Crockpot Smoky Brisket Tacos with Shredded Cabbage + Sweet Corn.
Could I be any more predictable?
I can’t help it.
I love tacos.
I love pizza.
I love taco pizza.
I have to make a version of one or the other every week and oh, you know – pizza was yesterday. You betcha.
So today, it’s taco Thursday.
I have been trying to get out of my comfort zone with beef. If you haven’t noticed, I’ve only made a billion (or like five) recipes with flank steak because besides that, filet is the only other beef I feel totally comfortable preparing. Read: I know that it will turn out great. I’m a big scaredy cat when it comes to other cuts of beef. Read: I’m a giant baby.
My grandma use to make a lot of brisket – it was one of her specialties. Needless to say, I haven’t had it since she passed away in 2009, other than a taco here or there. And I figured that it was pretty hard to screw up tacos (hello, cheese and tortillas), so I decided to get out of my comfort zone while staying in my comfort zone. Does that still count?
Plus, the crockpot makes everything taste good. It’s like a magic machine for meat. Sort of. Just kidding. Not really though. I’m lazy.
These aren’t too different than my favorite short rib tacos but… they are still different. For starters, it’s clearly a different cut of beef, but these babies are topped with corn and red cabbage. If you told me ten years ago that I’d be eating raw cabbage, I’d laugh hysterically right in your face.
Tacos do that to me.
Now, cabbage is one of my favorite taco toppings since it’s so crunchy and fresh. Add a little corn… add a little cheese.. boom. Dinner is done.
Crockpot Brisket Tacos
Ingredients
- 4 pounds beef brisket
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon chili powder
- 8 ounces of your favorite beer
- 1/2 red cabbage, sliced until shredded
- 2 limes, juiced + extra for serving
- 1 teaspoon olive oil
- 2 ears sweet corn, cut from the cob (cooked if you desire)
- 4 ounces queso fresco cheese, crumbled
- 8 to 10 flour tortillas
Instructions
- Season the brisket with the salt, pepper, paprika, cumin, onion and chili powder. Place it in the crockpot and add the beer, then cook on low for 8 hours. When finished, if the brisket is still in 1 piece, remove it and place it on a cutting board. Use a sharp knife and a fork to shred the brisket (you can also do this in the crockpot) and then place it back in the crockpot for another 30 minutes. It should combine with the juices and soak them toss. You may need to toss the beef a few times in the crockpot.
- When you’re ready to serve the tacos, add the cabbage to a bowl and toss it with the lime juice, olive oil and a pinch of salt and pepper. Assemble the tacos with the beef, the cabbage, a few spoonfuls of the corn and the crumbled cheese.

Love Beef Brisket and I love cooking in the crockpot oh and like you I love tacos! What could be a more perfect dish? I swear I could eat tacos every night!!! This is a fabulous meal!! Now I must have tacos for dinner, oh or maybe lunch, hmmm breakfast?
I can never have enough pizza and taco recipes! This brisket taco looks amazing, and I love that the brisket is cooked in a slow cooker!
I have not cooked with brisket before as I normally use(for slow cookers) beef cheeks or ox tail.I guess I like the weird cuts. The best thing baout this is that there is always meat picking sin the fridge AKA chessy beef melts at 1am. Great combo of spice, perfectly balanced too.
I love everything about this. Brisket, corn, cheese, beer! What could anyone else want?!

Our very first Thanksgiving as married people, we lived in an old duplex with the tiniest old vintage oven…cutest oven ever. Anyway, there was no way a turkey would fit in that oven…and since my dad always made smoked turkey, an oven turkey wasn’t going to cut it. I made brisket in a crockpot!!! And I remember it being so good! Can’t wait to try these!

OMG, yes. I’m from Texas, and by law (pretty much) we worship brisket. I’m partial to my grandfather’s but he passed away many years ago, so there isn’t nearly as much brisket in my life these days. But, this actually sounds very close to the briskets he used to make. I think I’ll give it a try! And what’s easier than the crock? Weekend tacos??? Yes please!

These look beautiful! I am ALL for throwing stuff in a crock pot and walking away for a few hours. Plus, it always makes the house smell like heaven and drives my dog bonkers, while he tries to figure out what the heck is going on, which makes me laugh because I’m clearly evil.

These sound delicious! I’m a beef scaredy-cat too sometimes, true story – I just made brisket for the first time last week. I used Smitten Kitchen’s crockpot recipe and it was a-mazing! If you have the time, after the brisket is cooked in the crockpot, transfer it to the fridge overnight, then scrape off the fat and toss it in the oven – the flavors really come out then!

These look so delicious, and easy! My daughter and SIL are coming for dinner. This is going to be perfect. I have a couple of questions though – my brisket is in two 2 lbs. pieces so they are stacked on top of each other in the crockpot. Will that alter the cooking time, should I put it up on high, move them around, during the day? And should the fat side be up or down? I am new to brisket – thanks for your help!

gorgeous colors! brisket is one of my favorite cuts of meat..thats how I feel about the crockpot, it really is some kind of magic machine for perfect meat. Im a super scaredy cat about trying out different types of meat too..not sure why..worst that can happen it sucks, and I start again! Hopefully soon I jump the ledge, because the tacos sound awesome!
