White Cheddar Beer Bread.
This is going to be a story in where I tell you how I ate all the crunchy topping off of my new favorite bread.
And I guess it’s not really a story. Because I just… ate it.
I can’t help it. The top of beer bread gets me every time – it’s so textured and buttery. It’s crumbly but in a good way.
The whole situation is really comparable to eating a muffin or a fruit crisp or cobbler or potato-chip topped casserole, because I only want to eat the tops of those things too. Or like the carton of cookie dough ice cream: just eat the chunks. I’m convinced cookie dough ice cream cartons have been disappointing people since 1994. There are about four chunks of cookie dough and that’s IT. It’s garbage I tell you. Garbage.
This bread though… not garbage. Sure, the topping may be my favorite part but that doesn’t mean that the rest of the bread is worthless. It’s a bit fluffy but still dense, if that makes any sense. It’s awesome when it’s toasted, but I can also handle it untoasted and slathered with some sort of jam or peanut butter. Which is unheard of given my fascination with eating things on toast. Seriously. Chapter in my cookbook dedicated to toast snacks. It’s happening.
In this case, I made my own little apple butter, well… butter. Yes. Apple butter butter. Instead of just using apple butter, I seriously trashed this one up and combined apple butter and regular unsalted butter with a pinch of salt and cinnamon. It was so dreamy. Ridiculous and dreamy. It’s like my new favorite thing.
Even though I just told you the bread was my new favorite. Ugh. I fail at life.
This is also the bread that I dunked in my soup yesterday.
Or should I say that this is the bread that I ate with droplets of soup, considering I had a little soup with my bread.
I don’t know. All I want to do is talk and tweet about last night’s Nashville episode, so yeah. I’m just gonna go.
White Cheddar Beer Bread
Ingredients
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 6 ounces white cheddar cheese, freshly grated
- 12 ounces of your favorite beer
- 6 tablespoons unsalted butter, melted
apple compound butter
- 4 tablespoons unsalted butter, softened
- 2 tablespoons apple butter
- 1/8 teaspoon cinnamon
- 1/8 teaspoon salt
Instructions
- Preheat the oven to 375 degrees F. Spray a 9×5 loaf pan with nonstick spray.
- Over a large bowl, sift together the all-purpose and whole wheat flours. Stir in the baking powder and the salt. Stir in the grated white cheddar. Pour in the beer and stir until a batter forms. It will be thick. Spoon the batter in the greased loaf pan. Pour the melted butter over top. Bake for 50 to 55 minutes, or until the bread is golden brown and set in the middle. Remove the pan from the oven and let cool for about 30 minutes.
apple compound butter
- Before serving, make the apple compound butter but whisking together the apple butter, unsalted butter, cinnamon and salt. Serve it with the bread!

I think you need to make some beer bread muffin tops (bread tops?) since it’s the best part.
I say I though I was the only one who did this. I normally keep crumble toppings on hand for quick desserts and meals but most often I bake then eat it as it is! So if you cut up stale waffles, cookies or pancakes, they make for fabulous croutons ( or snacks).

And eating the crunchy topping off your bread? Yesterday I posted a bread with a crunchy topping and right after the photoshoot was done, I ate the topping off like 6 pieces. Just the tops. So I gave my family the bald bread. Their problem, not mine :)

Mmm i’m obsessed with soups right now so this is a must on the side. Last week it was turkey chili with whole wheat pastry flour/coconut oil cornbread (sooooo good) and ham potato soup from allrecipes.com with cheddar tailgate bread.. and this week it was chicken tortilla soup sans tortillas with cheese quesadillas and ground turkey cheeseburger soup with a loaf of pretzel bread.. oh em gee i cant get enough. So next week must involve the butternut squash soup and cheddar beer bread. MUST.
Also i agree on the cookie dough thing. Someone needs to invent a gallon of cookie dough with a vanilla ice cream swirl. I think YES.

I love to take a spoon and eat the top of the ice cream as soon as I get it home from the grocery store. It’s the perfect temperature, soft but still cold. I would tell my kids that “I can’t believe it! Someone tried this ice cream before I bought it!” It used to work and they would always look at people in the ice cream aisle suspiciously. They don’t believe me anymore…sigh. The good old days!

I do the same thing with ice cream. I always take mine out of the freezer and let it sit for 5 minutes or so – so it gets the creamy/melty consistency on top and that is what I eat. :)

I haven’t made beer bread in so long and I really do miss it. Gluten free beer is so coveted here by Tony that I’ve been threatened by the thought of using it to make bread. I’m thinking I need to get some sparkling apple cider to make my bread. That apple compound butter sounds perfect too! I love fall…all things apple!

Laughed out loud at the ice cream comment. I get so pissed off whenever I get cookie dough IC–it’s probably the cheapest component to make in the entire thing and they are skimpy EVERY.TIME. Ugh.

I vote yes for the chapter on toast. This is an amaaaazing recipe! Beer in anything is always a plus. I have a brunch to go to on Sunday and I’m definitely going to be trying this.

Omg YES to the cookie dough comment! Why are the chunks of cookie dough the size of microscopic specks in most brands? Ultimate suck. BUT! Since living in Houston, I’ve discovered Blue Bell’s Dessert Trio flavor, which has cookie dough, brownie chunks AND chocolate-covered cake. It’s. Amazing. And they are sizeable chunks. And there’s a lot of them. And my boyfriend likes eating the ice cream left behind after I eat all the chunks. Win.

I had no idea it was beer bread season but I just made a pumpkin beer bread (as in using pumpkin beer!) and like your apple butter, made pumpkin butter butter?? That crisply buttery top is the best. I’ve been tempted to slice it all off for me and turn the bread over and present that as normal.Not kidding.

Can you marry carbs? Cuz I would. Is it asking too much? I can marry a dude now in most (of the cool) states, and people in like, Iowa can marry their horse if they want to, so I SHOULD be able to marry carbs, yeah? This bread will console me as I try and recover from last night’s Nashville. And apparently I missed the season finale? I thought I had season it and then BAM in the opening credits I realized, nope sure didn’t! Well I got caught right back up and then fel to pieces all over again. I am going to fall into pieces of this bread and try and recover…someone please check on me and make sure I made it through the turmoil. :)
