Coconut Chai Power Coffee!
Or aka, the jolt that I am currently obsessed with.
So I never really got into the whole bulletproof coffee thing. Not because I wasn’t interested in it (though at first the thought of butter in my coffee was like whaaaaat), but mostly because I didn’t want to take the extra 45 seconds to prepare it. Huh!
BUT.
Coffee can have a weird effect on my so I rarely drink more than one cup, especially right now since I’m nursing Emilia. Even having one cup sometimes can leave me jittery, and that really happens if I don’t get to eat breakfast for a while. I never want to stop drinking it (ever, hello), but I decided to try this out to make it more “stable” or something. Supposedly it prevents the severe caffeine crash and I was alllll about that.
Also, can we take a minute and discuss the coffee revolution that has happened here on the blog over nearly ten years?! It feels like yesterday that I was writing posts about hating coffee, writing posts about wanting to love coffee and drinking coffee and now, it’s a THING!
So this coconut oil coffee has been my solution and I L-O-V-E love it. The crash isn’t happening like it used to. The jitters aren’t either! It makes me feel focused longer. Is that all in my head? MAYBE.
The only part that is a total bummer is dragging out the blender, pouring everything in and then having to clean the blender. Doing that at 7am isn’t always something I’m excited about. So! A lot of times I will make this in the afternoon. I might skip it in the morning and go for this later.
Because normally, afternoon coffee tends to make me feel like garbage if it’s a second cup. Noooo idea why. I can have the exact same cup that I had in the morning and for the rest of the night, I.feel.terrible. I’ve mentioned this before and I don’t know if it’s a mixture of the caffeine + the dairy + maybe any sugar if I’m using it. But it’s not good.
This, however! Doesn’t do that to me at all. Interesting. Coconut oil coffee just sounds weird though.
Here’s how it goes down!
I make a cup of coffee or a shot of espresso. I just use my Nespresso machine! Super easy and we all know that I don’t have a sophisticated palatte or anything.
That hot coffee goes straight into the blender with:
A spoonful of coconut cream. I get the cans at Trader Joes. Or I scoop out the cream from a refrigerated can of full-fat coconut milk.
A teaspoon of coconut oil.
And a few pinches of my favorite chai spice mix. (minus any black pepper because I’m a baby.)
Blend it up and pour it in your cup while it’s still hot!
I’m including the chai spice mix down below, but it obviously makes a lot. Make it once and then you’ll have it for awhile, you know?
Right now, I am INTO this. You guys know that I’m almost always an iced coffee person. I mean, it can be 21 degrees out and I will get iced coffee. Iced coffee forever! Mostly because it tastes like dessert. This is a fancy change of pace though and it’s tasting deeeelish. Bonus: makes me feel like magic.

Do you have an immersion blender? I’ve made coconut oil “lattes” with mine, and it froths up pretty well. I go slow at first so the coffee doesn’t go everywhere, but once it starts spinning it usually stays in the cup (I blend it in the plastic cup my blender came with) So excited to try this this weekend!!
i do have one but i’m in the minority – i hate my immersion blender! i feel like it always creates such a huge mess. just ignore me, haha.
Making this now! I had a sip and it’s amazing!
thanks jane!!
BRB gonna make this right now! I love this so much that I might make it part of my daily routine.
thanks abby! :)
stoooooop it now. i cannot wait to make this, i just pinned it and am 100% making this tomorrow morning. i can’t seem to get on board with bulletproof coffee but the coconut cream in here with the chai spices sounds DIVINE. thank you for sharing!
i hope you loved it!! xo
I’ve tried bulletproof coffee with butter and separately with coconut oil, and I get this crazy surge of energy for like two hours (followed by an interesting experience in the bathroom). Those effects might mellow out if I drink it consistently, but I never have. That said! This recipe looks great and like a good compromise!

bahahaha. that made me laugh.
Hey if your coffee is giving u the jitters do like I had to use decaf. I know your saying yuck but once u blend with what ever. I use one tsp coconut oil and one tsp butter seasonings really don’t mix up well i use pumpkin spice mix and heavy whipping cream. I’m going to try the heavy coconut milk sounds good. Anyway the Decaf works good. Been on keto for about 3 weeks lost 10 ones and I feel great started tali.g Amberen mostly for menopause and it’s giving me my energy back
thanks eileen!
I can’t wait to make this!! We aren’t home ergo no blender, but once I make it I’ll send you a huge virtual hug, oh, what the heck I’m sending you one now cuz I know I’ll love this!!. 🤗
thank you!! xo
I usually add butter, virgin coconut oil (because it has a stronger coconut taste) and heavy whipping cream with a dash of cinnamon. I never mess with a blender… I used too but like you, I got tired of cleaning it! True it’s not quite as frothy but it tastes exactly the same and so much easier to throw everything in that hot cup of coffee and give it a long brisk stir. No clean up and delish!
love that ivy!
I LOVE my bulletproof coffee! I’m afraid it’s gonna have to go if I want to lose this baby weight though :/ I’ll have to try this – much less fat but if it still has that magic, it might work!
I use a coffee frother from ikea. Amazon has them too. I’ll s not quite as good but SO much easier than a blender.
i have one of those frothers too!! it is great!
Congratulations on your new digs and thank you for sharing this lovely recipe!
thanks sabrina!
I’ve just recently heard about collagen peptides. Is it supposed to be good for your hair post partum, especially after breast-feeding? Ugh, my hair. Will never be the same. Or anything else on my body, ha! Btw for someone who currently doesn’t YET own an espresso machine this coffee looks heavenly. I LOVE the stuff, but I can’t seem to just drink coffee and cream and Starbucks multiples times a week with a baby… ya that isn’t really an option anymore lol! Could be, but bundling her up just for coffee is more of a hassle than it’s worth.
it is!! i don’t know if it really works because i feel like i’ve been either pregnant or breastfeeding all of the last 3 years and also taking prenatal vitamins. i love it for the protein boost though!
This is simply SPLENDID! I use my French press as a silent frother in the mornings. Just pump gently and you get a nice frothed cup of heaven! Thanks for sharing your delicious recipe!
awesome!! so glad you liked it!
woah, this sounds amazing! i’ve been looking for a way to switch up my morning coffee and i think this is it :)

Do you have to blend the coffee, or could I just stir it up with a spoon ? I usually drink my morning coffee in a travel mug on my way out the door, so the extra step may be a little inconvenient
