BBQ Salmon and Crispy Chickpea Salads with Greek Yogurt Ranch Drizzle.
I need a break from Thanksgiving. Already!
That’s what happens when you put out Halloween decor in July.
P.S. I am an old lady.
It never fails that come the holiday season, I seriously have no clue what to eat for dinner. Never.ever.fails. It’s like my brain can’t get past all of the cookies and appetizers and cocktails and stuffing and twice baked potatoes. It’s like my mind is totally wiped clean of all normal dinner ideas and I want to eat cheese and crackers with a side of wine.
So this is what I’m eating this week. It’s my wineless answer.
Now it’s no secret that I love a good salmon salad. Next to taco salads, they are my go-to way of making myself get those veggies. Which we all know really just means a whole boatload of things that aren’t vegetables on a bed of lettuce. Buuuuuut… oh well. Roasted chickpeas are also a staple on my salads – it’s almost impossible for me to consume one without.
My salads aren’t high maintenance or anything. I have no idea where they get it.
Oh and even though this seems a bit summery, it’s quite filling and fits the season. In a weird way, it’s almost comforting. It’s like salad comfort food, if that can be a thing. There is so much texture and CRUNCH. Pretty much live for it.
Just to complicate things, I threw together a quick ranch drizzle with greek yogurt. I swear that a little goes a long way and it makes the salad. Along with the BBQ sauce drenched salmon, crunchy chickpeas, crushed tortilla chips, corn and scallions, this flavor combo blew my mind.
This means that I will eat it approximately 13 days in a row, then get so sick of it that I won’t be able to even think of such a salad for at least a month.
And no, I’ll never learn.
BBQ Salmon and Crispy Chickpea Salads
Ingredients
- 1 1/2 cups roasted chickpeas
- 1 pound salmon filet
- 2 teaspoons brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 1/4 cup BBQ sauce
- 8 cups spring greens
- 4 green onions, sliced
- 1/2 cup corn
- 1/4 cup torn fresh cilantro
- 1 tablespoon snipped chives
- 1 handful of tortilla chips, crushed

- 3 tablespoons greek yogurt
- 1 tablespoon mayonnaise
- 1 teaspoon freshly chopped parsley
- 1 teaspoon freshly chopped dill
- 1 garlic clove, minced
- 1/2 teaspoon worcestershire sauce
- 1/4 teaspoon white vinegar
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- To prep, roast the chickpeas first. You can do this a few hours ahead of time if desired.
- In a small bowl, mix together the sugar, paprika, onion powder, garlic powder, salt and pepper. Season the salmon with the mixture, covering both sides. (if you get salmon with skin on, I use the spice rub just on the top.) Heat a large skillet over medium heat and add the olive oil. Add the salmon and cook on one side for 2 minutes, then flip and cook until the fish is flaky and opaque, about 5 minutes. Brush the BBQ sauce all over the salmon.
- To assemble the salads, combine the lettuce, corn and green onions in a bowl. Add the salmon and chickpeas on top, then drizzle with the ranch. Top it off with the crushed chips, chives and cilantro. Serve!

- Combine all ingredients in a large bowl and whisk until combined. Drizzle overtop of salads!

It’s the same here at Christmas, always end up craving something zesty. I usually put croutons or nuts in salads for extra texture and crunch so will definitely be trying the chickpeas as an alternative.
Oh my gosh, this has my name written all over it! If I only had one meal left to eat, salmon would be included for sure. I wasn’t planning to hit the grocery store after work today but you’ve got me salivating and it’s not even 8am yet!
Jessica, only you could make salads sound and look so appetizing. Chickpeas aren’t really my thing, but they look so appetizing with the salmon. I need to give this a shot!

So crazy but works so well. I love the tangy spices you used. I have soft spot for light and tangy chips but I think these chickpea will hit the spot. Also they are chickpeas, so they are good for you right in large amounts?
Yeah! I’m on board with salmon salad. And I might throw some toasted bread cubes in there to soak up all the BBQuey, ranchy goodness. Now I have never roasted chickpeas, so I’m intrigued…
I have to say…I’m a teensy bit relieved to see a non-Thanksgiving day dinner! I feel like my brain can’t get passed turkey, cranberries, pumpkin, sweet potato, etc and I’m struggling to think of any non-holiday related foods too! :/

So did I miss this…? Do you simply dress the salmon with the BBQ sauce? I didn’t see it in the recipe except on the ingredient list. Did you heat it up first. Maybe it’s there. Maybe I’m just blind with hunger after reading this post!

Haha! I had bbq salmon salad for like 2 weeks in a row a few months ago…and just got out the salmon for my lunch today too bc I was planning on going through the bbq salmon cycle again! Just SO good!

Why don’t I just eat ALL of the chickpeas as a meal? Only chickpeas. I’d be ok with that.
I love roasted chickpeas to the point I pretty much burn my mouth because I shovel them in by the handful straight off the hot baking tray. I can’t even wait til they cool down. LOL. And I bet the ranch sauce is the perfect cooling dressing. What a great flavor/texture/temperature profile going on in this salad!

I’m the person who usually skips the herbs in a recipe like this and I’m here to say you shouldn’t! Made this for dinner tonight and the herbs really added a nice depth of flavor. Great post, salads are the best light weight food and are healthy and tasty at the same especially which consist of the olives. Everyone should have salad for better control over nutrients
This salad is a real winner! I have made it many times. The smoked paparika is the star of the show. Such an interesting pronounced flavor that complements the strong taste of salmon. This salad is even great for dinner when company comes over, since it is something really special and different. I highly recommend it!
