Pumpkin Protein Pancakes.
By accident.
Or, should I say, accidental pumpkin protein pancakes!
I am in love. In freaking love.
It was unexpected and almost unsuccessful, but I fell.in.love with these pumpkin protein pancakes.
No better way to lead us into fall, right?
I had no intention of making REAL pumpkin protein pancakes. But it happened and I don’t hate it.
First up!
We’ve been obsessed with collagen for years now. We like the Vital Proteins one and basically buy it in bulk from amazon. I only like the original – I don’t like any of the flavors or the creamer or anything. But I put it in coffee (because it melts right in) or a smoothie, sometimes Eddie does a smoothie – more often than not now, he literally shakes it into a room-temp bottle of water! Crazy.
I just loooove it though – for hair, skin, nail and joint support for sure. And it has protein in it too!
The deal with the pancakes? I’ve been experiencing with a blender pumpkin pancake forever. If you even knew how many fails went into this… oh just wait until December. TONS.
I started with that base of the old school protein pancake mix – the oats and the egg whites. You know?! Remember those!?
My reason being is because pumpkin has that amazing fluffiness on its own in baked goods. I’ve always found that it’s one of the things that can make even the healthiest of foods taste a little indulgent (if you like it, that is) and I was on a mission to create these pancakes that we could eat often. We like to do breakfast for dinner and the idea was constantly on my brain. Because who wants to eat seriously fluffy, chocolatey pancakes right before bed?!
But anyhoooo – I was trying to perfect said pumpkin blender pancakes and in grabbing the vanilla extract or something, I spied the collagen powder and and decided to throw it in.
Fantastic idea, if I do say so myself.
Also! You can totally add other protein powder to this if you want. I burned way out on protein powder in my 20s and think it’s just SO gross – it wasn’t until I found the collagen powder that I was interested again in something like that. Because it melts into hot liquid like NOTHING.
Like I don’t even realize I’m consuming it.
These pancakes are definitely not your traditional, fluffy-as-a-cloud pancake. Don’t go in expecting that. Go in expecting a slightly healthier pumpkin pancake that’s a little dense but still really delish and add a few dark chocolate chunks (my current obsession are the semi-sweet chocolate chunks from See’s – omg, try them) and you will be overjoyed!
Plus, these are embarrassingly easy.
Throw everything in the blender. Pour into pan. EAT.
Hurry hurry hurry!! You have to go try ’em.

Pumpkin Protein Pancakes
Ingredients
- 2 large eggs
- 1 cup pumpkin puree
- 1 cup old-fashioned rolled oats
- 1 scoop collagen peptides powder
- 2 tablespoons honey
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cardamom
- 1/4 teaspoon salt
- 1/4 to 1/3 cup milk (I like cashew milk! or coconut milk!)
- dark chocolate chunks, if desired
- sliced almonds, for garnish
- maple syrup or honey for topping!
Instructions
- Heat a large nonstick skillet or griddle over medium to medium-high heat.
- To a blender, add eggs, pumpkin, oats, collagen, honey, baking powder, spices, salt and milk. Blend until pureed and smooth.
- To make the pancakes, you can add coconut oil or butter to the skillet if you want that crispness! You can pour the batter directly from the blender or scoop it out into a 1/4 cup measure for more uniform pancakes. Once you pour the batter into the hot skillet, take a spoon and slightly smooth it out into a larger circle if it seems thick. Add a sprinkling of dark chocolate chunks into the batter if you wish!
- Cook the pancakes until bubbles form and the batter becomes more opaque, about 2 to 3 minutes - then flip and cook once more for 2 to 3 minutes. You'll want to cook the opposite side a bit longer than you would traditional pancakes- these are more dense.
- Serve with syrup and a sprinkle of almonds annnnd maybe more chocolate. This will make about 8 pancakes!

same time as everything else!! hmmm that’s interesting though – in testing this recipe i never added the eggs at the end. i wonder if that would make any difference?!
Adding the eggs (and milk) at the end allows the oats to be pulsed down into more of a fine grind, almost a flour. Makes for a smoother pancake texture. :-)

i also used to do the collagen capsules a super long time ago (and i really felt like they worked!!) but i am loving the powder! you gotta try it. :)

Can’t wait to try these! I was wondering though, could they be turned into waffles? (Picky toddler who refuses to eat pancakes because he thinks they need to look like waffles.j
so while i definitely think that they CAN, i think it probably depends on your waffle maker. for instance, i love crispy crunchy waffles and it usually depends on the heat of my waffle maker. i’m not sure if this recipe would yield the crispiness (i think they would be soft?), but you could also add some melted butter into the batter and it may help!
I, too, love the Vital Proteins Collagen powder and try to throw a scoop or two into baked good whenever I can. It does into my breakfast bowl mixture every morning. I really do wish it was available in bulk.
These pancakes look do yummy and since it is now officially pumpkin time, I know I will be making these
very soon. I might try separating the eggs and whipping the whites to see if I can get a fluffier result.They might even end being dinner tonight!

Hello ! I was just wondering if I didn’t add the collagen would it change the texture or the overall pancake ? Or would I just have to add less milk due to that the there wouldn’t Be lesss dry ingredients ?

I can’t wait to try these. I have an old recipe from Alton Brown for sweet potato waffles (or maybe pancakes, but I never seem to get pancakes fluffy like they’re supposed to be). When I shared that recipe, I would tell people that it didn’t really change the taste; it just gave it more “depth of flavor.” Haven’t made them in years, though.
As for using protein powder, that’s an awesome idea. I use the Vital Proteins collagen peptides and have plenty on hand, so I’m pretty sure I have everything I need to make these for after church today. I can’t wait to do that!
But the really exciting thing is that I can freeze these and have them for weekday breakfasts.

I made these pancakes this morning for my boyfriend and me, and they were wonderful and wholesome-tasting! Very nice texture. We both agreed they’ll need to made again and again this season. It was my first time using the collagen peptides powder–I picked up a one-serving pack just for this recipe–and I loved the idea of having that extra protein boost (otherwise I admittedly feel a little guilty having anything too carby first thing). Can you take the collagen peptide powder while nursing ?
yes but if you have concerns, you can always check with your Dr! i have always use it while nursing. ( and I’m still nursing now and using it!)
pumpkin pancakes of my dreams! I’ve had trouble getting the center (from other pumpkin pancake recipes) of the pancake cooked all the way through – it’s super gooey still even if the outside looks done…am i just using too much pumpkin? any tips for fixing that??? thank you as always!

I don’t know why you deleted my comment. The flavor was good but these pancakes were a gooey mess. They didn’t cook all the way through. Adding the eggs at the end after pulsing the oatmeal into a flour is probably a good idea.

I love eggs and have been eating them every morning, but I have had good experience in the past with eating oatmeal in the morning and it lowered my cholesterol, so wanted to get some oats in my morning routine. I was craving a cinnamon roll and then I remembered I had opened a can of pumpkin the other night. I Googled, “protein pumpkin pancakes” and came across your recipe. THESE ARE THE BEST DARN PUMPKIN PANCAKES! So easy and I got my sweet fix in a healthier way. Thanks so much! BTW – I didn’t have milk so I used real coconut milk from a can for the liquid and in addition to the collagen, I did add some vanilla egg white protein powder.

These were a hit tonight! Even my very picky toddler gobbled up three so far! We poked a few chocolate chips in when plating to make a jack ‘o’ lantern-style smiley face. Everyone had seconds and thirds! Having a large family I had to triple the recipe; I may even quadruple in the future to have leftovers. If I do so, I may try just blending the oats and then mixing everything else by hand. I don’t know if it will mess with the end result to not blend everything. But with a large quantity, it will help expedite the process.
These are horrible. No matter how long I cook them, they refuse to set. It gets points for flavor but that’s it.
Oh my word! These were amazing! I used a plant based scoop of vanilla protein powder in place of collagen. I also added a teaspoon of ground ginger. I will def be making these again!
