Perfect!
This looks so tasty. I would probably use turkey bacon to reduce the fat. Also did you know you listed salt twice? It’s okay I figured you meant pepper. Thank you for sharing. Salad is perfect on hot days! So refreshing!!
oops thanks – fixed it!
Love my job, since I’ve been bringing in $5600… I sit at home, music playing while I work in front of my new iMac that I got now that I’m making it online.(Click Home information)
I’ve said it before….I’ll say it again. You make THE BEST salads!
Oh I love salads and this just looks fabulous! I have to do salad chopped style! I do love chopped salads but have never made at home!
Can I have this for breakfast??
I wouldn’t use the bacon but the rest of the salad looks so delicious!
Ohhhh, I want this for lunch today! Such a beautiful salad!! Yum!!
Ah really, you make the best salads! I want this with a big side of tortilla chips. I like that idea!
Best way to get your veggies!
I’m pretty darn stoked about this. And I think that’s the 2nd time I’ve ever said (typed?) that word. ;) I now want salad for breakfast. And for that, I love ya!
I too am obsessed with chopped salads. I had never really tried one until I met my husband who loves a good chopped salad.
This one looks zoo yummy. I might just have to make it for lunch.
Thanks for the inspiration

This salad is is the only way to eat a salad. I could used some tortilla chips in this for crunch but beside that it perfect!
This sounds amazing! I am traveling at the moment but am pretty sure I have every ingredient I need at home to make this for dins tonight. Thanks Jess!
This looks delicious! I love the simplicity of the ingredients!
I’m such a big fan of these “kind of healthy, not really” salads. The more bacon the better!
Looks like I need a bug plate of this in my life ASAP.
LOVE chopped salads!
Looks great…fresh and tasty!
OH MY GOSH. I saw this and KNEW I had to comment. This looks so delicious! I’m definitely going to be making this this upcoming weekend. Thanks!
I too am a chopped salad kind of girl! There is just something about getting a little bit of all the flavors in every bite that makes chopped salads > regular salads. I cannot wait to make this salad – hitting the grocery store after school today!
I think you just took the salad of my dreams and made it a reality! This looks amazing, Jessica!
Bacon totally cancels out the horribleness of Monday.
This looks AMAZING!
Now I’m hungry! I will definitely be trying this with a vegetarian bacon substitute. Thanks!
This is totally one of my favorite kinds of salads… delish!
I say stoked all the time, and then after I say it I wonder if maybe I’m too old to use it? Oh well…either way, this salad is what’s for dinner. YES.
Welp, this salad looks like perfection but being that I can’t consume anything without goat cheese these days, I think I’d replace the feta with goat cheese and then it’s just heaven. Creamy, salty, crunchy, bacon-y heaven.
Kind of all my favorite things in the world in one salad. YUM!
This looks so good! Encourages me to eat (sorta) healthy again, a salad always needs bacon!
Oh this looks so summery. Keep on coming with the salad recipes. I practically live off of them when it’s so hot.

Chopped salad is definitely my preference. So is butter lettuce. Thanks for the new recipe!
I am so with you on not loving salads! I want to be someone who likes salads….but…I’m not there yet. Only occasionally do I like and want a salad, and it’s even more rare that I love it. I bet I would totally love this salad, especially because it enables my addiction to crunchy tortilla chips!
yes please and thank you. :)
Wow, this salad does look amazing! I love the ida of crispy bacon in a chopped salad. I’m pretty sure all the chopped salads I’ve ever had have been 100% vegetable–but this version could make a full meal! Yay!
I’ve never been a bit salad fan, but this one looks fabulous… Can’t wait to give it a try!
And that’s dinner.
Ummm I’d be totally stoked about this salad too. Wow!!!!
For someone who detests salads, you sure do make some amazing ones. I LOVE salad, mainly because it’s an excuse to call tons of little things piled on top of each other “healthy.” ;D
This salad looks awesome! It’s so colorful and looks really filling. It would be perfect for lunch!
totally in love with this salad
This looks like the perfect salad. Love the yummy bits of bacon, avocado and feta.
Where did you find that beautiful wood backdrop? It’s just perfect.
bed, bath and beyond! it’s just a cutting board. :)
Love everything about this salad. Be sure to give me a buzz when/if you land in Denver. Just recently discovered ‘Fourleaf Chopped Salads’ – you pick ingredients and they chop them all together with dressing. Sounds perfect and it is!
This looks fantastic, but did you boil an ear of corn just for this? Or did you use frozen? Help! I wanna make this!
I’m stoked too, excellent word choice. This salad looks awesome, a great summer dinner!
I’m stoked about this salad with you! I love a good chopped salad.

This reminds me of a chopped salad they have at Cheesecake Factory. Quite a salad. Love every single topping. Really it is the only way to have salad.
This looks like such a delicious salad!
