Bourbon Soaked Cherry Oatmeal Chocolate Chip Cookies.

Yes these are a thing.
AND! You get a serving of fruit. Best day ever?
And they also need to be a thing in your Christmas house.
My friend Katy (who is a part of the howsweeteats team!) gave me these cookies the first time we met, and I was skeptical. Fruit? Oatmeal? Could I do this?
With one bite… holy cow. Some of the best cookies ever. Dead serious.
So here’s the deal: you soak dried cherries in bourbon. Let them get all plump and juicy. Juicy with bourbon!
Yes, I supposed you could use another dried fruit, something like… raisins (oh the HORROR) or maybe cranberries. Or figs? Ooooh I like that.
The thing is that I don’t love dried fruit in my cookies. I don’t really want much fruit in my cookies at all and want all the trash. Trash like peanut butter, chocolate chunks, white chocolate, anything with the name chocolate, it should be in my cookies. You hear me, right?
So this is a change, but it’s a VERY welcome one.
Plus, it’s almost like you’re eating a chocolate covered bourbon soaked cherry! Perfection. Because I had to add chocolate. I couldn’t NOT add chocolate.
The cookies are also SO chewy. If I’m going to have oatmeal cookies, I want them ridiculously chewy. These are those. This is us!
P.S. can we discuss how obsessed I am with these baking sheets?
I used milk chocolate chips, because my palate is as sophisticated as a five year old. I don’t LOVE dark chocolate.
But I love eating it and saying it’s a health food. So if you want to go the dark give-me-the-antioxidants route, do it. Health for everyone this Christmas.
Bourbon Soaked Cherry Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup dried tart cherries
- 1/3 cup bourbon
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup sweetened shredded coconut
- 1 cup unsalted butter at room temperature
- 1 cup packed light brown sugar
- 1/4 cup pure maple syrup
- 2 tablespoons molasses
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups old-fashioned rolled oats
- 1 cup milk chocolate chips
Instructions
- Place the cherries in a bowl and cover them with the bourbon. Microwave for 1 minute then let them sit and soak for at least 10 minutes – or even longer.
- Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
- In a bowl, stir together the flour, cinnamon, baking soda and salt. Add the coconut and stir it into the flour.
- In the bowl of your electric mixer fitted with a paddle attachment, beat the butter and sugar until fluffy, about 5 minutes. Add the maple syrup and molasses and mix to combine. Add the egg and vanilla and beat until well combined, scraping down sides of bowl as needed. With the mixer on low speed, add the flour mixture in two batches; mix until just combined. Add oats and cherries and remaining bourbon if you’d like, and mix until combined. Stir in the chocolate chips.
- Using a 2-inch ice cream scoop or scoop 3 tablespoons, drop the dough 2 inches apart onto a baking sheet. Bake until edges begin to turn golden brown, 15 to 17 minutes. Do not overbake even if the center looks a bit soft, they will set while cooling. Let cookies cool on the baking sheet until firm enough to remove to wire racks, about 2 minutes.
- Cookies can be kept in an airtight container for about 2 weeks. They also freeze well in a airtight bag for up to 3 months.

I’m normally not an oatmeal raisin cookie person, but swapping the raisins for booze-soaked cherries and adding chocolate chips has me all in! These would be perfect with a nice old fashioned!
Can the coconut be left out without changing much flavor? No one in my house is a fan. The other person in my house isn’t a fan of fruit at all, but I think I can change his mind with “bourbon soaked”.

Love this idea! And I like the idea of adding molasses and maple syrup. My favorite oatmeal raisin cookie recipe (I’ve used craisins, too, and always add chocolate chips!) has the raisins soak in 3 lightly whisked eggs, and they’re so plump and not hard or as chewy! But why not soak in bourbon instead?!

Thanks for this wonderful recipe, Jessica! The cookies are so delicious and the whole process was a joy–so many beautiful ingredients, smells, and flavors. I soaked my cherries for about an hour and they soaked up most of the bourbon (and I also added what was left) and there is hardly any bourbon flavor in the baked cookies (for those who are asking). I actually wish there were more :) But, I wouldn’t worry about serving these to kids, although for me personally the beauty of them is that they are a very chewy, grown up, complex cookie. So I don’t know that they would be favorites of my own kids, which is fine since I am freezing them to have with my milky cup of earl grey tea in the afternoons.
Oh, and I also added toasted walnuts and a few white chocolate chips to these and wouldn’t have it any other way. So many delicious tastes in each bite!

I had some leftover bourbon from the infuse-your-own bourbon – these cookies were so, so good. My husband and co-workers all agreed, best cookies they’ve had in years! I used dried cranberries as I didn’t have cherries, and dark chocolate chips instead of milk, but otherwise followed the recipe exactly (and, and no molasses, because it’s impossible to find in the UK). Perfect winter cookies! Don’t omit the coconut; it really adds something extra to them.
I agree the bourbon flavor isn’t particularly strong – next I might add a bit more – but I think you’d be safe serving them to kids (the alcohol will cook out). Definitely might be wasted on a child’s palette though!

So. Delicious. OMG!!! Just made these for “Santa”… new tradition in our home! Chewy, tarty, oats, bourbony… our perfection!
I truly do not enjoy baking, but could not resist a recipe with “bourbon soaked” anything in the title. Jessica, these cookies are ridiculous! The perfect “adult” oatmeal cookie. My husband and I are completely obsessed, and I’m so glad I only baked off half and flash froze the rest for another day. At 9 months pregnant (and 9 months deprived of drinking manhattans), I taste every bit of bourbon ;)
