Autumn Avocado Toast.
This is what you eat when you want to fill a red solo cup full of champagne and toast to the perfect October afternoon.
It’s the next best thing!
I mean, kinda. If you have a bun in the oven.
Ummmm let’s talk about my toast. First, this is a serious whole wheat sourdough (how do they do that?!) situation that I got from Whole Foods. Second, my toast is TOASTED because if you recall I prefer to eat actual toast.
Not warm bread.
Constant fight in this house. I make toast and turn the toaster to the highest setting. I don’t turn it back down because toast should be darkly golden and toasted! Eddie makes toast and ends up burning it. He prefers warm bread and gets mad.
If a marriage could end over toast…
I’m clearly super into autumn things right now – like these autumn acai bowls from last week – and it’s obviously AUTUMN toast and not boring old FALL toast because it should sound prettier. However, it’s basically my way of throwing all sorts of in-season stuff on top of food and making it sound fancy as heck.
So it’s sort of a cop out – I mean, it’s not like it’s hard to mash avocado on toast. But the flavors are so freaking delicious that I can’t even stand it. And this little snack (meal?) here keeps you FULL. The avocado, the toasted walnuts, the cheese… ugh. Just so darn good and filling. It’s the best breakfast or second breakfast or lunch or second lunch. It’s almost like a salad on toast. Right?
I’m really into eating right now. Like all day. If you couldn’t tell.
Autumn Avocado Toast
Ingredients
- 1/4 cup walnuts
- 1/8 teaspoon cinnamon
- 2 avocados, smashed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices bread, toasted
- 1 pear, thinly sliced
- 2 tablespoons honey, drizzled
- 2 tablespoons crumbled gorgonzola cheese
Instructions
- Add the walnuts and cinnamon to a small saucepan over medium-low heat and toast until golden and fragrant, about 2 to 3 minutes. Make sure to stir and shake the pan so the nuts don’t burn – you want them golden in color and nutty-smelling. You can break them apart a bit before or after toasting to make it easier to sprinkle them on top.
- Smash the avocado in a bowl with the salt and pepper. Spread it on the toast and layer the pear slices and gorgonzola on top of the avocado, followed by the cinnamon walnuts. Drizzle the entire thing generously with honey. EAT!

These are my favorite combo to eat with or without toast. Pretty, light and textural!
I finally get it….you look in your fridge,cupboards and pantry and you see what you can make with what you have. No meal planning only what your stomach is telling you eat. This where the mixing of foods not supposed to go together according to the classic recipes , actually work .Forget that something salty goes with sweet,textures and crunch, or downright French with Italian …………..I get it.

We have a total toast situation in my house too – husband : warm … not even a bit of crunch … moi: the toastier the better. What’s the point of popping toast in a toaster if it’s not going to at least get a little crunchy?!?!?

My stomach is growling. This looks WONDERFUL! I have fresh pears–straight from the farmer’s market–and delectable bread from the bakery…now to forage for the rest of the ingredients. I can just picture tonight’s sublime ending to a productive day with these lovely toasts on my plate, a glass of chardonnay in my favorite bulbous stemware and “Peaky Blinders” on Netflix. Thank you for the inspiration. :)
This looks sooooo good!! My boyfriend and I are the same way with the toaster. If the bread is even slightly browned, it’s too done for him…I don’t get it!

And yes, toast should be dark dark dark. I learned that from my dad who has broken several toasters from keeping them on the highest setting. Toast should be dark and have black flecks and should glisten when you cover it in real butter. I’m dying over here now.

Looks amazing! I’m going to sub goat cheese for the gorgonzola though because I’m just not a fan of gorgonzola. I think this would also be awesome with dried figs!!
